1 teaspoon vegetable oil
4 scallions, white parts halved lengthwise and cut into 1 1/2-inch pieces, green parts thinly sliced for garnish (optional)
1-inch piece fresh ginger, peeled and cut into matchsticks
1 garlic clove, smashed and peeled
4 cups low-sodium chicken broth
1 tablespoon fish sauce
Stir-ins (see variations), such as thinly sliced meat and vegetables, seafood, or noodles
1 tablespoon fresh lime or lemon juice

Steps:

  • In a large saucepan, heat oil over medium-high. Add scallion whites, ginger, and garlic; cook, stirring, until scallions begin to soften, about 3 minutes. Add broth and fish sauce. Bring to a boil; reduce to a simmer and cook until flavors are blended, about 5 minutes. Add stir-ins (if using) and simmer until desired doneness. Add lime juice and garnish with scallion greens if desired.

Steps:

  • Note: Can use a very light vegetable broth with not many strong flavored vegetables in it also.
  • In stock pot combine the first 6 with the stock and wine.
  • Bring to boil and reduce heat and simmer, uncovered for 20 minutes.
  • Let rest 20.
  • Strain through a lined strainer. Use several layers of rinsed cheesecloth and discard all solids.
  • The broth can be used immediately or cooled and refrigerated for 2 days.
  • Freezes for up to 3 months.

2 ounces fresh ginger root, peeled and sliced
1 tablespoon chili paste
2 tablespoons lemon zest
1/2 tablespoon sugar
6 (6-ounce) portions wild salmon (Chinook)
1/8 cup vegetable oil
1 1/2 cups julienned carrots
1 cup cleaned and diced leeks
1 cup julienned scallions
Seasoned broth, recipe follows
Sticky rice cakes, recipe follows
6 ounces matsutake mushrooms, grilled and sliced
1 tablespoon toasted sesame seeds
1 large onion, peeled and chopped
3 sticks celery, chopped
2 quarts water
1 piece konbu (dried giant kelp)
1 cup tamari or shoyu
4 ounces fresh ginger rootr, sliced
1 tablespoon chili paste
1/2 cup rice wine vinegar
2 tablespoons sugar
1 ounce katsuo bonito shavings
5 tablespoons rice wine vinegar
5 tablespoons sugar
4 teaspoons sea salt
3 1/3 cups short-grain rice, washed
4 cups water
1 (4 by 4-inch) piece konbu

Steps:

  • Preheat grill.
  • Combine the tamari, ginger, chili paste, lemon zest and sugar and pour over the salmon portions in a shallow dish. Turn the fish to coat it evenly, cover with plastic wrap and refrigerate for 2 hours.
  • Remove the salmon from the marinade and blot dry with paper towels. Brush the salmon with the oil on all sides. On a hot grill cook over hot coals for 2 to 3 minutes to brown and mark the fish nicely, turn and continue cooking to desired doneness, 2 to 3 more minutes.
  • Simmer the carrots, leeks and scallions in the Seasoned Broth, until al dente, about 4 to 6 minutes.
  • To serve divide the broth with vegetables between 6 bowls, top each with a sticky rice cake, mushrooms, and a grilled portion of salmon. Finally, sprinkle with the toasted sesame seeds.
  • Bring all ingredients, except the bonito shavings, to a simmer in a saucepan. Cook over low heat for 45 minutes, remove from the heat and gently stir in the bonito shavings. Allow the broth to rest for 20 to 30 minutes before straining. Strain and discard solids.
  • Bring the rice vinegar, sugar and sea salt to a boil in a small sauce pan, remove from the heat and set aside. Place rice, water and konbu in a heavy bottom saucepan and cover, bring to a simmer over medium heat. When the rice begins to boil reduce the heat to low, stir it gently once and continue cooking, covered until all the liquid is absorbed. Allow the cooked rice to cool 10 to 15 minutes covered with a clean towel.
  • Turn the cooked rice out onto a tray or large bowl and fan it to cool. Using a large scoop or your hands moistened with a mixture of the vinegar and water portion the sticky rice into 6 balls and flatten them to form cakes. Lightly wrap the cakes and hold in a warm place until serving time.

6 ounces baby bok choy, halved through the core
5 ounces boneless skinless halibut fillet, cut crosswise into 1/2-inch-wide strips
5 ounces boneless skinless salmon fillet, cut crosswise into 1/2-inch-wide strips
5 ounces boneless skinless sea bass fillet, cut crosswise into 1/2-inch-wide strips
Freshly ground white pepper
1 small bunch fresh cilantro, stems and leaves, roughly chopped, for garnish
Small handful Cordycep mushrooms, for garnish, optional

Steps:

  • Bring the vegetable stock and 2 cups water to a simmer in a large saucepan. Stir in the tofu, bean paste and ginger until well incorporated and bring to a gentle simmer.
  • Add the bok choy and fish fillets and cook until the fish is opaque and the bok choy is crisp-tender and bright green, 3 to 4 minutes. Season with white pepper and serve garnished with a generous sprinkling of the cilantro and a few Cordycep mushrooms, if using.

1/4 lb Shanghai bok choy (about 3 small heads)
1 medium carrot
2 1/2 tablespoons vegetable oil
1 (1 1/2-inch) piece peeled fresh ginger, cut into very thin matchsticks
1/4 cup medium-dry Sherry
2 cups reduced-sodium chicken broth (16 fl ounces)
2 teaspoons sugar
3 scallions
4 (4- to 5-ounce) sea bass or striped bass fillets with skin, pin bones removed
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon cornstarch
1 teaspoon curry powder
1 teaspoon Asian sesame oil
Garnish: fresh cilantro leaves

Steps:

  • Discard any bruised or wilted outer leaves from bok choy, then cut leaves from stalks, keeping leaves and stalks separate. Thinly slice leaves and cut stalks diagonally into 1/2-inch-wide slices. Halve carrot lengthwise and cut diagonally into 1/4-inch-thick slices.
  • Heat 1 tablespoon vegetable oil in a 4- to 5-quart heavy pot over moderately high heat until hot but not smoking, then stir-fry bok choy stalks, carrot, and ginger 1 minute. Stir in Sherry, broth, and sugar and simmer, covered, 5 minutes.
  • Meanwhile, cut scallions crosswise into 2-inch pieces, then halve lengthwise and cut into very thin matchsticks.
  • Add bok choy leaves and scallions to carrot mixture and simmer, covered, until vegetables are tender, 3 to 5 minutes.
  • While vegetables simmer, pat fish dry and sprinkle with 1/2 teaspoon salt and 1/4 teaspoon pepper. Stir together cornstarch and curry powder, then rub into skin of each fillet. Halve each fillet diagonally with a sharp knife.
  • Stir sesame oil, remaining 1/2 teaspoon salt, and remaining 1/4 teaspoon pepper into vegetable mixture and keep warm, uncovered, on turned-off burner.
  • Heat remaining 1 1/2 tablespoons vegetable oil in a 12-inch heavy skillet over moderately high heat until hot but not smoking, then cook fish, skin sides down, gently pressing occasionally with a metal spatula (to keep skin flat), until skin is golden, 2 to 3 minutes. Turn fish over and cook until just cooked through, about 2 minutes more. Remove from heat.
  • Divide broth and vegetables among 4 shallow bowls and stack 2 fish halves, skin sides up, in center of each bowl.

This rice bowl dinner is inspired by the Island Bowls that Chef Rawlston Williams serves at The Food Sermon in Crown Heights, Brooklyn. Originally from the Caribbean island nation of St. Vincent and the Grenadines, Rawlston takes inspiration from West Indian flavors and techniques to build his modern fast-casual bowls. We love how he pours coconut broth around the outside of a rice bowl, and borrowed that technique (but not his recipe), then simplified and streamlined a home cook-friendly version. Spreading mayonnaise on top of the salmon fillets helps the spiced panko stay put and keeps the fish moist while it roasts.

Steps:

  • Cook the Salmon:
  • Preheat oven to 400°F. Heat oil in a large skillet over medium until melted. Add panko, pepper, paprika, cayenne, and 1/2 tsp. salt. Cook, stirring constantly, until panko is golden brown, 2-3 minutes. Transfer to a paper-towel-lined plate. Wipe skillet clean; reserve for beans and greens.
  • Line a quarter sheet pan or other small rimmed baking dish with parchment paper, then arrange salmon fillets skin side down; season with remaining 3/4 tsp. salt. Using a small spoon or offset spatula, spread mayonnaise across salmon, then sprinkle spiced panko over, pressing lightly to adhere. Roast until salmon is opaque, 8-10 minutes.
  • Make the Broth and Beans and Greens and Assemble:
  • Heat coconut milk, ginger, sugar, 1 tsp. salt, and 1/4 cup water in a small pot over medium and bring to a boil. Immediately remove from heat and stir in lime juice.
  • Heat oil in reserved skillet over medium until melted. Add beans and kale, then cover pan and cook, stirring once halfway through, until kale is wilted, 2-3 minutes. Season with remaining 1/2 tsp. salt and stir to combine.
  • Divide rice among bowls, then top with beans and greens mixture. Using a fish spatula, lift each fillet up off its skin-the skin will stick to the paper-and arrange in each bowl. Pour in coconut broth. Serve with lime wedges alongside.

  • Chop all your aromatics (shallot, ginger, garlic, chilli and lemongrass) finely. Alternatively, you could slice them roughly and then put them in a herb chopper or food processor and mince them.
  • Heat up 2 tbsp of oil (I used rice bran) in a heavy-bottomed pot. Once the oil gets hot, throw all the aromatics in. Sautee them on a low heat, stirring very frequently, until they have softened and released their aroma (about 5 minutes).
  • Now, add in the powdered turmeric and peppercorns. Stir turmeric into the aromatics, allowing the spice to toast gently before adding more moisture to the pan. Stir the whole time and make sure your flame is on low as ground spices burn easily.
  • Add about 5 cups / 1.25 L of water and a veggie stock cube or vegetable stock. If you don't have any stock handy, but happen to have random unused vegetables in the fridge, put them in to create a stock on the go. I used 1 carrot, ½ small fennel bulb, a small wedge of cabbage, 2 celery sticks and a dried (shiitake) mushroom to impart more flavour to the soup. This is totally optional, but a good way to use up all these unwanted bits and pieces.
