CARAMELIZED APPLE GERMAN PANCAKE

Steps:
- Heat the oven to 350 F.
- In a small bowl, toss apple slices, 2 tablespoons sugar, cinnamon, ginger, nutmeg, and allspice together; set aside.
- Cut the butter into four pieces, and place them in a deep cast iron skillet. I use this 10-inch cast iron skillet or an 8x8-inch baking dish.
- Put the skillet or baking dish in the oven for 3 to 4 minutes, or until the butter has melted.
- Take the pan out of the oven; sprinkle brown sugar over the melted butter.
- Add apple slice mixture evenly over brown sugar.
- Put the pan back in the oven while you make the remaining batter.
- In a medium bowl, whisk together flour, remaining 2 tablespoons sugar, and salt.
- Whisk in milk, and continue whisking until no flour lumps remain.
- Add eggs, one at a time, and whisk until incorporated.
- Stir in the vanilla extract.
- Take the pan out of the oven, and pour the batter over the apples.
- Bake for 18-25 minutes, or until the center is set and sides are lightly browned.
- The pancake with start to deflate once it is removed from the oven. Serve warm.

I love this pancake! Good apples to use would be Granny Smith, Jonagold or McIntosh. If you have access to heirloom apples, choose some that have some tartness to them. This recipe is adapted from "The Pancake Handbook".

- Combine apples, sugar, 2 T of the lemon juice and cinnamon in a medium bowl; toss to coat apples.
- Melt 2 T of the butter in a skillet over medium-high heat; add apples, cook just until soft, 3 minutes; remove from heat and set aside.
- Heat oven to 450 degrees.
- Whisk together eggs and milk in a bowl until well blended, whisk in flour and salt to form a slightly lumpy batter.
- Melt remaining 4 T of the butter in an oven-proof 10-inch skillet (a well-seasoned cast iron skillet is good) until just beginning to brown, about 2 minutes; spread apples in bottom of pan, pour batter over apples.
- Bake until the pancake is golden brown and puffed, about 20 minutes; invert onto a large platter.
- Sprinkle with remaining lemon juice; dust with confectioners' sugar.

- Preheat a 10-in. cast-iron skillet in a 425° oven. Meanwhile, in a blender, combine the eggs, milk, flour, salt and nutmeg; cover and process until smooth. , Add butter to hot skillet; return to oven until butter bubbles. Pour batter into skillet. Bake, uncovered, for 20 minutes or until pancake puffs and edges are browned and crisp. , For topping, in a skillet, combine the apples, butter and sugar; cook and stir over medium heat until apples are tender. GERMAN APPLE PANCAKE WITH CREME FRAICHE

- Preheat broiler.
- For the batter: in a blender or food processor, combine the eggs, vanilla, and 3/4 cup sugar. Blend for about 15 seconds, until combined. Add the flour and baking powder and mix for 60 seconds more, or until very smooth. Set the batter aside.
- Heat a 12-inch nonstick skillet over medium heat and melt the butter. Add the apples and cook until softened, about 4 to 5 minutes. Add the cinnamon and remaining 1 1/2 tablespoons sugar, sprinkling them evenly over the apples, and cook, stirring, until the apples are glazed and slightly translucent at the edges, about 2 minutes.
- Distribute the apples evenly in the skillet and pour the batter over them. (Chef's Note: You may also make 4 individual pancakes, using a smaller pan. Just use 1/4 of the apples and 1/4 of the batter for each.) Cook until the bottom seems quite firm, about 8 minutes. Transfer the pan to the broiler and, while watching carefully, cook until the pancake is firm throughout and golden on top.
- Cut the pancake into 4 wedges and transfer them, apple side up, to serving plates. Sprinkle with the confectioners' sugar, place a dollop of crème fraiche on top, and garnish with the strawberries.

- Gather the ingredients.
- You will need a 10-inch/25 centimeter ovenproof skillet .
- Preheat the oven to 450 F/230 C. Melt the butter in the pan in the oven. Be careful, it can burn if you leave it too long.
- Peel and core the apple. cut into slices. Remove pan from oven, add apple slices, 2 tablespoons of sugar and cinnamon. Stir and place back in the oven.
- While apples are sputtering in the oven, mix 2 to 3 tablespoons of sugar, lemon zest, and eggs on high in a blender or food processor for one minute.
- Add the milk and mix, then the flour and salt and mix until no lumps remain.
- Remove the pan from the oven, pour the batter on top and place back in the oven.
- Bake for 15 to 20 minutes, or until set and puffy.
- Serve for breakfast with bacon and syrup or cut into smaller wedges for dessert with whipped cream .

- Preheat oven to 450º.
- Melt butter in a 9 or 10 inch skillet with an ovenproof handle (cast iron works great).
- Arrange apple slices in a single layer over butter.
- Combine 2 tablespoons brown sugar with the cinnamon & sprinkle over the apples.
- Cook over medium heat, stirring gently, until apples are slightly tender ( 5-6 minutes).
