This is how beef is sautéed in Northern parts of Croatia. It is similar to goulash recipe, only you get the whole beef schnitzels not just some parts of beef meat. This is the way how I prepare this meal and I have learned it from my mother and her from her mother etc. ...

1000 g beef (schnitzels)
500 g onions
15 g lard (or oil)
2 teaspoons paprika (red, dried, sweet)
1/2 teaspoon paprika (red, dried, hot)
15 g salt
10 g pepper
1 cup wine (white, dry)
2 cups water
1/2 teaspoon thyme
1 tablespoon flour
1/4 teaspoon caraway seed (optional)
50 g sour cream (optional)

Steps:

  • Sauté finely minced onion on lard until become translucent. Add before thinned schnitzels and season them with salt and pepper. Sauté it until meat starts to leave juices and than add wine.
  • Cook until alcohol evaporates and add paprikas (sweet and hot), thyme and caraway seeds. Stir and add water if necessary. Meat must be covered with liquid.
  • Cook covered on low fire at least 60 minutes checking if there is enough liquid in it.
  • About 10 minutes before end (meat should be soft) carefully add some flour to coagulate juices but be careful not to put it too fast - stir all the time. Some put sour cream in it some not: sour cream will reduce hotness if you put too much hot paprika. Serve with all kinds of pasta or potato.

2 lbs soup bones with meat or 2 lbs oxtails, well washed
1 onion
1 dried bay leaf
3 whole cloves
5 cups cold water
2 stalks celery, diced
2 large carrots, peeled
1 tomatoes, quartered
2 sprigs fresh parsley
1 teaspoon salt, to taste
1 cup fine egg noodles, uncooked
salt
white pepper

Steps:

  • Make sure you have washed the soup bones well and they have a nice amount of meat on them.
  • Do not remove the skin from the onion, but wash it and pat dry.
  • Cut a slit into one side of the onion and stick the bay leaf into the slit.
  • Poke the whole cloves into the other side of the onion.
  • Combine all ingredients except noodles in a huge stockpot.
  • Bring to a boil, then lower heat and simmer 2 hours.
  • Set a huge bowl underneath a colander and strain soup through colander.
  • Save the meat and the carrots and discard the other boiling veggies.
  • Dice the carrots and cut any meat chunks into bite sized pieces, discarding any chunks of fat and the bones.
  • Set aside.
  • Return the broth to the stockpot along with the noodles and simmer until the noodles are tender and cooked through.
  • Return the carrots and the meat to the pot and season with a nice amount of salt and pepper, to taste.
  • Serve hot.

2 lbs fresh mushrooms, rinsed & dried
1/4 lb bacon, diced
1/4 cup butter
2 onions, diced
1 cup white wine
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon paprika
1 pinch nutmeg
1 pinch mace
1 cup heavy cream
1/2 lemon, juice of
2 parsley sprigs

Steps:

  • Slice the mushrooms in half if they are large, set aside.
  • Fry bacon in a large pan until lightly browned. Remove from pan and set on a papertowel lined plate to drain.
  • Add the butter to pan drippings along with the onions; saute until lightly browned. Next add mushrooms and cook until tender, stirring often.
  • Stir in wine & spices, cover with lid and simmer over low heat for 15 minutes. Take off the heat then stir in the cream, lemon juice, & bacon.
  • Reheat until just warm. Do NOT let the mixture come to a boil! Garnish with parsley.

1 1/2 lbs flank steaks
salt & freshly ground black pepper
3 tablespoons vegetable oil
1 tablespoon butter
1 cup green bell pepper, diced
1/4 lb mushroom, sliced thin (about 2 cups)
2 tablespoons shallots, minced
1/4 cup dry sherry
2 teaspoons dry sherry
1/2 cup beef broth
3/4 cup heavy cream
2 teaspoons cornstarch

Steps:

  • Cut the flank steak lengthwise into 2 inch wide strips. Cut crosswise into 1/2 inch lengths. Season with salt and pepper.
  • Heat oil over high heat in a large skillet. Cook 1/2 the meat, stirring and shaking to cook evenly, for 1 to 2 minutes; remove. Cook remaining meat, shaking and stirring, 1 to 2 minutes. Set aside with first batch.
  • Melt butter in skillet, add green peppers and mushrooms. Cook until mushrooms start to wilt. Add shallots and cook another minute. Add 1/4 cup sherry. When it starts to boil add beef broth. Heat 1 minute and add cream.
  • Blend corn starch with remaining sherry and stir into sauce. Stir and return meat to skillet. Season with salt and pepper if needed. Serve.
