Steps:
- Preheat the oven to 450 degrees F.
- Heat the garlic and oil in a small saucepan over medium heat for 2 minutes. Strain the garlic from the oil with a small mesh strainer. Set both garlic and oil aside.
- Cut the potatoes into 1/4-inch sticks. In a large bowl, toss the oil, potatoes and 1/2 teaspoon of salt. Spray a baking sheet with cooking spray and spread the potatoes onto it in a single layer. Bake until golden and crisp, about 35 minutes.
- Remove potatoes from the tray with a metal spatula. Toss with parsley, reserved garlic, and additional salt, to taste. Serve immediately.

GARLIC FRIES - THE REAL DEAL
Living in California, I have tried every garlic fry out there and they all have too much garlic, too much/not enough salt or they are dry on the inside and lack the crispy crunch on the outside. Here is a better built Garlic Fry that leaves you satisfied without the all the fat and calories of the traditional version. Please note that fresh garlic should be used, as the jarred versions will overpower this recipe immensely.

- Preheat oven to 400°.
- Combine first 3 ingredients in a large zip-top plastic bag, tossing to coat. Arrange potatoes in a single layer on a baking sheet coated with cooking spray. Bake at 400° for 50 minutes or until potatoes are tender and golden brown, turning after 20 minutes.
- Place butter and garlic in a large nonstick skillet, and cook over low heat 2 minutes, stirring constantly. Add potatoes, parsley, and Parmesan cheese to pan; toss to coat. Serve immediately.

GARLIC FRIES

Steps:
- In a deep heavy pot or a deep fryer, add the oil and heat to 325 degrees F.
- Cut the potatoes lengthwise into 1/4-inch sticks. Put them in a bowl of cold water and let soak for 15 minutes. Drain and dry them well.
- Carefully drop the potatoes, in batches, in the hot oil. Cook until golden brown and cooked through, about 5 minutes. Drain well on brown paper. Let cool.
- Increase the oil temperature to 350 degrees F. When you are ready to serve, fry the potatoes again in the hotter oil until golden brown and crispy, 3 to 5 minutes. Drain well on brown paper. Meanwhile, in a small pot, melt the butter with the garlic.
- In a large bowl, toss a large handful of fries with some of the garlic butter. Sprinkle with the Parmesan, parsley, and salt while hot. Serve immediately.
CHUY'S JALAPENO RANCH DIP - THE REAL DEAL
This recipe supposedly comes from a former Chuy's employee. When I first got the recipe, the ingredient quanities were huge! Plus it's very different from the other copycat recipes out there. All this (plus the great taste) lead me to believe it's the real McCoy.

CHINESE FRIED RICE (THE REAL DEAL)
Ok people I have been experimenting with fried rice a great deal, and am pretty much going to rest with this recipe. All the recipes I have tried were just missing something so I have taken the best parts of each recipe and combined them. I am going to use jasmine rice for this recipe because in my opinion it is superior to basmati. Comments/suggestions welcome.

- Prepare the jasmine rice. Combine 4 cups of jasmine rice and 4 cups of water in a rice cooker. Once the rice is cooled place in the refrigerator until chilled.
- Scramble eggs in seperate pan using whatever oil you normally cook eggs with. Make sure to fold the eggs over, so they can be cut into thin strips.
- Heat wok and 3-4 tablespoons of wok oil to medium heat.
- Saute the white onion until soft and partially transparent (usually takes me 3 minutes or so) along with 2 tablespoons of soy sauce, frozen peas and/or carrots. ***If you opted for green onions skip this step and saute the peas/carrots in wok oil.***.
- Add the rice making sure to seperate the grains (with fingers) and mix with the vegetables. Add another 3 tablespoons of wok oil, sesame oil, egg strips, ginger, chicken stock, and sugar (green onions if you opted for these).
- Raise the heat to HIGH add soy sauce to desired darkness/taste and STIR-FRY. (I usually use anywhere from 1/2 to a full cup of soy)***it is crucial for the stove to be as hot as possible*****.
- Basically you are going to Stir-fry till all the liquids are dissolved and the fried rice has reached the dryness desired.
- While cooling salt to taste in order to enhance the flavor.

These freeze REALLY well, and they're a nice treat for in lunches, too. The filling can be made anytime, and then kept in the refrigerator up to 4 weeks.

- Cream shortening, sugar and eggs.
- Add vanilla.
- Add milk alternately with dry ingredients and mix well. Add additional flour if needed to achieve proper consistency. (Note that the batter will also thicken as it stands, so you may wish to let it stand 15-30 minutes before baking. I usually turn my oven on at this point & let batter "rest" until the ovens are hot.).
- Drop onto greased (or sprayed) cookie sheets.
- Bake@ 350 for 8 minutes.
- Cool completely, then place one cookie upside down and coat with filling.
- Top with another cookie.
- Wrap in plastic wrap. Serve anytime! These also freeze really well!
- FILLING: Beat egg whites until stiff (if you're using whites).
- Add vanilla, flour and milk & beat well.
- Add shortening and sugar.
- Whip on high speed for 3-5 minutes.
