- Spread 3 tablespoons butter on 1 side of each slice of bread. Place bread, butter side down, in a large cast-iron skillet or electric griddle over medium-low heat until golden brown, 2-3 minutes; remove. In a small bowl, combine cheddar, Monterey Jack and Gruyere. In another bowl, mix together remaining 3 tablespoons butter, mayonnaise, Manchego cheese and onion powder., To assemble sandwiches, top toasted side of 4 bread slices with pepperoni; add sliced Brie. Sprinkle cheddar cheese mixture evenly over Brie. Top with remaining bread slices, toasted side facing inward. Spread the butter-mayonnaise mixture on the outsides of each sandwich. Place in same skillet and cook until golden brown and cheese is melted, 5-6 minutes on each side. Serve immediately.

- Set a large skillet over medium-high heat with 1 tablespoon olive oil. Once hot, add the sausage remove from the casing. Being breaking it down with a wooden spoon and cook until browned.
- Transfer to a plate using a slotted spoon. Return the skillet to the heat and add the remaining oil and the cherry tomatoes. Season with 1/4 teaspoon each salt, pepper, and Italian seasoning. Cook until the tomatoes have softened and are starting to burst, about 10 minutes.
- In a medium bowl, stir to combine the ricotta, basil, lemon, Parmesan and the remaining salt, pepper and Italian seasoning. In another medium bowl, stir butter and garlic until well combined.
- To assemble the sandwiches, lay out 4 bread slices in a single layer. Brush the bread with 3 tablespoons of the softened garlic butter, then turn the bread over. Top with 1/4 cup mozzarella, then spread over the ricotta. Top with the Italian sausage, tomatoes and another 1/4 cup mozzarella. Top each with a slice of bread and brush with remaining butter.
- Heat a skillet or griddle over moderate heat. Working in batches, cook sandwiches until bread is golden and crisp and cheese has melted, about 3 minutes per side. Transfer to a cutting board and cook the remaining sandwiches. Cut each in half and serve with marinara on the side for dipping.
ZITI WITH GRILLED-GAZPACHO SAUCE AND SAUSAGE

- Stir 1 teaspoon each of salt and pepper into 6 tablespoons oil.
- Toss tomatoes with 1 tablespoon seasoned oil, then thouread onto skewers.
- Trim off bottoms and tops of bell peppers, then halve peppers lengthwise.
- Quarter onions lengthwise, leaving root ends intact. Brush onions, peppers, and zucchini generously with some seasoned oil.
- Put garlic on a double layer of foil and drizzle with some seasoned oil, then wrap tightly in foil, twisting to seal.
- Put vegetables on a large tray.
- Brush sausages lightly with some seasoned oil and put on a plate.
- Prepare grill for direct-heat cooking over medium-hot charcoal (medium-high heat for gas). Grill vegetables, garlic, and sausages, in batches if necessary, covered only if using a gas grill, turning occasionally (frequently for garlic), until tomatoes are charred and slightly wilted, 3 to 5 minutesutes; bell peppers are blackened in spots, 8 to 10 minutesutes; onions and zucchini are tender, 8 to 12 minutesutes; garlic is softened and caramelized in spots, about 10 minutesutes; sausages are browned and cooked thourough, 12 to 15 minutesutes. Transfer as cooked to a platter (or platters) and keep warm, covered.
- Peel peppers. Coarsely chop 2 bell pepper halves and 2 zucchini halves and transfer to a blender. Add garlic, 4 pieces of onion, vinegar, sugar, 3/4 teaspoon salt, 1/2 teaspoon pepper, half of tomatoes, and remaining 1/4 cup oil and purée until as smooth as possible.
- Transfer remaining tomatoes to a large serving bowl and keep warm, covered. Chop remaining peppers, onion, and zucchini and add to tomatoes.
- Meanwhile, cook ziti in a pasta pot of boiling salted water (3 tablespoons salt for 6 quarts water) until al dente. Drain in a colander, then add to grilled vegetables and toss with sauce. Sprinkle with herbs and cheese, then serve with sausages.
GRILLED SALAMI AND CHEESE SANDWICHES
When my brother and I would go to visit my dad he would often make us these sandwiches for dinner. They are so simple, but the taste just brings me back to the days with daddy! You can really mix and match any meats and cheeses, but to me, there is no comparison to good ol' salami and american cheese!!

- Butter one side of each slice of bread and place (Buttered side down) in a skillet over medium heat.

- Grill sausage 5 to 8 min. or until done (160ºF), turning frequently. Cool slightly.

- Thinly spread one side of each bread slice with butter.
- Prepare the salami by taking 2-3 slices and rolling them up like a cigar, slice as you would cut bread and you get salami strings, use your fingers to break apart as you put on the sandwich (this will help you avoid the molten hot lave slice that will burn your chin on the first bite and put you in recovery for a week) or just chop it up ;-)
- Top with American cheese and place the top piece of bread.
- Using a pan over medium heat, squirt a little cooking oil and place sandwich in pan giving it a little circular motion to evenly spread the oil and butter.
- Cook until golden brown checking the underside with a spatula from time to time.
- Flip the sandwich and push down gently on the bread with spatula, cover and cook an addition minute or so.
- Slide it out, slice it up, enjoy.

- 1. Place two slices of salami of choice on outdoor grill or in skillet in kitchen. Fry about 1-2 minutes on each side on Medium heat... until meat is cooked and darkened to desired doneness. Set aside until needed for assembling sandwich.
- 2. Spread Cheese Whiz on inside of a slice of bread. Add a slice of fried salomi, then a slice of cheese, then a slice of salami, another slice of cheese. Top with another slice of bread.
- 3. Butter both sides of sandwich, sprinkle with garlic powder (do not use garlic salt).
- 4. Place on medium heat on outdoor grill.. or medium heat on stove top griddle. Cook until cheese melts and bread toasts light brown. Remove from heat.
- 5. Cut sandwich on an angle, serve with soup and a salad.
ROASTED GARLIC AND FETA CHICKEN SAUSAGE RECIPE
I've had the most success with chicken sausages, like this one for roasted garlic and feta chicken sausage. It's a nod to my Greek dominated neighborhood of Astoria, New York. Garlic and feta do most of the work in flavoring this chicken sausage.

- Preheat oven to 350°F. Cut top quarters off of heads of garlic. Place garlic cloves, cut side down, in center of a sheet of aluminum foil and drizzle with olive oil. Seal foil and place directly on oven rack. Cook until cloves are browned and very soft, about 20 minutes. Remove from the oven, let cool for 10 minutes, then squeeze cloves out of the skin into a small bowl.
- Combine garlic, chicken, 1/2 of the feta cheese, shallots, oregano, salt, and pepper in a large bowl. Chill until ready to grind.
- Grind the mixture through a meat grinder, fitted with small die, into a bowl set in ice.
- Using paddle attachment of a standing mixer, mix on low speed for 1 minute. Add remaining feta, vinegar, lemon juice, increase speed to medium, and mix until liquid is incorporated, about 1 minute more.
- Form a small sausage patty; place rest of sausage mixture in refrigerator. Cook patty in a small frying pan over medium-high heat until cooked through. Taste and adjust seasonings of sausage if necessary.
- Stuff sausage into hog casings and twist into 6-inch links. Refrigerate until ready to cook.
- Light one chimney full of charcoal. When all the charcoal is lit and covered with gray ash, pour out and spread the coals evenly over entire surface of coal grate. Alternatively, set all the burners of a gas grill to high heat.Set cooking grate in place, cover grill and allow to preheat for 5 minutes. Clean and oil the grilling grate. Grill over medium-high direct heat until sausage registers 160°F when an instant read thermometer is inserted in middle of link. Remove from grill, let rest for 5 minutes, and serve.

- Preheat grill to low-medium heat.
- In a small bowl, combine olive oil, garlic, red pepper flakes, basil and salt. Brush both sides of the bread with the olive oil and garlic mixture.

- Boil the pasta in salted water until al dente, about 8-10 minutes. About 1 minute before the pasta is done, take about 1/2 cup of the cooking liquid out of the pan before you drain the pasta. Reserve this liquid.
- Meanwhile, chop the garlic cloves with the coarse salt and smash it into a paste. (This takes away any strong burn of raw garlic.) Mix the garlic with the lemon juice, lemon zest, olive oil, tomatoes, pepper and oregano.
- Toss the hot pasta into the lemon-garlic sauce. As you toss the pasta through, add some of the cooking liquid little by little until it forms a sauce, you probably won't need all of the pasta water. Mix in the cheese. Taste for seasoning, add a bit more salt and pepper if you think it needs it.
- Slice the cooked sausage into bit size pieces and mix it into the pasta. Let the pasta sit covered for 5 minutes to let the flavors mingle.
- Serve warm or at room temperature.

- Prepare a grill for medium-high indirect heat: For gas grills (with 3 or more burners), turn all the burners to medium-high heat; after about 15 minutes turn off the middle burner for 3-burner grills or the 2 middle burners for grills with 4 or more burners and keep the other 2 burners at medium high. For charcoal grills, bank one chimney starter-full of lit and ashed-over charcoal briquettes to one side of the grill. Set up a drip pan on the other side to avoid flare-ups. (The grill should be around 400 degrees F. Be sure to consult the grill manufacturer's guide for the best results.)
- Slice the zucchinis down the middle, lengthwise like a hotdog, so that you have 4 long, equal pieces of zucchini. Use a teaspoon to remove the flesh of the zucchini, being sure to leave a 1/4-inch border and to not pierce the bottom of the zucchini. Finely chop 1/2 cup of the zucchini flesh and discard or save the remainder for another use. Place the chopped zucchini flesh into a clean kitchen towel and wring out as much liquid as possible. Place the zucchini flesh into a medium liquid measuring cup or bowl.
- Flip the zucchini boats over so that the peel side is facing up and brush all four pieces with olive oil. Season the peel side with 1/4 teaspoon salt and a few grinds of pepper, then flip over and season the flesh side with another 1/4 teaspoon salt and a few grinds of pepper.
- Add the Cheddar, Havarti, chives, cream, eggs, garlic, 1 teaspoon salt and a few grinds of pepper to the liquid measuring cup or bowl with the zucchini flesh. Whisk until well combined. Pour the mixture into the cavity of each zucchini boat.
- Using both hands to lift the zucchini carefully, place the filled boat in the middle of the grill over indirect heat (where the burner is turned off), cover, and cook until the eggs have puffed up slightly and are just set, 25 to 30 minutes. Use grilling tongs to remove the zucchini to a cutting board. Carefully wrap each zucchini boat in 1 of the bacon strips. Return to the grill over indirect heat and continue grilling, covered, until the eggs are completely set and the bacon is warmed and just crispy, 18 to 20 minutes.
