CINNAMON AND GINGER CRANBERRY SAUCE

Cinnamon and Ginger Cranberry Sauce image

This home-made cranberry sauce can be made in minutes; is ridiculously easy; and absolutely scrumptious. Once you make this, you will never be caught dead buying a jar of pre-made cranberry sauce again. I have always loved cranberry sauce, and this blend is a winner. I have deliberately kept it very basic. I just love the simplicity of the flavors - the hint of spice that is lifted with the zest of the oranges. But feel free to jazz this up; blend and taste; and add in the quantities of cinnamon, ginger and sweetener that work for you. This was my perfect blend. But you might want more spice. I liked just a hint, in order to let the cranberries have their moment. Just remember that the flavors will infuse in the fridge. Like a good sangria - this actually tastes better with time. If you can wait that long! Make a double or triple batch and take as glorious home-made gifts for those Christmas parties this year. This sauce is fantastic for the Christmas table.

Categories     Sauces

Time 15m

Yield 2 small bowls

Number Of Ingredients 9

4 cups fresh cranberries or 4 cups frozen cranberries
1 cup filtered water
1/2 cup freshly squeezed orange juice
1/2 cup raisins
1/2 cup dried cherries
4 tablespoons agave nectar (to taste)
1 tablespoon orange zest
1 teaspoon fresh ginger juice (grate fresh ginger and squeeze out the juice, to taste)
1 1/2 teaspoons cinnamon, depending on taste

Steps:

  • Bring the raisins, cherries, cranberries, orange juice and water to the boil.
  • Simmer for about ten minutes or until some of the cranberries start to burst open. Some will burst open and some will not. This gives a great texture.
  • Now add in the agave nectar, ginger juice, orange zest and cinnamon and simmer for a few more minutes just to allow the flavors to infuse.
  • Remove from the heat and allow to cool completely.
  • Once cooled, you can place a stick blender into the pan and blend a little if you want a smoother consistency.
  • Chill in the fridge for at least a few hours to allow the sauce to thicken and the flavors to infuse. This tastes even better the next day.

LEMON GINGER CRANBERRY APPLESAUCE

Lemon Ginger Cranberry Applesauce image

I wanted a brighter-tasting cranberry sauce instead of one that had just a sweet note of sugar. Using lemonade concentrate made it easy and the ginger was perfect with the tart cranberries. Adding lemon peel would be good with this also, and this is wonderful served on top of turkey soup! Also good for any time of the year.

GINGER CRANBERRY SAUCE

Ginger Cranberry Sauce image

Found on the Dessert of the Month Club Blog, this just sounds so lovely, I made it for Christmas this year, to go with Moosewood's Comprehensively Stuffed Squash, recipe #444688 - you may find this wonderful blog here: http://dessertofthemonthclub.blogspot.com (Thanks to UmmBinat for pointing me in that direction!) From the blog, "My relatives have come to expect this quick, spicy sauce every year during the holidays. I try to make this 24 hours in advance of serving to let the ginger mingle. Leftover sauce is rare, but goes well with cream cheese on toast! This recipe makes 3 cups."

Provided by Katzen

Categories     Sauces

Time 25m

Yield 3 cups, 4-8 serving(s)

Number Of Ingredients 8

1 oranges (juice orange) or 3 -4 clementines, chopped & zested
1 (12 ounce) package fresh cranberries or 1 (12 ounce) package frozen cranberries
1 tablespoon fresh ginger, peeled & grated
1 lemon, juiced & zested
1 1/4 cups sugar
1/2 cup cranberry juice
1 dash cayenne pepper
splash orange juice

Steps:

  • Rinse cranberries. Grate 2 teaspoons zest from the orange and the lemon. Juice the lemon. Remove orange peel and seeds, chop orange into 1/2 inch pieces. Peel and grate ginger root.
  • In a nonreactive saucepan, combine orange chunks, cranberries, grated ginger, lemon juice, sugar, and cranberry juice. At this point, I like to add orange and lemon zest, a dash of cayenne, and a little orange juice (Alternately, the zest makes a good garnish just before serving).
  • Bring to a boil. Reduce heat and simmer 3 to 5 minutes, stir occasionally until thickened and most of the berries have popped:.
  • Transfer the sauce to a serving bowl to cool, stirring occasionally, then refrigerate to chill thoroughly.
  • I never liked cranberry sauce until I made this one.

CRANBERRY-APPLE GINGER SAUCE

Cranberry-Apple Ginger Sauce image

Use only Granny Smith apples or a similar firm apple, this is a fantastic cranberry sauce recipe, and one that you will be making all time once you taste it! If you prefer a less sweeter sauce then reduce the sugar by a couple of tablespoons. If you don't have a cinnamon stick just add in a pinch of cinnamon powder, or omit the cinnamon completely. Plan ahead the sauce needs to chill for a minimum of 3 hours before using.

Provided by Kittencalrecipezazz

Categories     Sauces

Time 20m

Yield 4 cups (approx)

Number Of Ingredients 8

1 1/2 lbs cranberries (fresh or frozen)

1 1/2 cups water
3 tablespoons cider vinegar
1 tablespoon finely grated orange zest

  • In a 4 or 5-quart saucepan, bring ALL ingredients to a boil over medium heat, stirring until the sugar is dissolved.

HOMEMADE CRANBERRY GINGER SAUCE

Homemade Cranberry Ginger Sauce image

No Thanksgiving is complete without cranberry sauce. This recipe is very customizable to your family's palate. In this version, I've used honey, orange juice, and crystallized ginger. But I have made it in the past with a sweet white wine and apples, which is also delicious. Using fresh cranberries, the sauce still gets a jelly-like consistency because when the cranberries pop open during cooking, they release pectin, which is a natural way to make jelly or jams. Once you try this recipe, you'll never go back.

  • Stir orange zest and juice, honey, crystallized ginger, cinnamon stick, and salt in a saucepan over medium heat; bring to a simmer. Stir cranberries into orange juice mixture, cover, and bring to a boil; let boil for 1 minute. Reduce heat to low. Simmer cranberry sauce until cranberries have popped, about 15 minutes. Remove from heat and discard cinnamon stick. If a sweeter sauce is desired, stir in more honey. Serve warm or chilled.

CITRUS GINGER CRANBERRY SAUCE :: DAIRY-FREE, GLUTEN-FREE, GRAIN-FREE, REFINED SUGAR FREE

Citrus Ginger Cranberry Sauce :: Dairy-Free, Gluten-Free, Grain-Free, Refined Sugar Free image

For those who love cranberry sauce, I have a super simple, super delicious recipe for you today. It's my Citrus Ginger Cranberry Sauce, cooked witch citrus and ginger which helps develop the flavors of the cranberry even more.

Categories     Condiments, Sauces, & Spice Blends

Time 1h5m

Number Of Ingredients 10

4 cups organic cranberries (fresh or frozen)
1 organic orange, zested, peeled, segmented, and chopped
1 organic orange, zested and juiced
1 lemon, zested and juiced
1 lime, zested and juiced
2 tbsp. honey or maple syrup (or more if you like it sweeter)
1-2 tbsp. fresh grated ginger (1 tbsp. will be very mild, more will add a kick)
1/4 tsp. sea salt
1/4 tsp. cinnamon
1 tsp. to 1 tbsp. organic cornstarch OR arrowroot powder (optional) OR a small sprinkle of psyllium husk powder (optional)

Steps:

  • Wash the skins of your citrus and zest and juice the lemon, lime, and one orange.
  • Zest your second orange and then peel and segment it, removing the white membrane from the segments. Roughly chop the peeled segments.
  • In a saucepan over low heat, combine all of the ingredients (stir everything together) and cover with a tight lid.
  • Let the cranberries cook down for 30-45 minutes (stirring a couple of times) or until the cranberries are soft and some of them have popped.
  • Depending on the consistency that you like your cranberry sauce, you can puree it in a blender or with your immersion blender. I like to leave mine a little chunky, so I use my potato masher and just gently mash some of the sauce until about half is mashed and half is not. I like a little chunk in my sauce.
  • Your sauce should get relatively thick from the pectin in the orange, but if it's not thick enough for your liking, you can make a slurry of cornstarch or arrowroot with a little warm water and stir it in. Cook for about 5 minutes on low stirring regularly. This will thicken it quite a bit.
  • Remove from heat and let sit for a few minutes before serving.
  • You can serve hot, warm, or cold. It's delicious any way you choose. I love it with turkey, but it also tastes great plain, or over my dairy-free vanilla ice cream! :)

Definitely not my favorite cranberry sauce. 1. It was too sweet, I'd back up to 1 3/4 or maybe 2 cups sugar. 2. The orange flavor was way too strong. I'd back up the zest to half or less. 3.
