1 pound large or jumbo shrimp (peeled, deveined, and tails removed (fresh or frozen and thawed))
1 tablespoon extra-virgin olive oil (divided)
1 teaspoon chili powder
1 teaspoon ground chipotle chili
1 teaspoon ground cumin
1/2 teaspoon kosher salt
6 to 8 corn or flour tortillas
Garnishes: avocados (cilantro, sour cream (or Greek yogurt), lime wedges)
1 cup nonfat plain Greek yogurt
2 tablespoons extra-virgin olive oil
1 clove garlic (peeled)
1/2 small jalapeno (seeds and membranes removed)
1/4 cup tightly packed fresh cilantro leaves
1/4 teaspoon kosher salt
Zest and juice of 1 large or 2 very small limes (about 2 teaspoons zest and 3 tablespoons juice)
2 cups shredded cabbage ( or slaw mix)

Steps:

  • Rinse and pat the shrimp dry, then transfer to a large mixing bowl. Drizzle with 1/2 tablespoon olive oil and sprinkle with the chili powder, chipotle chili, cumin, and salt. Toss to coat evenly. Let rest while you prepare the shrimp taco sauce and slaw.
  • Prepare the sauce and slaw: In a food processor fitted with a steel blade, process the Greek yogurt, olive oil, garlic, jalapeno, cilantro, salt, lime zest, and lime juice. Taste and adjust seasonings as desired. Place the cabbage in a mixing bowl and toss with about 1/2 cup of the sauce. Add more sauce if you desire a creamier slaw, then reserve the rest of the sauce for serving.
  • Cook the shrimp: In a large nonstick skillet over medium high, heat the remaining 1/2 tablespoon olive oil. Add the shrimp and sauté just until the shrimp is cooked through and no longer translucent in the center, about 4 minutes. Do not overcook! Transfer the shrimp immediately to a plate.
  • Warm the tortillas (optional) and assemble the tacos: If you like, warm the tortillas in the microwave (put them in a stack and cover them with a lightly damp towel) or a 250 degree F oven while the shrimp cook. To serve, fill the tortillas with your desired number of shrimp, then top generously with the slaw, extra sauce, a squeeze of lime juice, and any other desired toppings. Enjoy immediately.

1/4 cup water
1/2 cup chopped green onions
1/2 cup cilantro leaves
2 cloves garlic
1/2 teaspoon salt
juice of 2 limes
1/2 cup sour cream or full-fat Greek yogurt
2 teaspoons each chili powder and cumin
1/2 teaspoon each onion powder and garlic powder
1/4 teaspoon cayenne pepper (more or less to taste)
1 teaspoon coarse sea salt
1 lb. shrimp, peeled and deveined, tails removed
2-3 cups shredded green cabbage
8 small tortillas (corn or flour)
avocados, Cotija cheese, and lime wedges for serving

Steps:

  • Pulse all the sauce ingredients in a food processor or blender until mostly smooth.
  • Toss some of the sauce (not all) with the cabbage. We'll use the leftover sauce to top the tacos.
  • Pat the shrimp dry with paper towels. Toss the shrimp in a small bowl with the spice mix to get it coated. Heat a drizzle of oil a large skillet over medium high heat. Add the shrimp to the hot pan and sauté for 5-8 minutes, flipping occasionally, until the shrimp are cooked through.
  • For the prettiest and easiest-to-eat assembly, go in this order: smashed avocado, slaw, and shrimp. Finish with Cotjia cheese, lime wedges, and extra sauce.

These garlic shrimp tacos are a mashup of flavors that work really well together. Buttery, garlicky shrimp served on a bed of tangy vinegar slaw topped with a sharp arból chile salsa with a touch of Mexican oregano.

3 plum tomatoes
2 cloves garlic
3 to 4 árbol chiles
1/2 tsp Mexican oregano
1 tsp apple cider vinegar
4 tbsp water
1 tsp salt
2 tbsp oil
3 cups finely shredded cabbage
2 tbsp apple cider vinegar
1 tsp salt
1 1/4 lb. of medium-sized shrimp
6 cloves garlic
3 tbsp butter
1 tsp salt
12 corn tortillas

Steps:

  • Quarter the tomatoes.
  • Peel the garlic cloves.
  • Heat a large dry frying pan to medium-hot. Add the quartered tomatoes, garlic, and árbol chiles to toast.
  • Toast the chiles for 30 seconds on each side and then remove from the pan.
  • Toast the garlic for 2 more minutes then remove from the pan.
  • Continue to toast the tomatoes until they blacken.
  • Add all of the ingredients except the oil to your blender and blend for 1 minute.
  • In the same frying pan that you toasted the tomatoes, garlic and chiles heat the 2 tablespoons of oil to high heat.
  • Pour the blended salsa into the hot oil.
  • Reduce the heat to a simmer, then cook the salsa for 10 minutes.
  • Pour 2 tablespoons of apple cider vinegar into the bowl with the cabbage.
  • Add 1 teaspoon of salt.
  • Mix thoroughly so that all of the cabbage is coated with vinegar and salt.
  • Set aside until you are ready to serve your tacos. Stir just before serving.
  • If your shrimp come with the shells, remove the shells and discard.
  • Devein the shrimp by making an incision lengthwise along the back of the shrimp and gently remove the black vein with the tip of a knife.
  • Finely chop the garlic.
  • Preheat a large frying pan to medium-hot. Add the chopped garlic and cook for 1 minute stirring 3 times so that the garlic doesn't burn.
  • Add the shrimp to the pan and stir to coat the shrimp with butter.
  • Cook the shrimp for about 6 minutes until just cooked through. Stir and turn the shrimp every minute. To check for doneness, cut a couple of shrimp in half. If the shrimp is a pinkish white throughout it is fully cooked. If there are still translucent spots the shrimp needs to be cooked more. Cook for 1 more minute and then check for doneness again.
  • Warm the tortillas on a comal or griddle.
  • On each corn tortilla, layer a bed of cabbage slaw, 3 shrimps and then a dollop of salsa on each shrimp.
  • Serve 3 tacos per person.

1 pound (454 grams) small wild shrimp (see note below)
1 tablespoon (15 ml) olive oil
1 large garlic clove, minced
1/4 teaspoon sweet smoked paprika
1/4 teaspoon fine sea salt
1/8 teaspoon freshly ground black pepper
1 tablespoon (15 ml) safflower oil for sautéeing
1/4 small green cabbage
1/4 teaspoon fine sea salt
Juice of 1/2 lime
1 small garlic clove
1/2 teaspoon fine sea salt
1/2 cup (112 grams) mayonnaise
Juice of 1/2 lime
1/4 cup chopped cilantro
1/8 teaspoon freshly ground black pepper
2 plum tomatoes, cored, seeded, and finely chopped
1/4 cup minced red onion
1/4 teaspoon fine sea salt
1 teaspoon olive oil
8 taco-sized soft flour tortillas

Steps:

  • First, marinate the shrimp. Place peeled, cleaned, defrosted shrimp in a medium bowl and toss together with olive oil, garlic, smoked paprika, salt, and pepper. Let sit while you prepare the other elements of the tacos.
  • Start the cabbage next so it has a chance to marry with the salt and lime juice before serving. Cut a small green cabbage in half from the top through the core, then cut one of the halves in half again. Remove the core from one quarter and very thinly slice the cabbage. Place in a bowl and sprinkle with salt and lime juice. Toss with your hands, rubbing a bit to help the salt and lime juice tenderize the cabbage.
  • To make the cilantro sauce, mince the garlic and then use the side of a chef's knife to smash the salt and garlic together into a paste. In a small bowl stir together the mayonnaise, lime juice, garlic-salt paste, and pepper. When well combined, gently stir in the chopped cilantro.
  • To make the pico de gallo, stir together the tomatoes, red onion, salt, and olive oil in a small bowl.
  • Heat the tablespoon of safflower oil in a 12-inch nonstick skillet over medium-high heat. Add the shrimp in a single layer and cook until opaque, about one minute per side.
  • Bring ingredients to the table and let everyone assemble their own tacos, or plate by filling each tortilla with some shrimp, cabbage, pico de gallo and a drizzle of cilantro sauce.

1/4 cup minced fresh cilantro
3 tablespoons lemon juice

1 teaspoon paprika
1 teaspoon garlic powder

24 skewers, bamboo or metal
4 tablespoons olive oil
24 corn tortillas
1 cup sour cream
3 tablespoons fresh cilantro, minced
1 teaspoon lime zest

2 tablespoons lime juice
1 ½ cups green cabbage
1 ½ cups red cabbage
1 tablespoon jalapeño, minced
lime wedge

Steps:

  • In a large bowl, season shrimp with paprika, garlic powder, oregano, cumin, red pepper flakes, and salt. Toss gently to combine.
  • Using 2 bamboo or metal skewers, poke through the top and bottom of the shrimp and push down to the bottom of the skewer.
  • Add 3 more shrimp to the same skewer and repeat until all of the shrimp are used.
  • Right before you put the shrimp on the grill, brush each skewer with a generous amount of olive oil, to prevent sticking.
  • Grill over high heat for 3 minutes, brush the top side with more olive oil, flip, and let cook for an additional 3 minutes.
  • Remove from skewers & set aside for taco assembly.
  • In a bowl, combine all creamy cilantro sauce ingredients. Stir well to combine.
  • In a large bowl, combine green cabbage, red cabbage, and minced jalapeño. Pour half of the sour cream mixture over the cabbage, saving the other half for extra sauce to put on the tacos.
  • Assemble the tacos on corn tortillas. Add the cabbage mixture, followed by the shrimp. Top with the creamy cilantro sauce, cilantro, and a squeeze of lime juice.
  • Enjoy!
