Say hello to our favorite brownies recipe from scratch. You only need one bowl, a saucepan, and a spoon. Melting the butter into the sugar and cocoa powder ensures that shiny, crinkly top that we all love. These brownies are bittersweet. If you are like us and find yourself reaching for darker chocolate over milk chocolate, these are certainly for you. Use natural or Dutch-process cocoa powder (cacao powder works, too). For brownies that are less bittersweet and that have chewy edges, try this chewy brownie recipe instead.

Number Of Ingredients 8

10 tablespoons (145 grams) unsalted butter
1 ¼ cups (250 grams) granulated sugar
3/4 cup plus 2 tablespoons (80 grams) unsweetened cocoa powder, natural or Dutch-process
1/4 rounded teaspoon kosher salt, use slightly less if using fine sea or table salt
1 teaspoon vanilla extract
2 large cold eggs
1/2 cup (65 grams) all-purpose flour
2/3 cup (75 grams) chopped walnuts or pecans, optional

Steps:

  • Position an oven rack in the middle of the oven and heat to 325 degrees F. Line the bottom and sides of an 8-inch x 8-inch square baking pan with parchment paper or aluminum foil, leaving an overhang on opposite sides to help remove the baked brownies from the pan.
  • Prepare a double-boiler by filling a medium saucepan with water about 2 inches deep. Heat the water until barely simmering. See the notes section below for tips on making these without a double-boiler and instead using a microwave or making them directly in a saucepan.
  • Combine the butter, sugar, cocoa powder, and salt in a medium heat-safe bowl. Rest the bowl over the simmering water. If the bottom of the bowl touches the water, remove a little water from the saucepan.
  • Stir the mixture occasionally until the butter has melted and the mixture is quite warm. Don't worry if it looks gritty; it will become smooth once you add the eggs and flour.
  • Remove the bowl from the saucepan, and set aside for 5 minutes or until it is only warm, not hot.
  • Stir in the vanilla.
  • Add the eggs, one at a time, stirring vigorously after each one.
  • When the batter looks thick and well blended, add the flour. Use a spoon to beat the flour into the batter until it is very thick and pulls away from the sides of the bowl. We use a wooden spoon or spatula and beat for 40 to 50 strokes (see video for reference).
  • Stir in nuts if using.
  • Spread the batter evenly in the prepared pan.
  • Bake the brownies until the edges look dry and the middle looks slightly underbaked; 20 to 30 minutes. You can test doneness by inserting a toothpick into the center. The brownies are finished baking if it comes out with a few moist crumbs attached.
  • Cool completely before removing from the pan - this step is essential and helps the brownies set. Cut into 16 squares.

Steps:

  • In a medium saucepan, melt butter or margarine on low heat.

  • Stir in chips and nuts if desired.
  • Bake at 350 for approx 25-30 minutes, depending on your oven.

1/4 cup (1/2 stick) unsalted butter, cut up
1 ounce unsweetened chocolate, chopped
1 cup minus 2 tablespoons sifted cake flour
1/2 cup unsifted unsweetened Dutch-processed cocoa
1/4 teaspoon baking powder
1/4 teaspoon salt
1/8 teaspoon ground cinnamon
Generous pinch of ground nutmeg
1 1/4 cups granulated sugar
1 large egg plus 2 large egg whites
1 tablespoon vanilla extract
3 tablespoons water

Steps:

  • Position a rack in the center of the oven and preheat the oven to 350 degrees. Lightly coat a baking pan with cooking spray.
  • In a small saucepan, combine the butter and chopped chocolate and set over very low heat until melted. Stir the mixture and set aside to cool. In a medium-sized mixing bowl, whisk together the flour, cocoa, baking powder, salt, cinnamon, and nutmeg. Measure the sugar into the large bowl of an electric mixer and beat in the cooled butter-chocolate mixture. Add the egg plus whites, vanilla, and water and beat well. Add the dry ingredients and mix on low speed just until blended. Don't overbeat. The batter will be thick. Spoon the batter into the prepared pan, smooth the top, and bake for 22 to 25 minutes; 23 minutes is usually right for me. When done, the top will look dry and a wooden pick inserted near the edge will come out with a few crumbs but the center will look slightly gooey. Cool in the pan and cut into squares.
  • I have been trying for a couple of years to produce a brownie worthy of the name with less fat and less solid chocolate. My taste testers finally agree that this is it - a great brownie they would never suspect of being lower in anything. I have cut the classic 58 percent down to 31 percent calories from fat and eliminated 87 calories, 10 g fat, and 22 mg cholesterol from each brownie.
  • When traditional proportions are disrupted, textures become moist and cakey at best or dry, insipid, and tough at worst. One rule emerges clearly: The fewer ingredients, the better the brownie. Avoid the usual low-fat stand-ins: applesauce, yogurt, corn syrup, canola oil. Use butter, but less, and replace most of the solid chocolate with rich-tasting Dutch-processed cocoa; retain at least 1 ounce of solid chocolate, however, for a more complex chocolate taste. A few tricks: Cake flour produced a more tender crumb than all-purpose, and melting the butter with the chocolate, as opposed to creaming the solid butter with the sugar, gave a fudgier crumb. A touch of baking powder seems to enhance the crunch of the top crust.
  • Faced with the choice of adding high-fat chopped nuts or keeping the 1/4 cup butter, there was no contest; nuts put us over the top in fat content. However, if you feel deprived without them, sprinkle about 3 tablespoons of finely chopped walnuts on top before baking; the changes are modest: 33 percent calories from fat, plus 9 calories and 1g fat per brownie.

Steps:

  • Preheat oven to 350°F. Grease an 8x8 square pan or line with foil and set aside.
  • In a medium bowl combine melted butter and cocoa and sugar stir until fully dissolved.
  • Add eggs one at a time then vanilla and stir until well combined.
  • Stir in flour and salt until the flour is fully combine. Be careful not to overmix mix.
  • (optional) fold in 1 cup of nuts, raisins, chocolate chips or anything you desire.
  • Spread in pan and bake for approximately 20-22 minutes or until the center is slightly set. Be careful not to over-bake!
  • Cool completely then cut into 9 large squares or 16 small squares ( I cut mine into 16)

Steps:

  • Preheat the oven to 350°F (180°C). Line an 8-inch (20 cm) square baking dish with parchment paper.
  • Chop the chocolate into chunks. Melt half of the chocolate in the microwave in 20-second intervals, saving the other half for later.
  • In a large bowl, mix the butter and sugar with an electric hand mixer, then beat in the eggs and vanilla for 1-2 minutes, until the mixture becomes fluffy and light in color.

100 gm unsweetened chocolate chunks
1/2 tsp instant coffee powder (optional but recommended)
3 large eggs (room temperature)
1/2 cup granulated sugar
1/2 cup brown sugar
1 tbsp vanilla extract
1 cup all purpose flour
1/2 cup cocoa powder
1/2 tsp salt
3/4 cup chocolate chips (coated with a tbsp of flour)

Steps:

  • Preheat oven to 180 degrees. Line a 9x13 inch pan with foil or parchment paper. Butter it generously. Set aside.
  • Melt the butter and chocolate till smooth. Whisk in the coffee powder if using. Set aside to cool slightly.
  • Beat the eggs, sugar and vanilla extract till thick and doubled in volume.
  • Add the melted butter-chocolate and beat till combined.
  • Sift in the flour, cocoa powder and salt and fold in. Fold in the chocolate chips.
  • Pour into the prepared pan and bake for 30 minutes.
  • Pull out of the oven and cool in pan completely. Best is to cool it overnight.

Steps:

  • First, whisk your flour, sugar, cocoa powder and salt together in a big mixing bowl.
  • Next, slowly add your milk and eggs in, don't over mix, you know it's ready when it is all combined.
  • Then, mix your butter, melted chocolate and vanilla extract in a separate bowl. Then add it to your other mixture.
  • Measure out some wax paper on your baking tray and bake at 200 degrees F. Bake for about 50 to 55 minutes.
  • Carefully take your brownies out of the oven and set them aside to cool. Now make your chocolate sauce.
  • In a mixing bowl, add your sour cream and melted chocolate. Make sure your melted chocolate is at room temperature other wise when you add it to your sour cream, it will split.
  • Once combined, add your chocolate chips and whisk them in.

Steps:

  • Heat oven to 350 degrees. Butter a 13-by-9-inch glass baking pan. If using walnuts, spread on a baking sheet and toast in oven until fragrant and lightly browned, 8 to 10 minutes. Let cool.
  • Melt butter in a small saucepan over low heat. Remove from heat, add chocolate, and cover pan until chocolate is melted, about 10 minutes. In a mixing bowl, whisk the eggs, salt, sugar and vanilla just until thick, creamy and beginning to lighten in color.

  • Preheat oven to 350 degrees (F) (175 degreed C). Line an 9x9-inch baking pan with parchment paper. Spray lightly with non-stick baking spray and set aside.
  • In a large bowl, sift together the flour, baking powder, salt, cocoa powder, and espresso powder. Set aside until needed.
