These homemade peach crumb bars are always a hit. Wait until summer for fresh peaches or use frozen to get that wonderful peach flavor any time of the year.

1 ½ cups all-purpose flour
½ cup white sugar
½ teaspoon baking powder
1 pinch salt
10 tablespoons cold unsalted butter, cut into cubes
1 large egg yolk
1 tablespoon cold water
2 cups fresh peach slices, or more to taste
½ cup white sugar
2 tablespoons all-purpose flour
1 tablespoon lemon juice
1 teaspoon vanilla extract
¼ teaspoon ground cinnamon
¼ teaspoon ground nutmeg

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Coat an 8x8-inch baking pan with cooking spray.
  • Whisk flour, sugar, baking powder, and salt together in a bowl. Next, cut in the cold butter using 2 forks or a pastry cutter then slowly mix in the egg yolk and cold water. Don't worry if the dough seems really crumbly; it should be!
  • Press 1/2 of the crumble mixture into the prepared pan to make the crust. Save the rest for the top of the bars.
  • Stir together peach slices, sugar, flour, lemon juice, vanilla extract, cinnamon, and nutmeg until combined. Evenly add peach filling to the top of the crust.
  • Sprinkle the remaining crumble over the peach filling.
  • Bake in the preheated oven until golden brown and set, 30 to 38 minutes. Cool bars to room temperature, then cut and serve.

"KUCHEN IS a filling dessert for this German meal. It's not too sweet, and you can use virtually any of you favorite fruits. As a child, I took great pride in arranging the fruit in the pan. We always made this dessert on the same day of the meal so it would be warm and fresh. A dollop of whipped cream on top was an added treat!

1 cup all-purpose flour
1/4 cup confectioners' sugar
1/4 teaspoon salt
1/2 cup butter
FILLING:
2 cans (one 29 ounces, one 15-1/4 ounces) sliced peaches, drained
2 large eggs
1 cup sugar
1/4 teaspoon salt
3 tablespoons all-purpose flour
1 cup sour cream

Steps:

  • In a small bowl, combine flour, confectioners' sugar and salt. Cut in butter to form a dough. Pat lightly into an ungreased 11x7-in. baking pan. , Arrange peaches over the crust; set aside. In another bowl, beat eggs. Whisk in the sugar, salt, flour and sour cream until mixture is smooth. Pour over the peaches. , Bake at 450° for 10 minutes. Reduce heat to 325°; bake 35 minutes more or until center is set. Serve warm or chilled. Store in the refrigerator.

2 tablespoons sugar
1/4 teaspoon salt
1/8 teaspoon baking powder
1/4 cup butter or margarine, softened
3 medium fresh peaches, sliced (1 1/2 cups)
1/3 cup sugar
1 teaspoon ground cinnamon
2 egg yolks
1 cup whipping (heavy) cream

Steps:

  • Heat oven to 400°F. Mix flour, 2 tablepoons sugar, the salt and baking powder in medium bowl. Cut in butter, using pastry blender or crisscrossing 2 knives, until mixture looks like fine crumbs. Pat mixture firmly and evenly in bottom and halfway up sides of ungreased square pan, 8x8x2 inches.
  • Spread peaches in crust in pan. Mix 1/3 cup sugar and the cinnamon; sprinkle over peaches. Bake 15 minutes.
  • Beat egg yolks and whipping cream until well blended; pour over peaches. Bake 25 to 30 minutes or until custard is set and edges are light brown. Serve warm. Store covered in refrigerator.

2 1/3 c bisquick baking mix
1/2 c milk
3 Tbsp sugar
3 Tbsp butter, melted
1 can(s) 16 oz. sliced peaches, drained
1/4 c sugar
1/2 tsp ground cinnamon
2/3 c sour cream
1 egg

Steps:

  • 1. Heat oven to 375 degrees. Prep 9 inch square pan by using non-stick spray.
  • 2. Combine baking mix, milk, sugar, and butter. Spread in pan.
  • 3. Arrange peach slices on the top.
  • 4. Mix 1/4 cup of sugar and the cinnamon, sprinkle over the peach slices.
  • 5. Mix the sour cream and the egg, drizzle over the top.
  • 6. Bake for 35 to 40 minutes, do a toothpick test, if it comes out clean, it's done.
  • 7. Remove from oven onto a wire rack to cool slightly.
  • 8. Serve warm with a dollop of sweetened whipped cream.

I first made this when I was in the 10th grade in high school -- From a 1962 Pet Milk Praise the Cook magazine tear-out. A rich crust topped with fruit and custard -- Not too sweet -- serve warm or cold!

1 1/2 cups flour
1/2 teaspoon salt
1/2 cup butter (softened)
29 ounces sliced peaches (one 29 ounce can sliced peaches, drained well, RESERVE 1/2 cup peach syrup for custard)
1/2 cup sugar
1/2 teaspoon cinnamon
1/2 cup reserved peach syrup
1 egg (slightly beaten)
1 cup evaporated milk

Steps:

  • Preheat oven to 375 degrees, or 350 degrees for Pyrex.
  • In a 1 1/2 quart bowl, combine flour, salt, and butter with a pastry blender until mixture is like a coarse meal.
  • With the back of a spoon, press flour mixture onto the bottom and halfway up the sides of a buttered 8-inch square dish or pan.
  • Arrange well drained peach slices over crust, sprinkle with sugar mixed with cinnamon, and bake at 375 for 20 minutes.
  • Mix 1/2 cup peach syrup, 1 beaten egg, and 1 cup evaporated milk; pour over fruit in crust.
  • Bake for 30-35 minutes until custard is firm except in the center. Center will become firm upon standing.
  • Serve warm or cold ~ serves 9.

1 cup butter
1/2 cup sugar
1 egg
1 teaspoon baking powder
1 3/4 cups flour
2 cups hot boiling water
1 cup sugar
2 packages custard powder (3-4 tbsp)

Steps:

  • Mix the ingredients for the bottom layer together and press into 9x13 pan.
  • Bake at 325 for 15-20 minutes.
  • Mix custard in a little cold water before adding to boiling water.
  • Boil til thickens.
  • Spread over the base.
  • Top with whipping cream.
  • Sprinkle coconut over top.

This is a really old fashioned recipe for custard squares that does not use custard powder. My MIL makes these when her wonderful son has done some thing really good, or just when she wants to give us a treat, and I adore them... so I've been attempting my own and here is what I came up with.

300 g frozen puff pastry (sheets are easiest)
2 1/2 cups milk (low fat is fine but anything works really)
100 g butter
1/3 cup cornflour
1/2 cup icing sugar
1 egg
1 teaspoon vanilla essence
1 tablespoon cocoa
2 cups icing sugar
2 tablespoons milk (you may need a little more or less so go carefully)

Steps:

  • Roll your sheets of pastry very thin. You are looking for 2 squares/rectangles that are approximately 30cm x 30cm each. Prick them well all over and then place on baking sheets (roll on baking parchment and then slide the whole lot onto the baking sheet for ease of use) and bake at 210C for 10 - 12 minutes (or until golden brown and cooked through). Leave the pastry sheets to cool while you make the custard.
  • Put 2 Cups of milk into a pan with the butter and heat to melt.
  • Mix the cornflour, icing sugar and eggs to a smooth paste with the remaining 1/2 cup of milk.
  • Remove the milk and butter from the heat and whisk in the egg mixture then return to the heat.
  • Cook over medium heat until the mixture thickens and then for a further 5 minutes, stirring constantly (a wooden spoon works well here). Remove from the heat and stir in the vanilla. Leave the custard until cool.
  • Place one sheet of pastry on a piece of baking parchment on a tray or board and cover with all the cool custard. Place the other pastry sheet on top and press down slightly until both sheets have adhered to the pastry.
  • Sift the cocoa and icing sugar together, then stir in the milk to make a smooth, spreadable icing.
  • Ice the whole lot with Chocolate icing and then place in the fridge for a couple of hours so that the whole thing is a little easier to manage. Cut into squares with a serrated knife and serve. Store any remaining squares in the fridge in an airtight container (don't worry, they won't last long!).

1 1/2 cups all-purpose flour
1 3/4 cups sliced almonds
1/3 cup granulated sugar
1/3 cup light brown sugar (packed plus 1 tablespoon)
table salt
12 tablespoons unsalted butter, cold, cut into 1/2-inch pieces
1 1/2 lbs frozen peaches, partially thawed
1/2 cup peach preserves
1/2 teaspoon lemon zest, grated
1 teaspoon fresh lemon juice

Steps:

  • Adjust oven rack to middle position and heat oven to 375 degrees.
  • Line 13x9-inch baking pan with aluminum foil, allowing excess to overhang pan edges. Spray pan with cooking spray.
  • Process flour, 11/4 cups almonds, granulated sugar, 1/3 cup brown sugar, and 1/2 teaspoon salt in food processor until combined, about 5 seconds.
  • Add butter and pulse mixture until it resembles coarse meal (some pea-sized pieces of butter will remain), about twenty 1-second pulses.
  • Transfer 1/2 cup flour mixture to small bowl and set aside.
  • Press remaining flour mixture firmly and evenly into bottom of prepared baking pan. Bake until golden brown, about 15 minutes.
  • Meanwhile, toss remaining 1 tablespoon brown sugar with reserved flour mixture. Set aside.
  • While crust is baking, remove blade from food processor and wipe out workbowl. Pulse peaches and preserves in food processor until mixture has 1/4-inch chunks, about five 1-second pulses (if larger chunks remain, scrape down sides and pulse 2 more times).
  • Cook peach mixture in large nonstick skillet over high heat until thickened and jam-like, about 10 minutes.
  • Off heat, add pinch salt, lemon zest, and lemon juice. Pour mixture over hot crust.
  • Using fingers, pinch reserved flour mixture to create dime-sized clumps and sprinkle over peaches.
  • Sprinkle remaining 1/2 cup almonds over top and bake until almonds are golden brown, about 20 minutes.
  • Cool to room temperature, at least 2 hours. Using foil overhang, lift from pan and cut into 24 squares. Squares are best served on day they are baked because the crust can become soggy with time.
  • To Reheat.
  • To revive, simply place leftover squares side by side (with no spaces in between the squares) on a baking sheet and heat in a 350°F oven until the bottoms are crisp, 10 to 12 minutes. Allow to cool back to room temperature before eating.

Steps:

  • Preheat oven to 350°. Line a 13x9-in. baking pan with nonstick foil; set aside. In a large bowl, beat cracker crumbs, flour, butter and 1/2 cup sugar until combined.   • In a large bowl, whisk the flour, oats, brown sugar, and cinnamon together until combined. Cut in the cold butter using a pastry blender or two forks until it reaches coarse, pea-sized crumbs. See photo above. Remove 3/4 cup of the mixture, put in a small bowl and mix with pecans. This will be set aside for the topping.
  • Evenly press the remaining oat mixture into the bottom of the prepared baking pan. Bake for 15 minutes as you prepare the filling.
  • Whisk the egg and sugar together until smooth and creamy. Add the flour and salt. Whisk until combined. Fold in the peaches. Remove crust from the oven after 15 minutes and pour the filling over hot crust. Sprinkle with reserved oat/pecan mixture.
