1 lb uncooked jumbo shrimp
1/2 fresh pineapple
6 tablespoons orange marmalade, divided
1/2 cup water
1 tablespoon soy sauce
couple dashes hot sauce (optional)
1 (6 ounce) box long grain and wild rice blend, prepared according to package directions
1/4 cup snipped fresh cilantro

Steps:

  • In a small saucepan combine 4 tablespoons of the marmalade, water, soy sauce and optional hot sauce; set aside.
  • If skewers are wooden, pre-soak approximately 30 minutes.
  • Cut pineapple into 4 crosswise slices; core and cut each slice in quarters to make 16 small wedges.
  • Peel and devein shrimp.
  • Thread on 4 skewers the shrimp alternating with pineapple wedges. Brush some of the marmalade-soy sauce mixture on shrimp and pineapple.
  • Place skewers on rack of an uncovered grill directly over medium heat. Grill 8 to 10 minutes, turning once, until shrimp are opaque and pineapple is heated through. Remove from heat; cover to keep warm.
  • Heat remaining marmalade-soy sauce mixture and bring to a full boil; remove from heat source.
  • Transfer prepared rice mixture to a serving bowl; stir in remaining 2 tablespoons marmalade and cilantro.
  • Serve kabobs with rice and boiled marmalade-soy sauce mixture.

1 cup KRAFT Sweet Brown Sugar Barbecue Sauce
1/2 cup pineapple juice
2 Tbsp. oil
1 Tbsp. minced fresh ginger
1/2 tsp. ground cinnamon
1/4 tsp. ground nutmeg
1-1/2 lb. frozen uncooked cleaned (with tails left on) large shrimp
8 fresh pineapple slices (1/2 inch thick), cut into wedges

Steps:

  • Heat grill to medium heat.
  • Combine first 6 ingredients. Reserve 1 cup of the barbecue sauce mixture for serving with the kabobs.
  • Thread shrimp onto 8 skewers; brush with some of the remaining barbecue sauce mixture. Thread pineapple onto 3 additional skewers.
  • Grill shrimp 5 min.; turn. Add pineapple skewers to grill. Grill 5 to 7 min. or until shrimp turn pink, turning pineapple after 4 min. and brushing shrimp and pineapple with remaining barbecue sauce mixture for the last 2 min.
  • Heat reserved barbecue sauce mixture. Serve with the shrimp and pineapple.

1/4 cup honey
3 tablespoons low-sodium soy sauce
2 tablespoons rice vinegar
1 teaspoon grated fresh ginger
1 teaspoon grated or minced garlic (more to taste)
1/4 teaspoon red pepper flakes (more to taste)
1 pound large or jumbo shrimp, peeled and deveined
1/2 pineapple (cored and cut into 1 1/2-inch pieces)
Fresh minced cilantro or toasted sesame seeds for garnishing (optional)

Steps:

  • For marinade, combine honey, soy sauce, vinegar, ginger, garlic, and red pepper flakes in a large bowl, whisking to combine.
  • Add shrimp to marinade, cover, and place in fridge for at least 1 hour, up to 3 hours.
  • Soak 10 wooden skewers in water for at least 15 minutes.
  • Remove shrimp from marinade, reserving marinade. Cook marinade in small saucepan over high heat, until it comes to a boil, reducing slightly.
  • Thread 2 shrimp and 2 pineapple chunks on each skewer. Push skewers through the heads and tails of the shrimp; alternate with chunks of pineapple.
  • Heat grill (or grill pan) to medium-high heat, approximately 400°F. Lightly oil hot grill to prevent shrimp from sticking.
  • Place skewers on grill and grill for 2-3 minutes, brushing with marinade.
  • Flip skewers, and brush with marinade one more time. Cook for 2-3 minutes or until shrimp is cooked through. It should appear pink and firm.
  • Garnish with cilantro or toasted sesame seeds and serve immediately.

1 (15-ounce)/440 mL can pineapple chunks
3 tablespoons/45 mL pineapple juice reserved from can
3 tablespoons/45 mL soy sauce
3 green onions (cut into 1-inch pieces)
1 to 2 cloves garlic (crushed)
1/2 tablespoon (7.5 mL) sesame oil
1/2 teaspoon (2.5 mL) Sriracha

Steps:

  • Gather the ingredients.
  • Combine the pineapple chunks, pineapple juice, soy sauce, sesame oil, Sriracha, 1/2 the green onions, and the garlic in a large, resealable bag. Turn to mix. Add the shrimp, turn the bag to mix again, and refrigerate for 30 minutes.
  • Prepare a medium (350 F to 375 F) gas or charcoal grill fire. Remove shrimp and pineapple from bag and thread loosely onto skewers.

1/4 cup each reduced-sodium soy sauce, balsamic vinegar and honey
1 garlic clove, minced
1 pound uncooked medium shrimp, peeled and deveined
1 large green pepper, cut into 1-inch pieces
1 can (8 ounces) pineapple, chunks, drained

Steps:

  • In a small bowl, combine the soy sauce, vinegar, honey and garlic. Set aside 1/3 cup. On eight metal or soaked wooden skewers, thread the shrimp, green pepper and pineapple. Place kabobs in a large resealable plastic bag; pour remaining marinade over kabobs. Cover and chill for 1 hour. Cover and chill reserved marinade., Drain and discard marinade. Sherry Yard has a wonderful recipe in her first cookbook, "The Secrets of Baking," called Roasted Voodoo Vanilla Pineapple. She roasts her pineapple with the dried vanilla pods that you save after you've scraped out the seeds, and fresh ginger. She inserts the pods into the flesh of the pineapple, a great idea if you're roasting the pineapple for a long time. I decided to use vanilla extract instead of the pods, because during the relatively short time on the grill they infused only the section of the pineapple they had been stuck into. I add vanilla to the ginger syrup and baste the pineapple with this sweet and pungent mix. You could also simply drizzle the pineapple with honey.
