1 ½ cups crushed gingersnap cookies
⅓ cup brown sugar
6 tablespoons melted butter
12 gingersnap cookies, or as needed

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Mix crushed gingersnap cookies, brown sugar, and butter together in a bowl until well-combined. Press gingersnap mixture into the bottom of a springform pan. Arrange whole gingersnap cookies upright around the border of the springform pan, pressing into the base so that they stand firmly.
  • Bake in the preheated oven until set, about 7 minutes. Cool completely.

Yield Makes one 9-inch pie crust

Number Of Ingredients 5

1 3/4 cups gingersnap crumbs, from about 1/2 batch Gingersnaps
1/4 cup packed dark-brown sugar
1 tablespoon unbleached all-purpose flour
1/2 teaspoon coarse salt
4 tablespoons (1/2 stick) unsalted butter, melted

Steps:

  • Preheat oven to 350 degrees.
  • In a large bowl, whisk together gingersnap crumbs, brown sugar, flour, and salt. Add butter and stir until mixture is well combined. Press some of the mixture against the side of the bowl with your fingers. If the crumbs do not hold together, add cold water, a little at a time, up to 1 tablespoon, and stir to combine.
  • Press crumb mixture into a 9-inch pie plate, evenly covering the bottom and sides. Transfer to freezer and chill for 10 minutes. Place pie plate on a baking sheet and bake until crust is fragrant and set, about 10 minutes. Transfer pie to a wire rack; let cool completely.

2 cups gingersnap cookie crumbs (~9 ounces Gingersnap Cookies)
2 tablespoons granulated sugar
1/2 teaspoon ground cinnamon
6 tablespoons butter (melted and cooled slightly)

Steps:

  • Preheat oven to 350˚F.
  • Pulse gingersnap cookies in a food processor until you have fine crumbs (about 2 cups). Add sugar and cinnamon and pulse a few times to combine. Pour melted butter over and pulse until mixture is well combined.
  • Transfer crumb mixture to a 9-inch, deep-dish pie pan and use a measuring cup to firmly press the mixture evenly onto bottom and up the sides. Bake 5 minutes. Transfer to wire cooling rack to cool completely. Fill as desired.

1 cup sliced nectarines
TOPPING:

1/2 cup old-fashioned oats
1/3 cup packed brown sugar
1/2 teaspoon ground ginger
1/2 teaspoon ground cinnamon

1/3 cup cold butter, cubed

  • In a large bowl, combine brown sugar and cornstarch. Add the plums, peaches and nectarines; gently toss to coat. Transfer to a greased 8-in. square baking dish., For topping, in a small bowl, combine the gingersnap crumbs, oats, brown sugar, ginger, cinnamon and salt. Cut in butter until crumbly. This pie was inspired by my friend Erin Clarkson, a fellow baker who asserts that "if it can be infused, it should be infused with Earl Grey." I took that to heart to create this caramel-spiked pie, infusing the milk and cream with plenty of tea before whisking them into a classic custard filling. And because I adore the combination of chai tea and caramel, there's a variation for that version.

Yield one 9-inch / 23-cm pie

Number Of Ingredients 11

226 g / 1 cup whole milk
78 g / ⅓ cup heavy cream
8 g / ¼ cup loose Earl Grey tea (or 5 Earl Grey tea bags)
212 g / 1 cup packed dark brown sugar
7 g / 1 tablespoon cornstarch
170 g / 3 large eggs
5 g / 1½ teaspoons vanilla extract
2 g / ½ teaspoon fine sea salt
One 9-inch / 23-cm Basic Crumb Crust made with gingersnap crumbs, parbaked and cooled completely
1 recipe Salted Caramel Sauce (optional), well chilled
Full Batch of Classic Whipped Cream (optional)

Steps:

  • In medium saucepan, bring the milk and cream to a simmer over medium heat. Remove from the heat, add the tea, and cover the pan. Let steep for 15 to 20 minutes, then strain the liquid into a medium bowl (or just remove the tea bags, if using, and pour into the bowl).
  • Preheat the oven to 350°F / 175°C with a rack in the center (preferably with a Baking Steel or stone on it).
  • In a medium bowl, stir the brown sugar and cornstarch together well to combine. Add this mixture to the milk mixture, along with the eggs, and whisk well to combine. Add the vanilla and salt and whisk until well incorporated.
  • Place the parbaked crust on a parchment-lined baking sheet and pour the custard into it. Transfer to the oven and bake until the crust is deeply golden brown and the custard is set around the outside but still slightly jiggly in the center, 45 to 50 minutes. Cool completely, then refrigerate for at least 2 hours (or up to 24 hours).
  • Pour some or all of the caramel glaze over the top of the pie and spread into an even layer over the surface. A thin layer will set firmer and a thicker layer will be gooier-or you can drizzle it over slices when serving. Refrigerate the pie for at least 1 hour, or until ready to slice and serve.
  • Do Ahead: The pie can be made up to 24 hours ahead and refrigerated until ready to serve.
  • Variation
  • Caramel-Chai Custard Pie in Shortbread Crumb Crust: Replace the Earl Grey tea with an equal amount of chai. Make the crumb crust with shortbread or vanilla cookie crumbs.

36 gingersnap cookies, pulverized (about 2 cups)
1/4 cup butter, melted
2 tablespoons brown sugar
1 egg white (optional)

Steps:

  • Preheat the oven to 375 degrees.
  • Pulverize the ginger snap cookies in a food processor if you have one, if not, you can crush them with a rolling pin.
  • Combine the first three ingredients and mix well.
  • Using your fingers, press the mixture into the bottom and up the sides of a 9 inch pie pan.
  • To smooth and pack the crust, place another 9-inch pie pan down into the crust (as if you are stacking the pans) and press firmly.
  • Brush the crust with egg white. (optional).
  • Bake about 10 minutes at 375° or less. Watch closely as you do NOT want to overcook this crust.
  • Remove from the oven and cool before filling.
  • Goes great with my Super Easy Pumpkin Spice Dip recipe, or any pumpkin, sweet potato, or key lime pie that does not require baking.
