CHIPOTLE CHEESEBURGERS

Steps:
- To make the patties: Combine the beef, oregano, salt, garlic powder, and pepper to taste in a medium bowl and mix well. Shape into patties a little more than 1/2-inch thick, place on a plate, and refrigerate for at least 1 hour.
- To make the sauce: Stir together the sour cream, chipotles, adobo sauce, onions, cilantro, salt, and pepper to taste in a small bowl. Set aside.
- To make the burgers: Oil a grill rack and preheat the grill on high for 5 minutes. Spread the bun faces lightly with the butter. Grill the burgers over direct heat on medium-high (on a charcoal grill, set the burgers just outside the center of the grill rack), with the grill covered, for 4 minutes. Flip the burgers, top each with a slice of Cheddar, and grill, covered, 4 minutes more. Remove the burgers to a plate.
- Grill the buns, buttered-side down, over indirect heat, until golden, about 2 minutes. Set a burger on each bun bottom and top with avocado, tomato, lettuce, red onion and a dab of chipotle sauce. Top with the remaining bun halves and serve.
BLUE CHEESE CHIPOTLE VENISON BURGERS
It may be a mouthful but you'll be happy to fill your mouth with this burger. This was an experiment that ended up in my husband's top 2 meals - and those are tough to earn. For burger toppings, the best combination I found was using mayo and Dijon mustard with lettuce and tomatoes.

- Preheat an outdoor grill for medium-high heat and lightly oil the grate.
- Mix venison, chipotle peppers, blue cheese, and garlic in a large bowl. Divide mixture into 6 equal parts and shape into patties.
- Grill on the preheated grill until an instant-read thermometer inserted horizontally into the center registers 160 degrees F, 5 to 7 minutes per side.
- Heat olive oil in a skillet over medium heat; cook and stir onion and banana peppers until onions are lightly golden, about 7 minutes. Top burgers with the onion mixture; serve with hamburger buns.

CHIPOTLE BLEU BURGERS
I love the Chili's version of these. I think I've come pretty close to their recipe by trial and error.

- Grill patties to desired doneness. Just before removing from grill brush all sides with chipotle sauce.
- Top with bleu cheese.
- Assemble burgers using buns, bacon, lettuce, tomato, and pickles.

BISTRO BLEU CHEESE BURGERS
If you're a fan of bleu cheese you have to try these! A Danish blue cheese is a must for optimal flavor. The roasted jalapeños really kick it up a notch. Husband's new favorite.

Steps:
- Divide meat in two parts and make two hamburger patties. Sprinkle with chipotle chile powder.
- Slice roasted jalapeños into strips.
- Cut scallions into two inch pieces.
- Spread mayo on bread slices.
- Cook hamburgers on grill to desired doneness. Top with bleu cheese at final cooking time so it will melt.
- Lightly toast bread with mayo on it. It should be crispy on the edges.
- Top toasted bread with burger, roasted peppers, and scallions.
