HAM AND CHICKPEA SLOW COOKER SOUP
A leftover ham bone and chickpeas come together to make a hearty soup in the slow cooker. It goes great with a hearty bread, as it is a very hearty soup.

- Place the garbanzo beans into a large container and cover with several inches of cool water; let stand 8 hours to overnight.
- The next day, rinse the soaked beans and place them into a slow cooker; place the ham bone in the cooker, and pour in enough water to cover the beans and ham bone by several inches. Set the cooker to Low, and cook for 8 hours.
- Skim any foam from the top of the soup, and remove the ham bone. Strip as much meat as possible from the ham bone, and return the meat to the slow cooker; discard the bone. Stir in potatoes, carrots, frozen corn, and black pepper to taste. Set the cooker on Low, and cook for 1 hour; then turn the heat up to High and cook 1 more hour (10 hours total cooking time).

POTAJE DE GARBANZO (CUBAN CHICKPEA STEW)
This Potaje de Garbanzo is a hearty Cuban chickpea stew made with garbanzo beans (or chickpeas), chorizo, ham, veggies, and potatoes. Perfect for any day of the week or time of year! Serve with rice, sliced avocado, or some crusty bread. Your home will smell so delicious after making this stew!

- Soak the chickpeas. In a large bowl, soak the chickpeas in room temp water for 10 hours. Drain.
- Simmer the chickpeas. In a Dutch oven or large pot with a lid, add the chickpeas with enough water to cover them. Bring to a boil then reduce to medium-low heat. Simmer for 30 minutes, covered with a lid, stirring occasionally, until chickpeas have softened, adding 1/4 cup water at a time when necessary to prevent the stew from drying out.
- Make the sofrito. In a large skillet, heat oil at medium-high heat. Add the onions and peppers. Saute for 5 minutes or until the veggies are tender. Add the garlic and saute for 1 minute. Add the ham and chorizo. Stir together with the veggies and saute for 2-3 minutes or until the chorizo and ham are lightly browned. Stir the tomato sauce, wine, cumin, paprika, bay leaf, and salt + pepper to taste. Simmer for another 4-5 minutes. Set aside.
- Mash the chickpeas. After 30 minutes of simmering, the chickpeas should have softened. If they're still firm, continue to simmer for another 10-15 minutes until they have softened. Remove 1/4 cup of the softened chickpeas from the pot and mash them with a fork. Add the mashed chickpeas, the sofrito, and the potatoes into the Dutch oven. Add more water if needed.
- Continue to cook the stew, covered, for another 20 minutes until the potatoes are tender. Remove bay leaf. The chickpea stew can be served immediately unless you prefer a thicker consistency. For a thicker consistency, simmer for an extra 10-15 minutes. Serve by itself or over white rice. Enjoy!

This is a recipe that I picked up in Italy a few years ago. Being that I'm not a soup fan, I was somewhat hesitant... but this thick and hearty soup quickly won my praise. It will quickly become a favorite recipe!

- Combine the tomatoes, olive oil and 1 1/2 cans of the beans in a large saucepan. Bring to a boil. Puree the remaining 1/2 can of garbanzo beans using a blender or food processor, and stir into the saucepan. Place the sprigs of rosemary into the pan without breaking off the leaves. The sprigs will be removed before serving.
- Add acini de pepe pasta and simmer until pasta is soft, stirring gently to prevent sticking. Remove rosemary, and season with salt and pepper.

BASIC HAM AND BEAN SOUP
Hearty ham and bean soup. Easy to make and a great way to use a leftover ham bone. This soup also has lots of mixed vegetables.

- Rinse the beans, sorting out any broken or discolored ones. In a large pot over high heat, bring the water to a boil. Add the salt and the beans and remove from heat. Let beans sit in the hot water for at least 60 minutes.
- After the 60 minutes of soaking, return the pot to high heat and place the ham bone, carrots, celery, onion, garlic, mustard and bay leaves in the pot. Stir well, bring to a boil, reduce heat to low and simmer for 60 more minutes.
- Remove ham bone and discard. Stir in the chopped ham and simmer for 30 more minutes. Season with ground white pepper to taste.

- Bring 2 cups of water to a boil in a large pot. Add garbanzo beans; reduce heat and simmer until almost tender, about 45 minutes. Drain and rinse with cold water until cool.
- Spread garbanzo beans on a baking sheet and remove skins.
- Heat olive oil in a large pot over medium heat; cook and stir onion until softened, about 3 minutes. Add celery, carrots, garlic, and fennel seeds; cook and stir for 4 minutes. Stir in garbanzo beans, vegetable broth, and tomatoes. Simmer soup until garbanzo beans are tender, about 15 minutes. Add grape tomatoes and spinach leaves; cook for 2 minutes.

- Place 1 lb. dried chickpeas in a large stockpot and cover with 4 qt. water. Season with 2 Tbsp. salt and bring to a boil over high heat and cook, skimming any foam that rises to surface, about 20 minutes. Reduce heat to medium-low and bring to a simmer.
- While you’re waiting for the water to boil, peel 2 carrots. Halve 1 large onion through root end and remove papery skins. Smash and peel 8 garlic cloves.
- Add carrots, onion, garlic, 1 smoked ham hock, and ¼ cup extra-virgin olive oil to pot. Add 1 tsp. crushed red pepper flakes, 1 tsp. cumin seeds, and 1 tsp. smoked paprika; season with several twists of black pepper and stir to combine.
- Adjust heat so that you’re at a gentle simmer and cook, stirring occasionally and topping off with more water to keep chickpeas submerged by at least 2", until chickpeas are completely tender, 1½–2½ hours (this may take longer, in which case continue to simmer, checking every 15 minutes or so).
