3/4 cup organic vegetable broth
1 tablespoon cornstarch
2 tablespoons low sodium soy sauce
1 tablespoon sherry wine
1 teaspoon brown sugar
1 -3 teaspoon chili paste
1/2 teaspoon fresh ground black pepper
1/4 teaspoon salt
1 tablespoon canola oil
2 teaspoons grated peeled fresh ginger
2 garlic cloves, minced
4 1/2 ounces bok choy (approx)
1 cup sliced shiitake mushroom
1/4 cup chopped green onion
1 1/2 lbs peeled and deveined large shrimp
4 cups hot cooked rice

Steps:

  • Combine broth and next 7 ingredients (through salt) in a medium bowl, and stir with a whisk. Set aside.
  • Heat oil in a wok or large nonstick skillet over medium-high heat. Add ginger and garlic; stir-fry 30 seconds.
  • Add bok choy, mushrooms, onions, and shrimp. Stir-fry 3 minutes or until bok choy begins to wilt.
  • Add broth mixture to pan; bring to a boil.
  • Cover, reduce heat, and simmer 10 minutes or until vegetables are tender and shrimp are done. Serve over rice.

4 slices bacon
4 scallions, chopped
1 medium carrot, finely chopped
1 celery rib, finely chopped
1/2 medium green bell pepper, chopped
2 large garlic cloves, finely chopped
1 bay leaf
1 teaspoon dried thyme
1/8 teaspoon hot red pepper flakes
2 (15 ounce) cans black-eyed peas, rinsed and drained
1 3/4 cups reduced-sodium chicken broth
3 tablespoons extra virgin olive oil
1 lb large shrimp, peeled and deveined
3 large garlic cloves, finely chopped
1/2 cup dry white wine

Steps:

  • Cook bacon in a 12" heavy skillet over medium heat until browned but not crisp. Transfer bacon to a plate, then tear into small pieces.
  • Cook scallions, carrot, celery, bell pepper, 2 large garlic cloves, bay leaf, thyme, red pepper flakes, 1/8 tsp salt and 1/4 tsp pepper in bacon fat in skillet over medium heat, stirring occasionally until vegetables are pale golden, about 10 minutes. Add black-eyed peas and broth and simer for 5 minutes. Transfer to a bowl.
  • Heat oil in skillet over medium-high heat until it shimmers.
  • Season shrimp with 1/4 tsp salt and 1/2 tsp black pepper. Cook shrimp with remaining garlic, stirring occasionally, untiljust opaque (shrimp will not be fully cooked), about 3 minutes. Add wine and bring to boil, then briskly simmer for 2 minutes. Add bacon and black-eyed pea mixture and simmer until just heated through (mixture will be juicy). Discard bay leaf.

This is one of our favorite cool weather dishes - it's so good with cornbread! The recipe came from Bush's. It's one I never really tinker with, and that's unusual for me. The ingredients are just right in the original.

1/2 lb bulk pork sausage
1/2 cup green pepper, chopped
1/4 cup onion, chopped
1 cup canned tomato
1/4 teaspoon oregano
1/4 teaspoon rosemary
1/4 teaspoon black pepper
1 garlic clove, finely chopped
1 (15 7/8 ounce) can black-eyed peas (do not drain)
1 cup cheese, grated (cheddar, co-jack, etc.)

Steps:

  • Brown sausage in large skillet, crumbling with fork as it browns. Drain any accumulated fat.
  • Add green pepper & onion to skillet with sausage and cook for 5 minutes.
  • Add tomatoes & seasonings, stir well.
  • Pour in blackeyed peas with the liquid in the can. Cover & simmer for 15 minutes.
  • Serve hot with grated cheese on top.

1 lb spanish chorizo sausage, thinly sliced
1 yellow onion, chopped
1 red bell pepper, chopped

2 (14 ounce) cans black-eyed peas, drained
2 (8 ounce) bottles clam juice
1 (28 ounce) can crushed tomatoes
1 teaspoon dried thyme leaves
1 teaspoon paprika
1/2 teaspoon coarse salt
1/2 teaspoon ground red pepper
1/2 teaspoon ground black pepper
1 lb medium shrimp, peeled, deveined
1 pint grape tomatoes, halved
5 green onions, white and some green, thinly sliced
1/4 cup chopped flat leaf parsley

Steps:

  • Cook bacon in a Dutch oven over medium-high heat, turning once, until crisp, about 4 minutes. Stir in sausage; cook, stirring, until sausage begins to brown. Transfer bacon and sausage to a paper towel. Add onion, bell pepper and celery to the Dutch oven; cook, stirring, until vegetables begin to soften, about 4 minutes. Add garlic; cook, stirring, 1 minute.
  • Stir in the black-eyed peas, clam juice, crushed tomatoes, thyme, paprika, salt, red pepper, and black pepper to taste. Heat to a boil; lower heat to a simmer. Cover; cook 10 minutes. Stir in shrimp; cook, stirring, until shrimp turns pink, about 5 minutes. Stir in tomatoes and reserved bacon and sausage; cook, stirring 1 minute. Stir in green onions and parsley.
