Treat friends and family to a Victoria sponge cake made with vegan ingredients. This easy recipe is perfect for afternoon tea, or a coffee morning

150g dairy-free spread, plus extra for the tins
300ml dairy-free milk, we used oat milk
1 tbsp cider vinegar
1 vanilla pod, seeds scraped
300g self-raising flour
200g golden caster sugar
1 tsp bicarbonate of soda
100g dairy-free spread
200g icing sugar, plus extra for dusting
4 tbsp jam, we used strawberry

Steps:

  • Heat oven to 180C/160C fan/gas 4. Line the bases of 2 x 20cm sandwich tins with baking parchment and grease with a little of the dairy-free spread.
  • Put the dairy-free milk into a jug and add the vinegar, leave for a few minutes until it looks a little lumpy. Put half of the vanilla seeds and all the other cake ingredients into a large bowl then pour over the milk mixture. Using electric beaters or a wooden spoon, beat everything together until smooth.
  • Divide the mix between your two tins then bake in the centre of the oven for 30-35 mins or until a skewer inserted into the middle of the cakes comes out cleanly. Leave them in their tins until cool enough to handle then carefully turn out onto wire racks to cool completely.
  • While the cakes are cooling, make the filling. To make the vegan buttercream, whisk or beat together the dairy-free spread, icing sugar and remaining vanilla seeds until pale and fluffy. Dairy-free spreads do vary so if the spread you are using is quite soft try to avoid using electric beaters. Stir the ingredients together instead to avoid overworking it. However, if the mixture is too firm, use electric beaters to help lighten it and add 1-2 tbsp of dairy-free milk when whisking.
  • Spread the jam onto one of the cooled sponges, top with the buttercream then place the other sponge on top. Dust the assembled cake with a little icing sugar or caster sugar before slicing.

250g self-raising flour
50g ground almonds
200g butter , diced
280g golden granulated sugar
50g desiccated coconut
2 medium eggs
350-450g/12oz-1lb fresh or frozen raspberries

Steps:

  • Heat the oven to 180C/fan160C/gas 4. Butter an oblong cake tin (about 31 x 17 x 3cm). Tip the flour, ground almonds, butter and sugar into a food processor and whizz just until the butter is evenly distributed - or rub together by hand. Remove 85g/3oz of the mix, stir in the coconut and put to one side. Add the eggs to the remaining mixture in the food processor and whizz quickly - or mix with a wooden spoon. It doesn't need to be very smooth.
  • Spread this mixture over the base of the tin, then scatter half the raspberries over the top. Sprinkle with the coconut mixture and bake for 45 mins. Dot the remaining fruit over the surface and cook for a further 15 mins, until firm to the touch. Cool in the tin and cut into slices, squares, whichever shape you want. They will keep for up to 2 days in the fridge.

375g pack sweet shortcrust pastry
5 tbsp thick seedless raspberry jam
100g frozen raspberries, just thawed
25g flaked almonds
4 tbsp apricot jam
200g butter, very soft, plus a little extra for the tin
200g golden caster sugar
100g ground almonds
100g self-raising flour
1 tsp baking powder
½ tsp almond extract
4 eggs, beaten

Steps:

  • Heat oven to 200C/180C fan/gas 6. Line the base and sides of a buttered traybake tin, about 18-20cm x 30cm, with baking parchment. Roll out the pastry to line. Lift into the tin and evenly press right into the corners. Prick with a fork and chill for 20 mins.
  • Bake the pastry for 8-10 mins until it's cooked but not too coloured. Cool for a few mins and turn down the oven to 180C/160C fan/gas 4. Dot the raspberry jam over the pastry (there's no need to spread) and scatter over the raspberries.
  • For the sponge, put all the ingredients into a large bowl and beat with an electric whisk until soft and very well mixed. Spoon this over the raspberry layer, then smooth evenly. Scatter over the flaked almonds and bake for 35-40 mins until golden and firm. Cool completely in the tin. Will freeze for up to 3 months - overwrap the tin with baking parchment and foil beforehand.
  • To serve, thaw for 4 hrs at room temperature, then reheat in a low oven. Melt the apricot jam with 1 tbsp water and brush over the top of the sponge just before serving.

  • Gluten-free lemon drizzle cake. A gluten-free version of my popular lemon tray cake. It’s so easy to make and you don’t need any unusual ingredients! Moist, zesty and perfectly sweet.
  • Sticky toffee pudding. A rich pudding cake topped with a sticky toffee sauce. This is one of the most popular desserts in the UK and it’s one of my personal favourites, especially near Christmas time!
  • Sticky Biscoff pudding. This recipe is much like the sticky toffee pudding but is made with Lotus Biscoff spread and cookies instead of dates. It still has the sticky, decadent texture but is good if you fancy something a little different to the traditional sticky pudding.
  • Millionaire’s shortbread. Another British classic, also known as caramel slice! I couldn’t have a list of vegan tray bakes without this one. It has a crunchy shortbread base, a gooey caramel filling and a hard chocolate topping.
  • Lemon drizzle cake. This is one of the most popular recipes on my blog to date! I have to admit, this lemon drizzle tray bake is not the prettiest cake I’ve ever photographed but I’ll let the multiple 5-star reviews do the talking for this one!
  • Chewy chocolate brownies. If you live in the UK and like brownies, you’ll have probably come across BBC Good Food’s ‘best ever chocolate brownies’. Well, this is my vegan version of that recipe and I think it’s pretty close to the real deal.
  • Mint Chocolate brownies. A dairy-free, eggless take on vegan ‘After Eight’ brownies. Flavoured with peppermint extract and vegan thin mints, these are a must for all mint chocolate lovers!

  • Place the softened vegan butter, caster sugar and light brown soft sugar in a large bowl and use an electric mixer to whisk together for a few minutes until well combined then whisk in the sunflower oil a little at a time.

  • Preheat the oven to 180C/350F/Gas Mark 4 and prepare your baking tin by greasing it lightly and lining the bottom with some baking paper.
  • Put flour, ground almonds, baking powder, baking soda and lemon zest (if using) in a large bowl and give them a good mix. I tend to use a small baloon whisk here to imitate sifting.
  • In another large bowl mix together all your wet ingredients (oat milk, yogurt, oil, vinegar) and caster sugar (yes, it does belong to wet ingredients). Make sure you give it all a good mix until all of the ingredients all really well combined.
  • Add dry ingredients into the bowl with wet ingredients and mix in gently only until just combined. It is important not to overmix your batter here.
