OVEN BAKED RICE AND VEGETABLES
Steps:
- Preheat oven to 200C/390F (standard) / 180C/350F (fan / convection).
- Mix Spice Mix in a small bowl.
- Place Rice ingredients in a baking dish (including the carrots), about 23 x 30 cm / 9 x 13". Add 1 1/2 tsp Spice Mix. Stir, cover with foil, bake for 20 minutes.
- Meanwhile, place Roasting Vegetable ingredients in a large bowl, drizzle with 1/4 cup olive oil. Sprinkle over remaining Spice Mix. Mix well - hands are best for this.
- Remove rice from oven.
- Turn oven UP to 220C/430F (standard) / 200C/390F (fan / convection).
- Take off foil. Spread the Roasting Vegetables on top of the rice. Make sure there's a bit of each type of vegetable on the surface. Push corn mostly under.
- Drizzle with more oil (optional), sprinkle with more pepper.
- Bake for 30 minutes. Remove from oven, rest for 5 - 10 minutes.
- Sprinkle with parsley if desired. Push vegetables aside, fluff rice and toss it through the vegetables a bit (rice gets more flavour). Serve!

VEGETABLES AND RICE NOODLES IN A COCONUT BROTH
This subtle soupy dish is actually a combination of two Keralan dishes, vegetable stew (ishtoo) and rice noodles (iddiyapam).

Steps:
- Boil the potatoes in a pan of salted water until tender, then drain well, and mash with a potato masher or ricer until smooth, and set aside.
- Meanwhile, heat the oil in a large saucepan over a medium heat. Add the peppercorns, cinnamon, and cloves, and fry for 20 to 30 seconds, or until the spices are fragrant. Add the onion, and fry for 3 to 4 minutes, or until softened and golden brown.
- Add the curry leaves, chiles, and ginger, and cook for a further 20 to 30 seconds. Season the mixture, with salt, and freshly ground black pepper. Add the cauliflower and broccoli florets, and then add enough of the boiling water to cover the ingredients. Bring the mixture to a boil, and cook for 5 to 6 minutes, or until the florets are just tender. Add the green beans, mashed potato, peas, and 1 cup boiling water, and stir until the mashed potato has absorbed all of the water, and the mixture is thick, and well combined.
- Bring the mixture to a boil, then reduce the heat to a gentle simmer, and add the coconut milk and garam masala. Season the mixture, to taste, with salt, and freshly ground black pepper.
- To serve the dish, divide the cooked noodles among four serving bowls, and spoon over the vegetable stew. Garnish with the chopped cilantro.
VEGETABLES AND PASTA IN SEASONED BROTH
Steps:
- Cook pasta in boiling salted water until tender but still firm to the bite, about 6 minutes.
- Heat sesame and vegetable oils in large skillet. Add scallion and ginger and saute a few seconds. Add mushrooms and carrots. Saute just to coat with oil. Add soy sauce, vinegar and chicken broth. Reduce heat to medium, cover and simmer until carrots are tender, about 4 minutes.
- Add bean sprouts and simmer, uncovered until heated through, about a minute. Season to taste with salt and crushed red pepper. Garnish with scallions and sesame seeds.
