Thai Stir-Fried Spinach With Garlic and Peanuts image

A lovely Thai stir-fried spinach in a garlicky sauce topped with peanuts or cashews that's bursting with flavor. Simple to make and so scrumptious.

1 large bunch fresh spinach
4 cloves garlic (finely chopped)
Optional: 1 red chili (sliced, or 1/3 to 3/4 teaspoon dried crushed chili flakes)
1/4 cup chicken or vegetable stock
2 tablespoon oyster-flavored sauce (or vegetarian oyster sauce/stir-fry sauce)
1 tablespoon fish sauce (or 1 1/2 tablespoons soy sauce if vegetarian)
1 tablespoon sherry (cooking sherry works well too)
1 teaspoon brown sugar
1 teaspoon sesame oil
Optional: 1/2 red pepper (sliced thinly)
1/4 to 1/3 cup roughly chopped peanuts or cashews (for topping)
1 to 2 tablespoons vegetable oil

Steps:

  • Gather the ingredients.
  • In a cup, stir together stock,​ oyster sauce, fish sauce, sherry, and brown sugar. Set aside. Rinse spinach and drain.
  • Heat a wok or large frying pan over medium-high heat. Add 1 to 2 tablespoons vegetable oil and swirl around, then add garlic and chili (if using). Stir-fry 1 minute to release the fragrance.
  • Add the red pepper (if using) and stir-fry 1 minute. Add the spinach and stir-fry briefly, until the spinach leaves are lightly covered in the oil and garlic/chile (about 30 seconds). Add the stir-fry sauce and stir-fry until spinach has cooked down to a nice dark green (stems should still be on the crisp side), about 2 to 4 minutes.
  • Remove from heat and taste-test, adding more fish sauce instead of salt. (If too salty or sweet, add a squeeze of lime or lemon juice. More chile can be added for increased spiciness.)
  • To serve, scoop or slide spinach onto a serving plate or bowl. Top with the remaining liquid at the bottom of your wok/pan. Drizzle over the sesame oil and top with chopped nuts.
  • Serve and enjoy.

1 (10 ounce) package frozen chopped spinach, thawed and drained
2 cups dry bread stuffing mix
3 eggs, beaten
¼ cup grated Parmesan cheese
½ onion, chopped
2 tablespoons melted butter
¼ cup shredded Cheddar cheese

Steps:

  • In a large bowl, mix together chopped spinach, dry bread stuffing mix, eggs, Parmesan cheese, onion, butter and Cheddar cheese. Cover and chill in the refrigerator approximately 30 minutes.
  • Drop the mixture by rounded spoonfuls onto a lightly greased large baking sheet. Place baking sheet in the freezer approximately 1 hour.
  • When ready to bake, allow the balls to partially thaw, about 30 minutes.
  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a large baking sheet.
  • Bake the balls in the preheated oven 20 to 25 minutes, or until lightly browned.

2cm piece chopped ginger
1 finely sliced shallot
½ chopped chilli
1 tbsp coriander leaves
2 tbsp peanuts
dash fish sauce
sprinkle sugar
8-12 baby spinach leaves

Steps:

  • Mix together limes, ginger, shallot, chilli, coriander leaves and peanuts. Season with a dash of fish sauce and a sprinkle of sugar.
  • Lay the spinach leaves on a platter. Place a spoonful of the mix on each, then hand round and get everyone to roll them up before eating in one bite.

  • Mix all ingredients except english muffins.
  • Toast or broil english muffins.

1/2 cup unsalted butter
1 small onion, chopped
1 teaspoon minced garlic
2 (10 ounce) packages frozen chopped spinach, thawed and drained
1 (8 ounce) bag herb seasoned stuffing mix (do not precook this, use dry)
6 large eggs
1 cup grated parmesan cheese
salt and pepper

Steps:

  • Preheat the oven to 350 degrees.
  • In a large saute pan, over medium heat, melt the butter.
  • Add the onion and cook until the onion is translucent & soft, about 5 minutes; then add garlic and cook for about 30 seconds. Remove pan from heat and let cool.
  • In meantime, remove excess water from thawed spinach by pressing between paper towels (you do not need to cook the spinach).
  • In a large bowl, combine the stuffing mix, spinach, eggs, Parmesan cheese, salt & pepper, and onion/garlic mixture. Combine well.
  • Line a rimmed baking sheet with parchment paper.
  • One at a time, using hands, roll mixture into individual 1" balls. Place each on partchment lined baking sheet.
  • Bake the balls for 15-20 minutes or until very slightly browned.
  • Dipping sauces: Marinara recommended but could use Ranch, sour cream, horseradhish, etc.

1 to 2 teaspoons crushed red pepper

Assorted vegetable dippers (such as peeled baby carrots, zucchini slices, pea pods, yellow summer squash sticks, and/or red sweet pepper strips)

Steps:

  • In a medium bowl, combine spinach, sour cream, and yogurt. Stir in the snipped mint, the 1/4 cup chopped peanuts, the peanut butter, honey, soy sauce, and crushed red pepper. Cover and chill for 2 to 24 hours. If desired, garnish with additional chopped peanuts and fresh mint leaves. Serve with vegetable dippers.

4 tablespoons butter (or 1/4 cup)
3 eggs
1 cup flour
1 cup milk
1 teaspoon salt
1 teaspoon baking powder
1 tablespoon Dijon mustard
1 dash cayenne pepper
1/4 cup chives or 1/4 cup green onion, chopped
1 lb edam cheese, grated
2 (12 ounce) packages frozen chopped spinach, thawed and well drained

Steps:

  • Preheat oven to 350 degrees F. In a 9-inch x 13-inch cake pan, melt butter in the oven.
  • In a large mixing bowl, beat eggs; add flour, milk, baking powder, salt, mustard, cayenne and chives. Blend well.
  • Fold in cheese and spinach.
  • Pour into pan on top of butter, and bake for 35 minutes or until almost set in center.
  • Allow to sit for about 15 minutes; cut into bite-sized squares and serve warm.
  • These may also be frozen after baking and reheated in 350-degree F oven for 15-20 minutes at serving time.
  • Makes 10 dozen appetizers.

2 teaspoons light or dark brown sugar
1 teaspoon ground coriander
1 teaspoon ground ginger
1 teaspoon turmeric
1 teaspoon salt
1 teaspoon garlic powder
1 teaspoon chili powder
½ cup prepared Thai peanut sauce
½ cup light coconut milk
½ cup chicken broth
4 boneless, skinless chicken breast halves
2 tablespoons vegetable oil
2 tablespoons coarsely chopped peanuts
2 tablespoons thinly sliced scallions

Steps:

  • Mix sugar and dry seasonings in a small bowl. In a 2-cup measuring cup, mix peanut sauce, coconut milk and broth. Split each breast by cutting in half horizontally. Lightly pound to about a 1/2-inch thickness. Place chicken and oil in a medium bowl; toss to coat. Sprinkle seasoning mix evenly over chicken breasts.
  • Heat a 12-inch non-stick skillet over medium-high heat until very hot, then add chicken. Cook, turning once, until crusty brown and fully cooked, about 2 minutes per side. Transfer to a cutting board and let rest.
  • Add peanut mixture to empty skillet; cook, stirring constantly to loosen brown bits, until sauce reduces by half, about 2 to 4 minutes. Return to measuring cup. (Chicken and sauce can be made 2 hours ahead; reheat in a warm oven or microwave.)
  • To serve, cut each breast cutlet into 12 to 15 bite-sized pieces. Transfer to a serving platter. Drizzle with a little peanut sauce, then sprinkle with peanuts and scallions. Serve immediately with toothpicks and remaining dipping sauce.
