Here's a refreshing beverage that goes with any meal. Carbonated ginger ale makes it a wonderful alternative to ordinary iced tea or other soft drinks. This summer thirst-quencher will appeal to all ages. Be ready to refill the pitcher!

1 cup iced tea mix with lemon and sugar
4 cups water
2 liters ginger ale, chilled
Ice cubes

Steps:

  • In a pitcher, combine the iced tea mix and water; refrigerate until chilled. Just before serving, add ginger ale. Serve over ice.

3 green tea bags
1/2 cup sugar
1-inch piece ginger, sliced, plus more for garnish
1 bottle prosecco (optional)

Steps:

  • Put the green tea bags into a heatproof container and pour in 1 quart boiling water. Let steep until it comes to room temperature, about 1 hour. Remove the tea bags and discard.
  • While the tea is steeping, in a saucepan over medium-high heat, bring 1 cup water, the sugar, and ginger to a boil. Stir to dissolve the sugar, remove from the heat, and allow to cool to room temperature, about 1 hour. Store the tea and ginger simple syrup in the refrigerator until ready to serve.
  • To serve, fill glasses with ice and pour in the tea. Sweeten, to taste, with the ginger simple syrup. Garnish with a slice of ginger. For the adults, top each with 1/2 cup prosecco, if desired.

4 China oolong tea bags
4 cups water
1/4 cup sliced peeled fresh gingerroot (about a 2 1/2-by 1 1/2-inch piece)
1/2 cup plus 1 tablespoon chilled simple syrup, to taste
For simple syrup:
1 1/3 cups sugar
1 1/4 cups water

Steps:

  • Put tea bags in a quart-size glass measure or heatproof bowl.
  • In a saucepan bring water with gingerroot just to a boil and pour over tea bags. Steep tea 5 minutes and remove tea bags. Steep gingerroot 1 1/2 hours more and strain ginger tea through a fine sieve into a pitcher. Cool tea and chill, covered, until cold, about 1 hour.
  • Stir in syrup and serve tea over ice in tall glasses.
  • To make simple syrup:
  • In a saucepan bring sugar and water to a boil, stirring, and boil until sugar is completely dissolved. Let syrup cool and chill, covered. Syrup may be made 2 weeks ahead and chilled. Makes about 2 cups.

  • Combine cherries and ginger slices in a glass bowl. Sprinkle sugar over the cherries mixture and cover with 2 cups filtered water.
  • Cover bowl with plastic wrap and refrigerate 2 hours to overnight.
  • Bring 2 cups filtered water nearly to a boil; pour over tea bags in a pitcher. Steep tea for 90 seconds. Squeeze tea bags into pitcher and discard bags.

  • 1. Place 2 cups water and the ginger into a saucepan and bring to a boil. Reduce the heat to low and simmer for 5 minutes. Stir in the honey. Remove the pan from heat and add the tea bags. Steep for 3 minutes, and then strain out all the solids.
  • 2. In a large pitcher combine the strained tea with the remaining 3 cups water. Chill in the refrigerator. Serve over ice, garnished with mint sprigs, if using.
