BREAKFAST SAUSAGE CORNBREAD



Breakfast Sausage Cornbread image

Add breakfast sausage and sage to your cornbread and you've got your next brunch.

Nonstick cooking spray, for spraying the baking dish
1 1/2 cups yellow cornmeal
1/4 cup all-purpose flour
2 tablespoons sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon fine salt
1 cup milk
1 cup sour cream or 2 percent Greek yogurt
2 tablespoons unsalted butter, melted
1 large egg
1 cup cooked and crumbled breakfast sausage
1 teaspoon chopped fresh sage

Steps:

  • Position a rack in the middle of the oven and preheat the oven to 400 degrees F. Generously coat a 9-inch square baking dish or 9-inch cast-iron skillet with cooking spray.
  • Whisk the cornmeal, flour, sugar, baking powder, baking soda and salt together in a large bowl. Whisk the milk, sour cream, butter and egg together in a medium bowl. Add the milk mixture to the flour mixture and whisk to combine. Fold in the sausage and sage.
  • Pour the batter into the prepared baking dish and bake until the cornbread springs back when pressed in the center, 25 to 35 minutes. Let cool in the baking dish for about 15 minutes. Loosen the edges, then slice into wedges or squares and serve warm or at room temperature.

CHICKEN-N-VEGGIE FILLED CONFETTI CORNBREAD

1 (14-ounce) can artichoke hearts, coarsely chopped
1 (9-ounce) package frozen spinach, thawed and drained well
1 cup Parmesan, grated
1 cup mozzarella, shredded
1 cup mayonnaise or salad dressing
2 teaspoons minced garlic
3 teaspoons hot pepper sauce
3 cups cooked chicken, diced
2 eggs
2 tablespoons oil
3/4 cup milk
1/2 cup carbonated lemon-lime beverage
2 cups self-rising cornmeal mix (recommended: Martha White brand)
1/2 cup self-rising flour
1 1/3 cups bell pepper, chopped, green, red, yellow, or a combination

Steps:

  • Preheat oven to 400 degrees F.
  • Place a greased 12-inch cast iron skillet in the oven to heat.
  • In a large bowl, combine the artichoke hearts, spinach, Parmesan, mozzarella, mayonnaise, garlic, and 2 teaspoons hot pepper sauce. Mix well, and then fold in the cooked chicken. Set aside.
  • In a medium bowl, blend eggs, oil and 1 teaspoon hot pepper sauce. Add the milk, carbonated beverage, cornmeal and flour. Mix well, and then stir in 1 cup of the chopped bell pepper.
  • Remove the skillet from the oven. Pour the cornbread batter into the skillet. Carefully spread the batter with a spoon toward the sides of the skillet. The batter will begin to rise around edge of skillet. Spoon the chicken mixture on top of the batter, leaving the edges uncovered. Gently press the chicken mixture into the batter, making the edges rise slightly. Sprinkle the remaining 1/3 cup of bell pepper over the top.
  • Bake for 25 to 35 minutes, or until the cornbread is golden and the filling is hot. Remove from the oven and cool for 5 to 10 minutes. Cut into wedges and serve.

SMOKEY CHICKEN AND BROCCOLI CORNBREAD

BAKED HAM WITH SPICED CHERRY GLAZE



Baked Ham With Spiced Cherry Glaze image

Cooking spray
1 7-pound bone-in fully cooked ham, skin removed
1/2 cup dry white wine (or use water)
1 cup cherry preserves
1 tablespoon creamy horseradish sauce
1 tablespoon packed light brown sugar
1/2 teaspoon ground cinnamon
1/2 teaspoon ground cumin
Kosher salt
Grated zest and juice of 1 lemon, plus more juice if needed

Steps:

  • Preheat the oven to 350 degrees F. Line a roasting pan with aluminum foil and spray with cooking spray.
  • Score the top and sides of the ham with a small sharp knife in a crisscross pattern. Put the ham in the prepared pan, flat-side down, and pour the wine or water into the bottom of the pan. Tent loosely with foil and bake until a thermometer inserted into the center of the ham registers 140 degrees F, about 2 hours.
  • Meanwhile, make the glaze: Combine the preserves, horseradish sauce, brown sugar, cinnamon, cumin, 1/4 teaspoon salt and the lemon juice in a small saucepan and bring to a boil over medium heat. Cook until the glaze is slightly thickened, 2 to 3 minutes. Remove from the heat and stir in the lemon zest; let cool. Add more lemon juice to taste, if needed.
  • Remove the ham from the oven, uncover and brush with about 1/4 cup of the glaze. Bake, uncovered, 20 more minutes, brushing the ham with another 1/4 cup glaze halfway through. Remove from the oven, brush with more glaze and transfer to a cutting board. Let stand 10 minutes before slicing. Serve with the remaining glaze.

Steps:

  • Preheat the oven to 400 degrees F. Coat a 9-inch-square baking dish or a 9-inch cast-iron skillet with cooking spray. Whisk the cornmeal, flour, sugar, baking powder, baking soda and 1/4 teaspoon salt in a large bowl. In a separate bowl, whisk the egg, milk, sour cream and melted butter; whisk into the dry ingredients until combined. Fold in the hominy, pickled peppers, walnuts and jalapeno.

1 fully cooked bone-in ham (6 to 8 pounds)
1 cup packed brown sugar
3 tablespoons maple syrup
1 teaspoon ground mustard
3 tablespoons cornstarch
1/2 cup sugar
1 cup cold water
1 can (15 ounces) pitted dark sweet cherries, undrained
2 tablespoons lemon juice
1 teaspoon almond extract

Steps:

  • Preheat oven to 325°. Place ham on a rack in a roasting pan. Using a sharp knife, score surface of ham with 1/4-in.-deep cuts in a diamond pattern. Mix brown sugar, syrup and mustard; rub over ham and press into cuts. Bake, covered, until a thermometer reads 140°, 1-3/4 to 2 hours., In a small saucepan, mix cornstarch, sugar and water until smooth. Add cherries; bring to a boil. Cook and stir until thickened, 1-2 minutes. Remove from heat; stir in lemon juice and almond extract. Serve warm with ham.

I created this recipe to use up leftover ham. My Dutch son-in-law loves my regular mac & cheese and he LOVES this one using Dutch Gouda (we pronounce it goo-dah, but I'm told that it's actually closer to how-dah). It's really just fancy mac & cheese with vegetables. I serve it with a green salad and french bread.

4 tablespoons butter
4 tablespoons flour
2 cups milk
1 pinch ground nutmeg
1 pinch salt
1 pinch pepper
2 cups grated smoked gouda cheese
1 teaspoon dried mustard
1 cup frozen peas, thawed
2 cups cooked ham, cubed
8 ounces pasta, cooked (farfalle, rotini or shells)

Steps:

  • Preheat oven to 375 degrees.
  • In a medium saucepan, melt butter. Gradually whisk in flour, stirring constantly. Cook over medium heat until flour and butter are smooth. Gradually whisk in milk.
  • Add nutmeg, salt, pepper and dried mustard.
  • Reduce heat to low and cook, stirring frequently, until sauce is thickened. Remove from heat and stir in 1 1/2 cups of the cheese. Adjust seasonings, if desired.
  • In a large bowl, combine pasta, ham, peas and cheese sauce. Pour into greased 9 X 13 casserole dish. Sprinkle top with remaining 1/2 cup cheese.
  • Bake for 25 to 20 minutes. Let stand 5 minutes before serving.
