GENUINE DEUTSCH APPLE PIE
My greatgrandmother Esslinger's recipe. Not the "Dutch" apple pie with crispy topping, this is a very rich sour cream based pie. Baking time varies on what type of apple is used and how large they are to begin with. Keep a close eye on the pie while it bakes so it doesn't burn.

Steps:
- Preheat oven to 325 degrees.
- Line 9" pie plate with crust.
- Line the crust with the apple sections, core side up.
- Mix sugar, sour cream and cinnamon very well.
- Pour mixture over apples.
- Put pie pan on cookie sheet and place on oven rack appproximately 4 inches above bottom of standard sized oven.
- Bake slowly until filling has set and is starting to brown slightly.
- A toothpick inserted into the center of the filling should come out clean and the apples should be tender.
- Remove from oven and cool overnight on a wire rack so the crust doesn't get soggy.

I live in a big apple-producing state, so I think this recipe represents our region well. I tasted this pie many years ago when my children's babysitter made it. I asked for the recipe and have made it many times since.

- In a small bowl, combine flour and salt; cut in the shortening until crumbly. Add vanilla. Gradually add water, tossing with a fork until dough forms a ball. Roll out pastry to fit a 9-in. pie plate. Transfer pastry to pie plate. Trim pastry to 1/2 in. beyond edge of pie plate; flute edges., For filling, combine the sugar, flour and cinnamon; sprinkle 3 tablespoons into crust. Layer with half of the apples; sprinkle with half of the remaining sugar mixture. Repeat layers. Pour cream over all. , Bake at 450° for 10 minutes. Reduce heat to 350° bake for 55-60 minutes or until apples are tender. Cool on a wire rack. Store in the refrigerator. Serve with whipped cream if desired.

DUTCH APPLE PIE
In the 1950's, great diners offered this all-American favorite chock-full of raisins, apples and covered with a lemony sugar glaze. The crust is amazing and the glaze is simply delicious!!! Tip: I use allspice or pumpkin spice since mace is hard to find.

Steps:
- For Crust:.
- Mix flour and salt. With pastry blender or 2 knives, cut in shortening until mixture resembles coarse crumbs.
- Sprinkle ice water, 1 tablespoon at a time. Toss quickly with a fork, just until dough holds together when pressed into a ball, adding more ice water as needed.
- Divide dough in half. Shape each half into a flattened round, wrap in plastic wrap and chill 30 minutes before rolling out.
- For Filling:.
- In large bowl, combine apples and raisins.
- In small bowl, combine sugar, flour, cinnamon, mace and salt.
- Add to apples and raisins.
- Toss lightly to combine.
- Roll out 1st half of pastry on lightly floured board.
- Fit into a 9 inch pie plate.
- Fill with apple mixture.
- Roll out second half of pastry and fit over apples.
- Moisten rim of bottom crust, press 2 crust together, turn under and crimp edge.
- Cut 2-3 slits in top crust.
- Place on baking sheet in pre heated 425 degree oven.
- Bake 45-50 minutes or until crust is golden brown and filling bubbles.
- Cool.
- GLAZE:.
- Mix confectioners sugar and lemon juice and 3 teaspoons of milk, stir until smooth. Add the 4th teaspoon of milk only if needed to make glaze of spreading consistenecy. Spread over top crust of pie.
- ENJOY.

This recipe is my version of another Dutch apple pie recipe that I've baked many times. My husband and daughter just love this pie and ask me to make it for them all of the time. I have also had to give this recipe out to many of my friends.

Steps:
- Preheat oven to 375°F.
- Brush the bottom and sides of the crust evenly with egg yolk.
- Bake on a baking sheet until light brown, about 5 minutes.
- Remove the crust from oven.
- Combine the sliced apples, 1/4 cup sugar, 1/4 cup brown sugar, 3 Tbs flour, 1/4 tsp salt, and 1/2 tsp cinnamon.
- Mix well and mound into crust.
- Mix remaining flour, sugar, brown sugar and margarine with fingers until crumbly.
- Sprinkle the topping mixture evenly over apples.
- Bake on baking sheet until topping is golden and filling is bubbling; about 50 minutes.
- Cool thoroughly (at least 3 hours).
- Serve at room temperature.
- Note: This pie is best when it is eaten the same day or the next day that it is baked.
- If it sits for a long time, the crust and topping aren't as crunchy.

GRANDMA MARGE'S DUTCH APPLE PIE
This is the only fruit filled pie that I will eat. I always request it when going home for the holidays. Good when it is still warm from the oven. And still yummy the next day. Just place a strip of waxed paper over the cut edge of your pie, if you cover the whole thing the topping will get soggy. My mother enjoys her pie with real whipped cream, my husband like his with a scoop of vanilla ice cream, but I love mine just the way it is! Yum

Steps:
- Preheat oven to 400 degrees. Have your pastry crust in a 9 inch pie plate chilling in the fridge.
- To make the topping mix flour and brown sugar, cut in butter with a pastry cutter (I believe that is what it is called) or using 2 knives in a criss-cross motion until crumbly. Place in fridge until ready to use.
- Peel, core and slice the apples. Sprinkle apples with lemon juice. Mix flour, sugar, salt and cinnamon and stir into apples. Pour apple mixture into chilled pie crust and top with crumb topping.
- Bake for 40-45 minutes or until apples are done. Keep an eye on it while baking as you may have to cover pie crust edges with foil to prevent them from getting too brown. I also place an empty pizza pan on the rack just below my pie to catch any juice dripping.
- Prep time will vary depending on the way you peel, core & slice the apples, by hand, food processor or machine.
