GARLIC MUSHROOM PASTA
My mom used to make this for me as a kid. It is easy to whip up and can be modified. Change the veggies, add some bacon, use less garlic, whatever. Sometimes I've used one egg and stirred in some margarine (or butter or olive oil) but I like it best like this. This is sized as smaller servings, almost as a side dish size.

- Bring a large pot of water to a boil and season with salt until it tastes of lightly salted broth. Once boiling, add the pasta and cook according to the package instructions until al dente.
- While the pasta is cooking, in a large sauté pan, heat the oil over medium heat. Add the garlic, shallot and pepperoncini and sauté until fragrant, about 1 minute. Add the maitake and oyster mushrooms and cook until softened, another 3 to 4 minutes. Deglaze the pan with the white wine.

- Add the uncooked fettuccine, the vegetable broth, and the almond milk. Stir a couple of times and gently push the fettuccine in the liquid when they're soft enough (this might take a couple of minutes. Try not to break them when they're still too hard).
- After 12 minutes of cooking, add the peas and cook the one pot pasta for another 8 minutes. Then stir in the spinach. If you're using tapioca starch, combine the starch with 1 tablespoon of water and whisk until well combined. Add to the pasta and season with salt, pepper, and if using red pepper flakes. Enjoy!

- Heat 1 tablespoon of olive oil and 1 tablespoon of butter in a large skillet on medium-high heat. Add sliced mushrooms and minced garlic. Sprinkle with about 1/8 teaspoon of salt. Cook for about 2 minutes, constantly stirring, until mushrooms are soft. Taste and add more salt, if needed. Remove from heat.
- Cook pasta according to the package instructions. Rinse and drain. Note about gluten free pasta: If using gluten free pasta, rinse it in cold water and drain to prevent it from getting mushy.
- Add pasta to the mushrooms along with 4 tablespoons of butter. Add the remaining 1/4 teaspoon of salt. Gently reheat until butter melts and pasta is very warm. Add grated Parmesan cheese, continue to reheat pasta, stirring until cheese melts.
- Definitely add more salt than what I indicate here (I am being conservative) to suite your taste – adding just enough salt (not too much but not too little either) allows all the flavors to blend together: mushrooms, Parmesan cheese, garlic, and butter.

- Start by preparing the garlic pepper buttered mushrooms. To a pan, add some butter and let that melt over medium flame. Add the chopped garlic and mushrooms and spread evenly all across the pan at a distance – this ensured that the mushrooms cook evenly and are giving them space to cook helps them browning up faster.
- Once the mushrooms have browned up, add some pepper. Give it a mix and transfer the garlic butter pepper mushrooms to a bowl to be added later to the pasta.
- Prepare the béchamel sauce or white sauce by adding some butter to the same pan that you used for mushrooms. Once the butter has melted, add the flour and whisk for a few seconds until the roux (flour and butter paste) has turned light brown in colour.
- Just when it begins to get darker in colour, add the 1/2 cup or milk and whisk until the sauce has thickened. Add another 1/2 and whisk again until the sauce has thickened. Finally add the last 1/2 cup (total of 1 1/2 cup of milk) and oregano and mix until a rich, velvety, glossy and creamy white sauce is prepared. The sauce should be thick enough to stick at the back of the wooden spoon.
