WHIPPED RICOTTA SALAD

1 cup whole-milk ricotta cheese, chilled
2 teaspoons olive oil
1/8 teaspoon salt
1 cup packed fresh basil leaves
2 tablespoons pine nuts, toasted
2 tablespoons white balsamic vinegar
1/2 teaspoon salt
1/4 teaspoon red pepper flakes
3 tablespoons olive oil
1 cup heirloom cherry tomatoes, halved or quartered depending on size
18 snap peas, cleaned and cut in half (about 1/4 pound)
3 cups baby arugula

Steps:

  • For the whipped ricotta: Place the ricotta, olive oil and salt in a food processor. Blend until light and smooth, about 30 seconds. Remove to a bowl and set aside.
  • For the dressing: Place the basil, pine nuts, vinegar, salt and pepper flakes in a food processor. With the motor running, drizzle in the olive oil to form a smooth dressing. Set aside.
  • For the salad: In a bowl, toss the tomatoes, snap peas and arugula with the dressing.
  • To assemble: Spread the whipped ricotta on the bottom of a platter. Place the dressed salad on top of the ricotta, leaving some of the cheese exposed around the edges. Serve.

1 cup cauliflower florets
1 cup chopped carrots
1 cup chopped celery
1 cup chopped cucumber
1/2 cup sliced stuffed green olives
2 tablespoons chopped fresh parsley leaves
1/2 cup cranberry sauce, chunky or jellied
2 tablespoons olive oil
1 tablespoon red wine vinegar
1 teaspoon Dijon mustard
Salt and ground black pepper

Steps:

  • In a large bowl, combine broccoli, cauliflower, carrots, celery, cucumber, olives, and basil. Toss to combine.
  • In a small bowl, whisk together cranberry sauce, olive oil, vinegar, and mustard. Season, to taste, with salt and black pepper. Pour mixture over vegetables and toss to combine.

1/2 lb ricotta salata
2 tablespoons chopped fresh basil
2 tablespoons chopped fresh chives
1 tablespoon chopped of fresh mint
1 teaspoon chopped fresh oregano
1 teaspoon chopped fresh thyme
5 large ripe tomatoes, cut into 1/4-inch slices
1/2 lb cherry tomatoes, halved (various colors)
coarse salt
fresh ground black pepper
4 tablespoons extra virgin olive oil
3 tablespoons balsamic vinegar
fresh oregano or fresh thyme sprig, for a garnish

Steps:

  • Crumble the cheese into a bowl. Add the basil, chives, mint, oregano and thyme. Mix until the herbs coat the crumbled cheese.
  • Arrange the large tomatoes on a serving platter, overlapping the slices slightly. Scatter the cherry tomatoes on top. Season with salt.
  • Whisk together the olive oil and vinegar. Season to taste with salt and pepper. Drizzle the vinaigrette over the tomatoes and let sit for 10 minutes.
  • To serve, scatter the cheese over the tomatoes and garnish with basil, mint, oregano and thyme sprigs.

The only knife needed here is to prepare this salad. It all chopped small enough so no need to set a knife to use while eating. Ricotta Salata is one of Italy's most unusual and least understood sheep's milk cheeses. This snow-white variation of Ricotta originated in Sicily. Spongy and smooth, Ricotta Salata is a rindless cheese made from lightly salted sheep's milk curd and whey that is pressed and dried even before the cheese is aged for at least three months, giving this pure white cheese a dense but slightly spongy texture and slightly salty, not overly salty or "sheepy." Instead, it boasts a mellow blend of nutty, milky and sweet flavors, with consistency being versatility in cooking. This is not ricotta as Americans have come to know ricotta. In Italian, ricotta simply means ""recooked."" It is a cheese-making process rather than a specific cheese. This ricotta is also a salata, or ""salted,"" cheese. If using feta in place of ricatto salata be sure to soak and rinse in cold water before diced. 2 tomatoes, 5 ounces each
1 medium red onion, quartered
1/2 green sweet pepper, deseeded and sliced thinly
1/4 cucumber, thinly sliced (small piece)
6 -8 black olives
4 ounces Greek feta cheese, quartered and sliced
1/4 teaspoon dried oregano
3 tablespoons olive oil
salt & fresh ground pepper

Steps:

  • Slice tomatoes in half then each half into thick wedges.
  • Slice each onion quarter thinly.
  • Place the first 5 ingredients into a bowl, along with 2 tablespoons plus 2 teaspoons of the olive oil.
  • Season with salt and pepper and gently toss to mix everything and coating with the oil.
  • Place the slices of feta on top of the salad, drizzle the reserved 1 teaspoon olive oil over the cheese and sprinkle the oregano over all.

3 cups julienne-sliced romaine lettuce
1 tablespoon julienne-sliced fresh basil
2 tablespoons italian provolone cheese, cut in 1/4-inch cubes
1 tablespoon garbanzo beans
2 tablespoons genoa salami or 2 tablespoons wine salami
3 tablespoons powdered parmesan cheese
1/4 cup julienne-sliced smoked turkey breast
chopped tomato (to garnish)
freshly cracked pepper
2 pasteurized egg yolks
3/4 cup balsamic vinegar
3 finely minced garlic cloves
3/4 teaspoon kosher salt
1/4 teaspoon black pepper
2 cups olive oil

Steps:

  • Make dressing in a mixing bowl. Whisk egg yolks for 2-3 minutes, then add vinegar, garlic, salt and pepper. Whisk 2-3 minutes. Slowly add oil to emulsify. Refrigerate until needed.
  • Combine greens, basil, provolone, garbanzos, salami in a bowl; add ½ cup dressing. Toss to combine. Add parmesan, turkey, and toss.
  • Place salad on plate; top with tomato. Serve with pepper mill. The restaurant offers this as 1 large serving but with crusty bread and a cold drink it is a very nice dinner for 2. Also great side for 4-6 servings.

Made this for dinner twice so far, and the second time it tasted even better. Cheesey and smokey works so well together in a rich tomato sauce:D Regina Schrambling says "starch is comfort" and "cheese is seduction" and when they're combined the result is pure pleasure. BF and I have to agree wholeheartedly. I can usually only find crushed tomatoes in puree, and that worked out very well so I added that as an option. I am vegetarian so I substituted vegetarian bacon for pancetta. Another recipe of the week from The Week magazine, originally from LA Times.

2 ounces pancetta (optional, or bacon or veggie bacon)
1 tablespoon olive oil, best quality
1 small red onion, peeled, quartered and thinly sliced
1/2 teaspoon hot red pepper flakes (to taste)
1 (14 ounce) can Italian tomatoes (whole in puree) or 1 (14 ounce) can Italian tomatoes (crushed in puree)
kosher salt or sea salt
1/2 lb pasta (buccatini or perciatelli)
2 teaspoons unsalted butter
1/2 cup ricotta salata, finely crumbled

Steps:

  • If using, cut pancetta into i/4 inch dice. Heat oil in a deep skillet over medium-low heat. Add pancetta and cook, stirring, until it crisps and renders its fat, about 10 minutes. Remove pancetta and set aside. Break into small pieces when cooled. Remove all but about 1 tablespoon of fat from the pan and discard.
  • Add oil and onion and cook, stirring often, until tender and translucent, about 10 minutes.
  • Add red pepper flakes then add tomatoes and crush against the pan if using whole. Cook, stir and crush tomatoes into small bits, for 5 minutes.
  • Simmer 40 minutes, stirring occasionally.
  • While sauce cooks, bring large pot of water to a rolling boil with salt (about 1 Tbsp for every 2 quarts - it should be salty). Fifteen minutes before sauce is done, add pasta to water. Stir and then cook until al dente, 11-12 minutes or according to package directions.
  • Reserving 1/2 cup of cooking water, drain pasta in colander. Add butter and toss quickly, then transfer to pan with sauce. Stir until strands are thinly but evenly coated. Add a little cooking liquid if pasta seems dry. Add half Ricotta Salata and stir to combine well.
  • Transfer pasta to large bowl or platter and sprinkle with pancetta and remaining cheese. Serve hot.
  • For Vegetarian omit the pancetta or use vegetarian bacon.
