Serve these at dinner or alongside scrambled eggs for breakfast. You can also use them when making our Winter-Vegetable Potpie with Cheddar-Biscuit Topping.

Steps:
- Preheat oven to 425 degrees, with rack on lower shelf. In a large bowl, whisk together 2 cups flour, baking powder, baking soda, salt, and pepper. Cut in butter with a pastry blender until mixture resembles coarse crumbs, with some pea-size lumps. Mix in buttermilk and cheese until combined. With a floured hand, knead dough against side of bowl until it holds together. If it is sticky, knead in up to 1/4 cup more flour.
- After kneading biscuit dough, turn it out onto a lightly floured work surface. Pat the dough to 1 inch thick. With a floured 2-inch biscuit cutter, cut out rounds as close together as possible. Place on a baking sheet. Gather scraps; pat again, and cut out more rounds.
- Brush the tops with 1/2 tablespoon melted unsalted butter. Bake until biscuits are golden brown, rotating sheet halfway through, 18 to 20 minutes. Serve warm.
EASY CHEESE TEA BISCUITS
This easy cheese tea biscuits recipe is great to keep in your back pocket in case company pops in, or you want a quick snack with tea.

Steps:
- Whisk the flour, baking powder, and salt together in a mixing bowl.
- Add the butter and use a pastry blender or fork to combine it with the flour until the mixture is coarse and sandy.
- Use your fingers to rub in any remaining larger lumps of butter. Place the bowl of flour in the freezer for 30 minutes.
- Preheat the oven to 450ºF (230ºC).
- Line a baking sheet with parchment paper and have a 2½ inch (6 mm) round biscuit cutter ready.
- Remove the flour mixture from the freezer and add the grated cheese.
- Stir everything together with a fork to combine.
- Use the fork to make a well in the middle of the flour-cheese mixture.
- Pour in the milk.
- Stir everything together with the fork until no dry bits of flour remain on the bottom of the bowl.
- Turn the dough out onto a floured work surface.
- Sprinkle a little flour on top of the dough. Working quickly so the butter doesn't warm up, pat the dough out to a thickness of 1 inch (2½ mm) with your hands. Add a little more flour if the dough is sticking.
- Cut the dough into as many round biscuits as you can (probably about seven). Gather the leftover scraps and quickly pat the dough out again. Cut more biscuits. Repeat this process until all of the dough is gone. Depending on how thick you've patted the dough, you should end up with 10 to 12 biscuits.
- Place the biscuits on the prepared baking sheet and brush the top of each with milk.
- Bake the biscuits for 15 to 17 minutes, or until golden.
- Remove them from the oven and let the pan cool on a wire rack for 10 minutes before serving.

ALMOST-FAMOUS CHEDDAR BISCUITS

- Position a rack in the upper third of the oven and preheat to 425 degrees. Lightly mist a large baking sheet with cooking spray.
- Make the biscuits: Pulse the flour, baking powder, sugar and salt in a food processor. Add the shortening and pulse until combined. Add the butter; pulse 4 or 5 times, or until the butter is in pea-size pieces. Add the cheese and pulse 2 or 3 times. Pour in the milk and pulse just until the mixture is moistened and forms a shaggy dough. Turn out onto a clean surface and gently knead until the dough comes together. Do not overwork the dough or the biscuits will be tough.
- Drop the dough onto the baking sheet in scant 1/4-cup portions, 2 inches apart, and bake until golden, 15 to 20 minutes.
- Meanwhile, make the garlic butter: Melt the butter with the garlic in a small saucepan over medium heat; cook for 1 minute. Remove from the heat and stir in the parsley. Brush the biscuits with the garlic butter and serve warm.

- Mix the flour, baking soda, salt, garlic powder, black pepper, and rosemary.
- Cut up the the butter and then mix into the dry ingredients until the butter is decimated into chunks no bigger than a centimetre.
- Mix in the olive oil.
- Mix in the cheddar cheese.
- Mix in the milk slowly, the batter should be moist but not over-saturated in milk.
- Bake for 15-17 Minutes at 400°F.

This is a scratch recipe, adapted from Food and Wine, that is a dead ringer for the ones I enjoy at Ruby Tuesday's. I like it because it uses plain flour instead of Bisquick.

- In a large bowl, whisk together the flour, baking powder, salt and garlic powder.
- Add the cubed butter. Using a pastry cutter or a fork, cut butter into flour until it is coarse, pea-sized.
- Add oil, grated cheddar cheese and the milk. Stir till well combined and holds together.
- Make sure to keep adding milk a bit at a time, just until the dough is moistened and you can no longer see any raw flour.
- Drop approximately 1/4 cup portions of the dough onto an un-greased cookie sheet or a using an ice cream scoop or large spoon.
- Bake for 15-17 minutes in a preheated oven at 400 degrees.
- While biscuits are baking, melt 3 tablespoons butter is a small bowl with 1/2 teaspoon garlic powder and the parsley.
- When biscuits come out of the oven, use a brush to spread this garlic butter over the tops of all the biscuits. Do this a few times - it's fun to watch all the butter getting absorbed into the biscuit! Use up all of the butter. Serve warm.

- Preheat oven to 425°F. Brush 12 large (1-cup) muffin cups with some of melted butter; reserve remaining butter for brushing on baked biscuits. Using on/off turns, mix next 4 ingredients in processor. Add 1/2 cup cubed chilled butter. Using on/off turns, process until coarse meal forms. Transfer to large bowl. Add cheese; toss to combine. Add buttermilk and stir just to blend (batter will be sticky). Divide among prepared muffin cups, about 1/2 cup for each.
- Bake biscuits until golden brown and tester inserted into center comes out clean, 25 to 30 minutes. Brush tops with remaining melted butter. Cool 5 to 10 minutes, then remove biscuits from pan and transfer to rack to cool slightly. Serve warm.

- Preheat the oven to 425 degrees F (220 degrees C).
- In a medium bowl, stir together the flour, baking powder, sugar, salt and cream of tartar. Cut in butter using a pastry cutter or a fork until it is the size of peas. Make a well in the center of the mixture and measure the milk, cheese and thyme into the bowl. Gently mix until a soft dough forms.
