CHEESY EGGPLANT BAKE
This cheesy eggplant bake is a really easy and non-fiddly version of a classic eggplant parmesan, with roasted aubergines, rich tomato sauce, and gooey cheese.

Steps:
- Cut the eggplants into 1cm slices. Lay them in a single layer on a baking tray, and spray each side lightly with oil. Roast at 190°C (Gas Mark 5 / 375°F) for around 30 minutes, turning them over halfway. They should be fairly soft but not overly crispy.
- Add a spoonful of tomato sauce to the bottom of a baking dish (mine was a 6 inch circle, but anything similar will be fine), and spread it around. Layer up the slices of roasted eggplant, the grated cheddar and the fresh mozzarella with the remaining tomato sauce. I made 3 layers of each in total, but it doesn't really matter. Top the dish with any remaining cheese, and the breadcrumbs.
- Return to the oven for a further 30 minutes, until the topping is golden brown and crispy, and the sauce is bubbling around the edges.

ROASTED EGGPLANT CURRY RECIPE BY TASTY
Here's what you need: medium eggplants, olive oil, sea salt, freshly ground pepper, coconut oil, medium white onion, chili powder, ground cardamom, smoked paprika, ground coriander, ground turmeric, garlic, ginger, roma tomatoes, coconut milk, water, cooked rice, fresh cilantro

Steps:
- Preheat the oven to 400ºF (200ºC).
- Slice the tops off the eggplants, then slice them in half lengthwise. Cut each half once more lengthwise. Lay the slices on their flat sides and cut lengthwise into thirds. Finally, slice horizontally to form cubes.
- Transfer to a baking sheet, drizzle with the olive oil, salt, and pepper. Bake for 25 minutes, stirring halfway through, until golden brown.
- In a large saucepan, heat the coconut oil over high hat. Add the onions, stir for 1 minute, then reduce the heat to medium-low and cook, stirring occasionally, until the onions are golden brown, about 8 minutes.
- Stir in the chili powder, cardamom, and smoked paprika. Cook until fragrant, about 1 minute.
- Stir in the ground coriander, ½ teaspoon of black pepper, turmeric, garlic, and ginger. Cook for a few minutes more, stirring constantly.
- Add the chopped tomatoes, coconut milk, water, and the roasted eggplant.
- Bring the curry to a simmer, then reduce to low heat, cover, and simmer for 25 minutes. The sauce should reduce and thicken slightly.
- Serve the curry warm over rice, topped with chopped cilantro.
- Enjoy!

Steps:
- Preheat oven to 425°F.
- In a small bowl stir together mayonnaise, dried onion, and salt.
- In a shallow dish mix bread crumbs, Parmesan cheese, and Italian seasoning (or just use Italian breadcrumbs).
- Brush eggplant slices with mayonnaise mixture and then coat in breadcrumb mixture.
- Place eggplant slices on a lightly oiled baking sheet or shallow baking dish.
- Bake in hot oven for about 12 to 15 minutes turning about half way through.
- Enjoy!

- Preheat oven to 375*.
- Slice eggplant very thin, no more than 1/4".
- Salt slices lightly and let them stand about 10 minutes.
- Then pat dry with paper towels.
- Beat the egg with milk in one bowl, combine wheat germ and herbs in another.
- Dip the eggplant slices in liquid, then dredge in wheat germ.
- Bake on oiled tray for 20-30 minutes until eggplant is crisp on outside.

- Peel eggplant, if you wish.
- Cut into 3/4" slices. Sprinkle salt on both sides of slices. Let stand for 30 minutes; rinse with water and pat dry.
- In a pie pan, beat egg slightly. In another pan, combine cheese, bread crumbs and parsley. Dust each eggplant slice with flour, dip in egg to coat all over, and dredge in crumb mixture.
- Brush butter over bottom of a shallow, rimmed baking pan. Arrange eggplant slices in butter in a single layer. Bake uncovered, in a 400 degree oven for 25 minutes; turning once to brown both sides.

This week was the first time I had eaten eggplant. I had no idea how to cook it, and even came on *zaar looking for recipes, but couldn't find a simple throw-together recipe that was low fat and still good. So i just came up with my own.

- Slice the eggplant into medium-thin slices (*not paper thin, but not thick either*).
- Mix the cornmeal and flour and lots of pepper for taste, so that the mix looks speckled thickly.
- Add sliced eggplant to flour mix and coat both sides well. Do this with about 10 slices (or more if really hungry).
- Spray the bottom of a long casserole dish(or pan) with some fat free pan spray.
- Lay the battered eggplant slices into single layers in dish/pan.
- Cut some slices of eggplant into fourths. Don't dip these into the batter, just lay these on the other side of the casserole dish.
- Bake at 400-425 for about 20-25 minutes, being sure to flip the eggplant slices over halfway through.
- Heat up the Tomato, Garlic, Onion Ragu spaghetti sauce(best for this recipe), or pizza sauce, or any type of spaghetti sauce, but one with tomatoes if possible, in a bowl in microwave until hot. Use this as a "dip".
- But I think the simply baked eggplant is good plain, too.
- (I alternate eating the non-battered, then take a bite of the battered slices, yummy! This kind of tastes like fried green tomatoes).

- Combine first 2 ingredients, stir well.
- Spread evenly over both sides of eggplant slices.
- Combine breadcrumbs, cheese, and Italian seasoning in a shallow bowl; dredge eggplant in breadcrumbs mixture.
- Place eggplant on a baking sheet coated with cooking spray.
- Bake@ 425 degrees for 12 minutes.
- Turn eggplant over; and bake an additional 12 minutes or until golden.
