Mom used to make this growing up and was always my favorite. We usually had it for dinner but can be used for breakfast. We have also made this in the Dutch oven when camping. We like to serve with ketchup.

Steps:
- Place potatoes into a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until tender, about 20 minutes. Drain. Slice potatoes when cool enough to handle.
- Melt 2 tablespoons butter in a large skillet over medium heat; cook and stir onion in hot butter until slightly browned, about 10 minutes. Melt remaining 2 tablespoons butter in skillet; add sliced potatoes. Continue cooking until potatoes begin to brown, about 10 more minutes; stir often.
- Beat eggs in a bowl; pour beaten eggs over potatoes and let cook until egg begins to firm on the bottom, about 5 minutes. Carefully work a spatula underneath the eggs and potatoes and flip. Cook until eggs are firm and set throughout, 3 to 5 more minutes. Season with salt and black pepper.
- Lay American cheese slices over egg-potato mixture and let melt before serving.

- Cut top off potato (to form a lid).
- Scoop out flesh of potato leaving about 1 cm (just under 1/2 inch) of the flesh under the skin.
- Mix the flesh with sour cream, dill, and salt and pepper.

- Preheat the oven to 375 degrees F and line a baking sheet with parchment paper. Pierce the potatoes in a few places with a fork; place on a microwave-safe plate and microwave, turning halfway through, until tender, about 16 minutes. Set aside until cool enough to handle.
- Meanwhile, cook the bacon in a large nonstick skillet over medium heat, turning occasionally, until crisp, 9 to 11 minutes. Drain on paper towels, reserving the drippings. Roughly chop 4 slices and break the other 2 slices in half; set aside.
- Slice off the top 1/4 inch of the potatoes lengthwise. Scoop the flesh from 3 potatoes into a medium bowl, leaving a 1/4-inch-thick shell. Repeat with the remaining potato but discard the flesh. Add 2 tablespoons of the reserved bacon drippings and the warmed milk to the bowl and mash with a potato masher or fork until smooth. Stir in the cheese, scallions, parsley, chopped bacon, 1/2 teaspoon salt and 1/4 teaspoon pepper.
- Season the inside of the potato skins with salt and pepper. Divide the filling among the skins, then press the back of a spoon down the center of the filling to create a long, deep well. Brush the outside of the skins with the remaining bacon drippings and transfer to the baking sheet.
- One at a time, crack an egg into a ramekin or teacup, then carefully pour into each potato (it's OK if some of the egg white overflows). Transfer to the oven and bake until the whites are set, 20 to 25 minutes. Season with salt and pepper and top with more scallions and the halved bacon strips.

- Preheat oven to 350 degrees F (175 degrees C).
- Bring a large pot of salted water to a boil. Add potatoes and cook until tender but still firm, about 15 minutes. Drain, cool, peel and slice.
- Place eggs in a saucepan and cover with cold water. Bring water to a boil and immediately remove from heat. Cover and let eggs stand in hot water for 10 to 12 minutes. Remove from hot water, cool, peel and slice.
- In a 9x13 inch casserole dish layer potatoes and eggs, sprinkling each layer of eggs with seasoning salt, ending with potatoes.
- In a small saucepan over low heat, melt margarine with sour cream. Pour over potatoes and sprinkle lightly with seasoning salt.

- Place cheese into TM bowl and grate 6 sec / speed 6. Set aside.
- Place garlic, spring onions, oil and bacon into TM bowl and chop 3 sec / speed 5. Scrape down and sauté 5 mins / Varoma / speed 1 / MC off.
- Add sour cream, milk and soup mix. Place potatoes in both layers of Varoma and cook 15 mins / 100°C / speed 1/ Reverse.
- Pour the cream sauce into a small bowl and set aside. No need to wash TM bowl.
- Pour boiling water into TM bowl and insert simmering basket and place in eggs. Place Varoma with potatoes back into position and cook 15 mins / Varoma / speed 2.
- Preheat oven to 180°C.
- Remove simmering basket with spatula. Place eggs into a sink or bowl of cold water to cool down as you peel them. Slice eggs.
