GARBANZO BEAN SALAD WITH CILANTRO LIME DRESSING
This salad is extremely fresh and delicious! It works well as a lunch or a side dish!

Steps:
- In a food processor, add the spinach and pulse a few times until chopped very small
- Add the processed spinach, drained garbanzo beans, and chopped onion into a large bowl
- In the food processor (no need to rinse the bowl!), add the lime juice, cilantro, mustard, sugar, garlic, cumin, and oil and process until smooth, scraping down the sides of the bowl as needed
- Pour the dressing on top of the spinach/garbanzo bean mixture and stir well
- Add salt and pepper to taste
- Refrigerate for about 10 minutes to let the flavors develop
- Enjoy

- Combine the dressing ingredients in a small bowl: 3 Tbsp olive oil, 3 Tbsp lemon juice, 1 pressed garlic clove, 1/2 tsp salt and 1/8 tsp pepper and whisk to combine (or shake them together in a small mason jar).
- Combine remaining chickpea salad ingredients in a salad bowl, add dressing to taste (we used all of it) and toss to coat.

GARBANZO BEAN SALAD WITH CITRUS DRESSING
Steps:
- Drain and rinse the garbanzo beans in a colander. Mix olive oil and lemon juice in a medium bowl with a fork, and add garbanzo beans to same bowl. Add the feta, green onions, cilantro, salt and cayenne to the beans, and stir until evenly coated with the dressing from the bottom of the bowl. Taste test, and if it's to your liking, serve immediately!
