Grilled Italian Sausages and Tomatoes on Focaccia image

Slices of focaccia are topped with a fresh relish of grilled tomatoes, oregano, salt, and pepper before the links are rolled into their places.

4 tomatoes (about 2 1/4 pounds total), halved crosswise
Coarse salt and freshly ground pepper
3 tablespoons extra-virgin olive oil
1/4 cup fresh oregano leaves, coarsely chopped
6 fresh sweet, spicy, or fennel Italian sausages
12 pieces focaccia (about 3 by 4 inches each)

Steps:

  • Preheat a grill to medium-high (if you are using a charcoal grill, coals are ready when you can hold your hand 5 inches above grill for just 3 to 4 seconds). Season tomatoes with salt and pepper; drizzle with about 2 tablespoons oil. Grill tomatoes, cut side down, until marked by grill and beginning to soften, 5 to 7 minutes. Flip tomatoes, and grill until soft and juicy, but still holding shape, 5 to 7 minutes more. Transfer to a cutting board, and coarsely chop. Transfer to a medium bowl. Add oregano, and toss to combine. Season with salt, and drizzle with remaining oil; set aside.
  • Grill sausages, turning occasionally, until browned and cooked through, about 12 minutes. Cut each sausage in half lengthwise. Using a slotted spoon, divide tomatoes among focaccia; top each with a sausage half, arranging cut side down. Serve immediately.

1/3 cup Crisco® Light Olive Oil
3 tablespoons balsamic vinegar
2 tablespoons minced garlic
1 tablespoon minced fresh rosemary
1/2 pound hot Italian sausage links
1 large sweet red pepper, halved
1/2 large red onion, cut into wedges
Salt and pepper to taste
2 prebaked Italian bread shell crusts (14 ounces each)
ADDITIONAL TOPPINGS:
1 cup (4 ounces) shredded mozzarella cheese
1/4 cup grated Parmesan cheese
1 cup crumbled goat cheese
2 plum tomatoes, halved, seeded and chopped
1/2 cup chopped green onions

Steps:

  • Combine olive oil, vinegar, garlic and rosemary. Pour half of the marinade into a small bowl, cover and refrigerate. Brush the remaining marinade over the sausages, peppers and onions. Sprinkle with salt and pepper. Discard any remaining marinade., Coat the grill grate with nonstick spray before starting. Grill over medium heat until sausages are no longer pink, about 12 minutes, and vegetables are crisp-tender, about 8 minutes., Transfer sausages and vegetables to a cutting surface. Cut sausages into 1/2-in. pieces and peppers into thin strips. Sprinkle each pizza crust with half the mozzarella and Parmesan cheeses. Top each with half the sausage, peppers and onions. Top each crust with half the goat cheese, tomatoes and green onions. Drizzle with the refrigerated marinade., Place pizzas on baking sheets. Bake at 375° for 8-10 minutes or until cheese melts and crusts are brown.

1/2 pound hot Italian sausage, links
1/2 pound mild Italian sausage, links
12 (6-inch) flour tortillas
1 cup shredded fontina cheese
1/2 cup grated Parmesan cheese
1 red onion, sliced, grilled and chopped
1 yellow pepper, grilled, peeled and chopped
1 red pepper, grilled, peeled and chopped
4 cloves garlic, coarsely chopped
1/4 cup chopped flat leaf parsley
2 cups Sweet 100 tomatoes, sliced in half (sweet 100 tomatoes are very small, flavorful tomatoes)
1/4 cup thinly sliced red onion
1/4 cup red wine vinegar
2 tablespoons olive oil
3 tablespoons basil chiffonade
Salt and freshly ground pepper

Steps:

  • Preheat grill to high. Grill the sausages until golden brown on all sides and cooked through, about 10 to 12 minutes. Remove, let rest for 5 minutes and slice into 1/4-inch thick slices. Lay 8 of the tortillas on a work surface. Divide the cheeses, sausage, onion peppers, garlic and parsley among them. Stack to make 4 and top with the remaining 4 tortillas. Brush the tops with the olive oil and grill for 2 to 3 minutes until golden brown. Brush with more oil, turn over and continue grilling until golden brown and the cheese melts. Remove the quesadilla, quarter and top with the relish.
  • Combine all ingredients in a medium bowl and season with salt and pepper to taste.

This is a variation of Mysterygirl's panini recipe (Recipe #16432) that I came up with when I had a craving for Italian sausage. I must say that it turned out really great, but try it for yourself! Amounts are for one sandwich - just multiply as necessary.

1 hot Italian sausage or 1 sweet Italian sausage, uncooked
1 ciabatta bun, split
2 -3 slices provolone cheese (depending on size of slices)
roasted red pepper, to taste (or other toppings)

Steps:

  • Put sausage in small pot and cover with water.
  • Bring to boil over high heat.
  • Once water boils, prick the sausage with a fork several times so that the grease comes out as it cooks.
  • Boil sausage for 5 minutes, or until it looks at least halfway cooked.
  • Remove sausage from water, and either rinse it under warm water (there might be some scum on it), or wipe it with a clean paper towel.
  • Preheat George Foreman grill.
  • Slice sausage in half, lengthwise.
  • Place sausage cut-side down on hot grill, and cook until done (about 5 minutes or so).
  • Place cheese in bun, then add sausage, and top with roasted red peppers and/or your own favourite additions such as hot banana peppers, marinara sauce, olives, tomatoes, fresh basil, etc, etc.
  • Close sandwich and grill in George Foreman until the bread is golden and crispy.
  • Cut sandwich in half and enjoy!

1 large red onion, quartered lengthwise and separated into layers
3 tablespoons extra-virgin olive oil

1/2 teaspoon dried oregano, crumbled
1/2 teaspoon salt
1/8 teaspoon black pepper
1 lb luganega or other fresh Italian sausage
Special Equipment
a perforated grill sheet; 2 (10- to 12-inch-long) wooden or metal skewers

Steps:

  • Prepare grill for cooking over medium-hot charcoal (moderate heat for gas). (If using a charcoal grill, open vents on bottom of grill, then light charcoal. When Charcoal turns grayish white (about 15 minutes from lighting), hold your hand 5 inches above grill rack to determine heat for charcoal as follows: Hot: When you can hold your hand there for 1 to 2 seconds; Medium-hot: 3 to 4 seconds; Low: 5 to 6 seconds. If using a gas grill, preheat burners on high, covered, 10 minutes, then, if necessary, reduce to heat specified in recipe.)
  • Toss peppers and onion with 1 tablespoon oil. Grill on lightly oiled grill sheet set directly on grill rack, with grill covered only if using a gas grill, turning occasionally, until slightly softened and charred, 9 to 15 minutes (onion will cook faster), transferring to a bowl as cooked.
  • Add vinegar, oregano, salt, pepper, and remaining 2 tablespoons oil to peppers and onion, tossing to coat. Let stand 10 minutes to allow flavors to develop.
  • While vegetables stand, run skewers crisscrossed horizontally through sausage coil, securing ends. Grill directly over medium-hot charcoal (moderate heat for gas) on lightly oiled grill rack, covered only if using a gas grill, turning over once, until cooked through, 10 to 12 minutes total. (Thicker sausage may take longer.)
  • Transfer vegetables to a platter and top with sausage.

3 green peppers (large dice)
3 sweet onions (large dice)
pickled hot peppers (optional)

Steps:

  • Put a little olive oil in a frying pan and put in the pepper and onions; cook slowly till just about done or whatever doneness you perfer them; put aside.
  • Split the sausage down the center lengthwise and put on a platter.
  • Microwave them till about three-quarters done.
  • Then put them on the grill, open side down and grill; turn them over and finish grilling till done.
  • Put sausage in a homemade bun and top with the onions and peppers.
  • If you like pickled hot pepper, put these on, too; the kind that come whole in a jar.

1/2 lb bulk hot Italian sausage
2 tablespoons Italian seasoned breadcrumbs
3/4 ounce mozzarella cheese, sliced
12 slices Italian bread, 1/2 inch thick
1/2 cup sun-dried tomato mayonnaise
1 cup shredded lettuce
1 medium tomatoes, thinly sliced

Steps:

  • Heat coals or gas grill for direct heat. Mix beef, sausage and bread crumbs in large bowl. Shape mixture into 6 patties, about 1/2 inch thick and 3 1/2 inches in diameter.
  • Cover and grill patties 4 to 6 inches from medium heat 12 to 15 minutes, turning once, until meat thermometer inserted in center reads 160°F Top patties with cheese.
