TUNA NOODLE CASSEROLE WITH BECHAMEL SAUCE

Tuna Noodle Casserole with Bechamel Sauce image

Bechamel is such a wonderful ingredient for so many dishes. With tuna casserole, bechamel eliminates the need for a canned cream soup... its thick, creamy texture clings to the pasta and adds tremendous flavor overall. The amount used in this recipe keeps the entire casserole light but still filling.

Time 1h25m

Yield 8

Number Of Ingredients 14

½ (16 ounce) package penne pasta
5 tablespoons salted butter, divided
3 tablespoons all-purpose flour
2 ½ cups cold milk
2 tablespoons dried minced onion
2 bay leaves
⅛ teaspoon cayenne pepper
½ teaspoon salt, divided
2 (6 ounce) cans tuna in water, drained
1 ½ cups frozen peas
1 ½ cups grated Colby-Jack cheese
½ teaspoon freshly ground black pepper
4 slices bread, cut into 1/2-inch pieces
¼ cup grated Parmesan cheese

Steps:

  • Bring a large pot of lightly salted water to a boil. Add penne and cook, stirring occasionally, for 2 minutes less than directed on the package, about 9 minutes. Drain penne, reserving 1 cup pasta water, rinse, and set aside.
  • Preheat the oven to 375 degrees F (190 degrees C). Lightly grease a 9x13-inch casserole dish.
  • Melt 3 tablespoons butter in a large, shallow saute pan. Stir in flour and continue stirring until golden, about 3 minutes. Gradually whisk in milk. Add minced onion, bay leaves, and cayenne pepper. Continue cooking until bechamel sauce thickens, 10 to 15 minutes. Season with 1/4 teaspoon salt.
  • Place the cooked pasta into a large bowl. Add bechamel sauce and mix well. Crumble the drained tuna over the pasta. Add peas and Colby-Jack cheese; mix. Thin the mixture with 2 to 4 tablespoons of the reserved pasta water. Season with pepper and remaining salt. Transfer to the prepared casserole dish.
  • Melt remaining 2 tablespoons butter. Add bread cubes; mix well until bread is completely coated. Stir in Parmesan cheese. Top casserole with this bread mixture and cover tightly with aluminum foil.
  • Bake in the preheated oven for 30 minutes. Remove foil and continue baking until top is browned and golden, about 10 minutes more.

SPICY TOMATO-TUNA NOODLE SKILLET CASSEROLE WITH AIOLI

Spicy Tomato-Tuna Noodle Skillet Casserole With Aioli image

Inspired by a dish at Brooklyn's Saint Julivert Fisherie, this updated tuna noodle casserole is homey, bright, and pantry-forward. Chef and owner Alex Raij modeled the menu item after fideuà, a paella-style pasta dish from northern Spain. We followed her lead by toasting dry pasta like ditali or rigatoni in oil until golden brown before cooking it into the tomato sauce, giving the pasta nutty flavor and plenty of al dente texture.

Yield 4 servings

Aioli
1 large egg yolk
1 garlic clove, finely grated
¼ tsp. kosher salt, plus more
½ cup (or more) extra-virgin olive oil
Casserole and Assembly
1 medium onion, cut into large pieces
2 garlic cloves
½ cup coarsely chopped roasted red peppers from a jar
3 Tbsp. extra-virgin olive oil, plus more for drizzling
12 oz. rigatoni, mezzi rigatoni, ditali, or other short or medium-length straight tube pasta
2 (5-6-oz.) cans or jars oil-packed tuna
1 oil-packed anchovy fillet, coarsely chopped
1 tsp. kosher salt, divided
Freshly ground black pepper
2 Tbsp. double-concentrated or regular tomato paste
1 (14.5-oz.) can crushed tomatoes or whole peeled tomatoes with their juices, crushed
1 tsp. ground turmeric
¼ tsp. crushed red pepper flakes
Coarsely chopped parsley (for serving; optional)

Steps:

  • Aioli
  • Whisk egg yolk, garlic, ¼ tsp. salt, and 2 tsp. water in a small bowl to combine. Place bowl on a kitchen towel so it won't slide around as you whisk and gradually stream in oil, whisking constantly until thick and emulsified. Aioli should be thick but pourable; gradually whisk in more oil if needed. Taste and season with more salt if desired.
  • Casserole
  • Place rack in upper third of oven; preheat to 375°F. Pulse onion, garlic, and roasted red peppers in a food processor until finely chopped; set aside.
  • Heat 3 Tbsp. olive oil in a 10" ovenproof skillet, preferably cast iron, over medium-low. Add pasta and cook, stirring often, until evenly coated in oil and lightly browned, about 5 minutes (depending on the size and shape of your pasta, you may need to work in batches). Using a slotted spoon, transfer to a large bowl. Reserve pan.
  • Drain tuna, reserving 2 Tbsp. tuna oil. place oil in reserved pan and increase heat to medium. Add anchovy, ½ tsp. salt, and reserved chopped vegetable mixture and season with pepper. Cook, stirring occasionally, until vegetables soften, 5-7 minutes. Add tomato paste and cook, stirring, until slightly darkened in color, about 3 minutes. Mix in toasted pasta, tomatoes, turmeric, red pepper flakes, remaining ½ tsp. salt, and 2½ cups water and bring to a boil. Cook, stirring occasionally, until pasta is slightly softened, 8-10 minutes. Remove from heat and stir in drained tuna and ¼ cup water.
  • Transfer skillet to oven and bake casserole until pasta is tender and juices at the edges are bubbling, about 15 minutes. Remove from oven.
  • Heat broiler. Drizzle casserole with a little olive oil and broil until browned and crisped in spots, about 4 minutes.
  • Spoon some aioli over casserole and top with parsley if desired. Serve remaining aioli alongside.

GIFT IN A JAR: FISHY FISHY TUNA NOODLE CASSEROLE

GIFT IN A JAR: FISHY FISHY TUNA NOODLE CASSEROLE image

This a diffrent twist on the classic tuna noodle casserole. I have had people tell me that they hate tuna casserole but love this as it is SO DIFFRENT!

Categories     Fish

Number Of Ingredients 9

1 quart(s) jar, wide mouth if possible
3/4 cup(s) parmesan cheese
1 package(s) vegetable soup mix, (1.4 oz)
1/2 cup(s) dry milk powder
2 1/2 cup(s) egg noodles
- ~~additional recipe makings (receiver adds):
2 1/2 cup(s) water
1 can(s) tuna, packed in water (6 oz)
- *****see note at bottom

Steps:

  • YOU'RE PART - FILL THE JAR Layer the jar with the ingredients as they are listed above. Make sure that you pack each layer down tightly so that you can get all the layers in to the jar.
  • When done seal with lid and ring. You may want to fancy it up with a piece of cloth around the top and some ribbon to attach it and the instructions.
  • TO THE MIX IT SELF/ PRINT IT OUT LIKE THIS FOR YOUR GUEST: 1 JAR FISHY FISHY TUNA NOODLE MIX 2 1/2 CUPS WATER 1 CAN TUNA (6 OZ)
  • In a skillet place water and mix over medium high heat and bring to a boil, stirring often. Reduce the heat to medium and cook until the noodles are tender, and keep stirring often. Add the tuna and heated through.
  • ~~~~~ Good side note: Add a note stating what good veggies to mix in with this also like: carrots & peas, green beans, brocollie, etc... or you can add the can of tuna to the jar it self.
  • *****NOTE: If you have a Food Saver System with a large jar seal attachment you can use it to seal wide mouth jars and give them as gifts. There is also a regular size seal but it is easier to fill the wide. When filling jars I find that when doing layers that if you press/compress them you can get every thing in that is needed to get in. I find a canning muddier/press works good for me
