3 pounds small red or white potatoes
1/4 cup good olive oil
1 1/2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
2 tablespoons minced garlic (6 cloves)
2 tablespoons minced fresh parsley

Steps:

  • Preheat the oven to 400 degrees F.
  • Cut the potatoes in half or quarters and place in a bowl with the olive oil, salt, pepper, and garlic; toss until the potatoes are well coated. Transfer the potatoes to a sheet pan and spread out into 1 layer. Roast in the oven for 45 minutes to 1 hour or until browned and crisp. Flip twice with a spatula during cooking in order to ensure even browning.
  • Remove the potatoes from the oven, toss with parsley, season to taste, and serve hot.

3 pounds red bliss potatoes
4 cloves garlic
Salt and freshly ground black pepper
3 tablespoons butter, room temperature
1/2 to 1 cup heavy cream, room temperature

Steps:

  • In a large pot, cover potatoes and garlic with water by 1 inch. Bring to a boil, add salt and simmer until tender, about 15 minutes. Drain well.
  • Put the potatoes and garlic back in the pot and cook over low heat to evaporate the rest of the water. Mash in the butter with a potato masher. Add the heavy cream in stages until the desired consistency reached. Season with salt and pepper.

1 (3 lb) bag baby red potatoes
3 -4 cloves garlic, minced (or 2 tbsp minced garlic from the jar)
1 tablespoon dried parsley
1/4 cup butter

Steps:

  • Preheat oven to 375 degrees.
  • Grease a 2 quart casserole dish (I use garlic flavour Pam).
  • Scrub potatoes, chop into halves or quarters, depending on size of potato; place in casserole dish.
  • Cut butter into pats; place randomly around top of potatoes.
  • Sprinkle with parsley.
  • Sprinkle with garlic.
  • Bake, uncovered, at 375 degrees for about 10 minutes.
  • Stir; cover; continue baking at 375 for about an hour, or until the potatoes are tender, stirring a couple more times during baking.

5 to 7 cloves garlic, peeled, plus 2 cloves garlic, one sliced, one minced
Enough olive oil to cover the bottom of a wide saute pan
4 big handfuls greens (baby mustard, turnip, chard), picked and roughly shredded
Salt and freshly ground black pepper

Steps:

  • Place saute pan over medium heat and then lightly crush 5 to 6 garlic cloves. When the pan is hot, add just enough oil to cover the bottom of the pan and add the garlic. Cook, stirring frequently until golden brown (3 to 5 minutes). Remove from the oil. At this point, the greens can be quickly Sauteed for a mild garlic flavor.
  • If you're looking for something a little stronger, thinly sliver 1 clove and add it to the pan stirring constantly (burned garlic is not Good Eats, nor is anything that touches it). Once the slivers turn golden, add the greens and toss to coat with the hot oil. Season with salt and pepper as soon as the greens start to wilt and plate immediately.
  • If you're looking for even more garlic flavor, finely mince a clove of garlic and toss it into the greens during the last 30 seconds of cooking and toss the greens to distribute. Keep the pan and the greens moving constantly, if you can.
  • Serve as a side dish or toss with pasta and serve as a main course.

1/4 cup butter, melted
2 teaspoons minced garlic
1 teaspoon salt
1 teaspoon paprika
1 small lemon, juice of
1 tablespoon grated parmesan cheese

Steps:

  • Preheat oven to 400 degrees.
  • Scrub and quarter potatoes.
  • Place potatoes in 8x8 inch baking dish.
  • In a small bowl, combine melted butter, garlic, salt, paprika, and lemon juice.
  • Pour over potatoes and stir to coat.
  • Sprinkle Parmesan cheese over potatoes.
  • Cover and bake for 30 minutes. Uncover and bake an additional 10 minutes, until golden brown.

1 (8 ounce) package cream cheese, softened
1 cup shredded Cheddar cheese
1 (3 ounce) can bacon bits
1 teaspoon cayenne pepper
2 teaspoons garlic powder
¼ teaspoon grated Parmesan cheese

Steps:

  • Place potatoes into a large pot and cover with lightly salted water. Bring to a boil, then reduce heat to medium-low, cover, and simmer until tender, about 20 minutes. Drain and allow to steam dry for a minute or two.
  • Mash the potatoes until smooth, then add the cream cheese, Cheddar cheese, bacon, cayenne pepper, and garlic powder. Mash until the ingredients are well blended, then transfer to a serving dish, and sprinkle with Parmesan cheese to garnish.
