GARLIC MAYONNAISE

Garlic Mayonnaise image

This classic dip goes great with tones of stuff and is so much better then shop bought mayonnaise. It is not that difficult to make as long as you keep whisking like there is no tomorrow and you should achieve the perfect consistency.

Provided by teenagechef

Time 10m

Yield Serves 4

Number Of Ingredients 6

2 Large egg yolks
1 tsp white wine vinegar
1 tsp dijon mustard
1/2 tsp sea salt + pepper
1 clove garlic, minced
300ml light olive oil

Steps:

  • Start by separating the yolks from the whites and placing the yolks in a large bowl. Be sure not to get any white in with the yolks.
  • Add the white wine vinegar, the dijon mustard, seasoning and the minced garlic. To mince the garlic use a garlic press or by using a grater. After adding the garlic whisk the mixture until it has become smooth.
  • At this point you may consider getting somebody pour the oil into the bowl whilst you are whisking as you do not want your emulsion to split. Start trickling the oil into the egg yolks very slowly and constantly whisking. Don't stop whisking whilst you are pouring the oil into the bowl.
  • After you have poured all of the oil into the mixture you should be left with your homemade mayonnaise. You may need to add more salt or pepper depending on what flavour you are looking for. Your mixture should be smooth and look rather similar to normal mayonnaise.
  • Finally add in 1 tbsp of water to the mixture and transfer the mayonnaise to an empty jam jar which has been thoroughly washed and dried. The mayonnaise should keep for up to 4 days in your refrigerator.

SHORTCUT AIOLI (GARLIC MAYO) RECIPE

Shortcut Aioli (Garlic Mayo) Recipe image

Garlic mayonnaise, or aioli, is one of America's most popular cold sauces. This simple aioli recipe has unlimited uses.

Provided by John Mitzewich

Categories     Sauces     Condiment     Ingredient

Time 15m

Yield 8

Number Of Ingredients 4

3 cloves garlic
Salt
1 cup mayonnaise
2 1/2 teaspoons freshly squeezed lemon juice

Steps:

  • Gather the ingredients.
  • Crush the garlic cloves with the flat of a knife, and remove the skin. Then mince the garlic very finely.
  • Add a pinch of salt, and using the flat of the knife again, scrape and press the garlic against the cutting surface to make a paste that is as smooth as possible. It's making this paste from the fresh garlic that gives aioli its intense garlic flavor. Note that making a smooth paste is key to the success of this sauce. If you don't spend a few minutes on this step, you will be left with small bits of raw and harsh-tasting garlic, which will not do justice to the magic of aioli.
  • Add the garlic to a small bowl, and whisk together with mayonnaise, lemon juice, and 1/4 teaspoon salt. Wrap and refrigerate for 30 minutes to allow the flavors to develop.

FAIL-PROOF HOMEMADE MAYONNAISE

Fail-Proof Homemade Mayonnaise image

Homemade mayonnaise is such a treat. It's very simple to make, too. Room temperature ingredients are best when making mayonnaise at home. If you're not able to wait for the egg to come to room temperature, submerge it in lukewarm (not hot) water for a couple of minutes. There are a few ways to make mayonnaise. We use our food processor with the small bowl attachment, but an immersion blender or making it completely by hand and large whisk will work. (Expect tired arms and strong biceps if you do choose to do it by hand). All ingredients need to be at the same temperature. If you have cold eggs and no time to leave them out on the counter to come to room temperature, place the egg into a bowl of warm water. Set it aside for a few minutes before using in the recipe.

Provided by Adam and Joanne Gallagher

Categories     Sauce

Time 10m

Yield Makes approximately 1 cup

Number Of Ingredients 6

1 large egg at room temperature
1 tablespoon Dijon mustard
1 tablespoon red or white wine vinegar
1/4 teaspoon kosher salt, or more to taste
1 cup (240 ml) neutral flavored oil, grapeseed, safflower or canola are best
1 teaspoon fresh lemon juice, optional

Steps:

  • If you have a large food processor, use the smaller bowl attachment that came with your processor so that the bowl is not too large for the amount of mayonnaise this recipe makes. Not using the smaller bowl can prevent the mayonnaise from emulsifying since the mixture will not have enough contact with the blade.
  • If you do not the smaller bowl attachment, making the mayonnaise with an immersion blender or by hand are alternatives. Or simply make a larger batch and double the recipe and use the standard bowl attachment. You might find success with a high-speed blender, but based on reviews and comments from readers, using a blender seems to be less fail-proof.
  • Add egg to the small bowl of a food processor and process for 20 seconds. Add the mustard, vinegar, and salt. Process for another 20 seconds.
  • Scrape the sides and bottom of the bowl, turn the food processor on then begin to slowly add the oil in tiny drops until about a quarter of the oil has been added (this is critical for proper emulsification).
  • When you notice that the mixture is beginning to thicken and emulsify, you can be a little less strict. With the processor on, continue to add it slowly, but increase to a very thin stream instead of drops of oil.
  • When all of the oil has been added, scrape the bottom and sides of the bowl and process for an extra 10 seconds. Taste mayonnaise for seasoning then add salt, lemon juice or extra vinegar to taste.
  • Note, if the mayo seems too thin, slowly stream in more oil with the processor running until thick.

GARLIC COLESLAW

Garlic Coleslaw image

Make and share this Garlic Coleslaw recipe from Food.com.

Provided by Julesong

Categories     Lunch/Snacks

Time 30m

Yield 4 serving(s)

Number Of Ingredients 13

2 -3 garlic cloves, minced, to taste (see note below)
1/2 cup mayonnaise
1 tablespoon cider vinegar (see note #2 below)
1 tablespoon lemon juice
1 tablespoon orange juice
1 teaspoon fresh lemon rind (optional)
1 teaspoon fresh orange rind (optional)
1 small cabbage, shredded
2 -3 carrots, grated
2 green onions, chopped (scallions)
1/4 teaspoon salt, to taste
1/8 teaspoon fresh ground black pepper, to taste
sugar, to taste (optional, added only if you like your slaw sweet, see note #3 below) (optional)

Steps:

  • In a bowl combine the garlic, mayo, vinegar, lemon and orange juice, and lemon/orange rinds (if using, which you should if you can because it's tasty!). Whisk them together to make the dressing. Set aside.
  • In a large bowl, combine the cabbage, carrot, and green onions, and toss well.
  • Pour the dressing over the coleslaw mix, season to taste with salt and freshly ground black pepper, and stir it all together well.
  • Chill for at least an hour before serving (preferably two). Makes about 4 servings.
  • Note: you can use roasted or baked garlic in this instead of fresh, too. You will just have to use more of it because it is milder, and add it to the dressing to taste. Chopped roasted red pepper is also a good addition.
  • Note #2: a good substitute for cider vinegar, if you like a lighter taste, is champagne vinegar. If you've not had champagne vinegar before, give it a try - it's wonderful!
  • Note: #3: as the recipe description notes, this slaw is not sweet if you do not add the optional sugar. However, if prefer your coleslaw a bit sweet, add the sugar to taste.
