10 Tablespoons unsalted butter ((1 1/4 sticks))
1 1/4 cup sugar (250 gm)
3/4 cup plus 2 Tablespoons unsweetened cocoa powder (105 gm)
1/4 teaspoon salt (1.5 gm)
1/2 teaspoon pure vanilla extract (2.5 ml)
2 cold large eggs
1/2 cup all purpose flour (60 gm)
2/3 cup pecans (100 gm, chopped)
1/2 cup semi-sweet chocolate chips* (75 gm)
1/2 cup milk Chocolate Chips (75 gm)
1/2 Cup white Chocolate Chips (75 gm)

Steps:

  • Preheat your oven to 325 degrees and get a 9″ square baking pan.
  • Line the baking pan with parchment or aluminum foil with an overhang on opposite sides so you can lift out the brownies from the pan.
  • Combine the butter, sugar, cocoa and salt in a heatproof bowl and place it over a small sauce pot with simmering water, to create a double boiler.
  • Stir until the butter is melted and the mixture is smooth.
  • Remove the bowl from the heat and allow to cool just a little bit.
  • Add the vanilla and stir with a wooden spoon.
  • Add the eggs one at a time, stirring vigorously after each one (I'm not too sure just how vigorously you can stir the chocolate with a wooden spoon but give it a go).
  • When the batter looks thick, shiny and well blended add the flour and stir until you can no longer see it, and then beat it vigorously for 40 strokes with your wooden spoon.
  • Add the nuts and chocolate chips and spread evenly in your baking pan.
  • Bake for 20-25 minutes or until a toothpick comes out slightly moist with batter.
  • Let cool completely on a wire rack.
  • After they have cooled lift the brownies out of the pan and gently remove the foil or parchment from the sides of the brownies.
  • Cut the brownies into squares and enjoy!!

1 tablespoon butter
1 (11.5-ounce) package milk chocolate morsels
2 (4-ounce) bars semisweet chocolate, chopped
2 (4-ounce) bars bittersweet chocolate, chopped
2 (7-ounce) jars marshmallow crème
2 cups chopped pecans

Steps:

  • Spray a 13x9-inch baking pan with nonstick cooking spray. In a large saucepan, bring sugar, evaporated milk, and butter to a boil over medium-high heat, stirring until sugar dissolves; boil for 6 minutes. Meanwhile, in another large saucepan, cook all chocolate over low heat, stirring constantly, until melted. Stir in marshmallow crème and pecans until combined. Stir sugar mixture into chocolate mixture until well combined. Pour into prepared pan. Let cool completely, then refrigerate until firm. Cut into 1-inch pieces, and refrigerate in an airtight container for up to 1 week.

  • Line an 8-in. square pan with foil and butter the foil; set aside. Place pecans in a microwave-safe pie plate. Microwave, uncovered, on high for 3 minutes, stirring after each minute; set aside. , In a 2-qt. microwave-safe bowl, combine chocolate chips and milk. Microwave, uncovered, on high for 1 minute. Stir until smooth. Stir in vanilla and 3/4 cup pecans. Immediately spread into the prepared pan. Sprinkle with remaining pecans, pressing to adhere., Cover and refrigerate until firm, about 2 hours.   • Line a 15x10x1-in. pan with foil; grease foil with 1 tablespoon butter., In a heavy large saucepan, combine sugars, milk and cubed butter. Bring to a rolling boil over medium heat, stirring constantly; cook and stir 5 minutes. Remove from heat. 2 ounces unsweetened chocolate, chopped
2 ounces semisweet chocolate, chopped
2 ounces bittersweet chocolate, chopped
1 1/4 cups half-and-half
3 cups sugar
2 tablespoons light corn syrup
1/8 teaspoon salt
4 tablespoons (1/2 stick) unsalted butter
1 teaspoon vanilla extract
1 cup pecan pieces (optional)

Steps:

  • Butter an 8-inch square baking dish, and set it aside.
  • Combine all the chocolate and the half-and-half in a medium saucepan, and warm it over low heat, stirring until the chocolate is completely melted. Add the sugar, corn syrup, and salt, and cook to the soft-ball stage (236 degrees to 240 degrees), 15 to 20 minutes. Remove the pan from the heat.
  • Add the butter and do not stir. Allow the fudge to sit, undisturbed, until it reaches 120 degrees. Then add the vanilla and the pecans, if using, and beat with a handheld electric mixer until the fudge loses its gloss and starts to thicken but is still warm enough to pour into the prepared baking dish. The fudge will look less like chocolate sauce and more like chocolate frosting.Spread it out evenly in the dish, and let it cool completely. Then cut it into 1-inch cubes.

2 tablespoons unsalted butter, cut into small pieces and softened, plus more for brushing
3 ounces unsweetened chocolate, very finely chopped
1 teaspoon vanilla, mint or almond extract
1/8 teaspoon kosher salt
1 cup half-and-half
2 1/4 cups sugar
2 tablespoons light corn syrup
Assorted toppings (see below)

Steps:

  • Line a 9-by-5-inch loaf pan with foil, leaving a 2-inch overhang on all sides.
  • Lightly brush the foil with butter. Lightly brush the bowl of a stand mixer or another large metal bowl with butter. Add 2 tablespoons cut-up butter, the chocolate, extract and salt; set the bowl aside.
  • Heat the half-and-half in a medium pot over medium-high heat until hot but not boiling. Stir in the sugar and corn syrup and bring to a boil, stirring constantly and scraping the bottom of the pot with a wooden spoon; boil, stirring, until the sugar is dissolved, about 3 minutes. Reduce the heat to low; run a pastry brush dipped in warm water along the sides of the pan to dissolve any sugar crystals clinging to the pan. Clip a candy thermometer to the pan. Simmer the mixture, undisturbed, until the thermometer registers 234 degrees F to 238 degrees F, 20 to 30 minutes, watching the temperature closely as cooking times may vary. (This is the "soft-ball stage." To test for doneness, drop some of the mixture into cold water; you should be able to roll it into a soft ball.)
  • Quickly pour the sugar mixture over the chocolate-butter mixture in the bowl (do not scrape the sides or bottom of the saucepan in case any sugar crystals formed). Clean the candy thermometer, then clip it to the bowl. Let the chocolate mixture cool, undisturbed, until it registers 110 degrees F to 115 degrees F, about 1 hour. (For faster cooling, set the bowl in a larger bowl of cold water.)
  • Brush the paddle attachment or mixer beaters with butter. Beat the mixture on medium speed until just incorporated, about 1 minute. Reduce the mixer speed to low and beat until the fudge just begins to lose its sheen and hold its shape, 5 to 15 minutes. Do not overmix or the fudge will become hard. Use a buttered rubber spatula to scrape the fudge into the prepared pan and pat into an even layer; smooth the top.
  • Press one or more toppings into the fudge, if desired (about 3/4 cup total). Let sit at room temperature for 1 hour, then score the fudge into small squares with a knife. For the best texture, let sit at least 1 more hour before slicing. Wrap leftover fudge in plastic wrap and store in an airtight container for up to 1 week at room temperature, or up to 2 weeks in the refrigerator. Bring to room temperature before serving.
  • Toppings: Crushed sandwich cookies, crushed graham crackers, white chocolate chips, sprinkles, peanut butter drizzle, or mini marshmallows.

  • Coat an 8-by-8-inch pan with 4 tablespoons of the butter. In a medium saucepan, stir together the sugar, cocoa and salt. Stir in the milk. Bring the mixture to a rolling boil and reduce the heat to medium-low. Attach a candy thermometer to the saucepan and simmer for 25 to 30 minutes, or until the mixture reaches 240 degrees F. 5 ounces semisweet chocolate or 5 ounces bittersweet chocolate, chopped
2 ounces unsweetened chocolate, chopped
8 tablespoons unsalted butter, cut into quarters (1 stick)
3 tablespoons cocoa powder
3 large eggs
1 1/4 cups granulated sugar
2 teaspoons vanilla extract
1/2 teaspoon table salt
1 cup unbleached all-purpose flour

Steps:

  • Adjust oven rack to lower-middle position and heat oven to 350°F Spray 8-inch square baking pan with nonstick vegetable cooking spray.
  • Fold two 12-inch pieces of foil lengthwise so that they measure 7 inches wide. Fit one sheet in bottom of greased pan, pushing it into corners and up sides of pan; overhang will help in removal of baked brownies. Following illustration 1 below, fit second sheet in pan in same manner, perpendicular to first sheet. Spray foil with nonstick cooking spray.

  • Cool on wire rack to room temperature, about 2 hours, then remove brownies from pan using foil handles (see illustration 2, below).
  • Cut into 1-inch squares and serve. (Do not cut brownies until ready to serve; brownies can be wrapped in plastic and refrigerated up to 5 days.).

1/3 cup chocolate chips (i use mini semi-sweet morsels)
1 1/2 cups sugar

3 eggs
1/3 cup unsalted butter, melted
1 teaspoon vanilla
3/4 cup hershey's hot fudge

Steps:

  • Bake pie shell for 1/2 the baking time directed on package instructions. Remove from oven and allow to cool to room temperature as you prepare the rest of the pie.
  • Blend sugar, cocoa powder, flour, and salt together in a medium bowl until well mixed.
  • Stir in evaporated milk, then eggs.
  • Add melted butter and vanilla and stir until completely combined.
