Absolutely Wonderful Cheesy Creamy Spinach Artichoke Dip image

I actually won a local contest with this recipe. Our favorite restaurant who served the best dip closed down...and we could not find another that was even close, so I came up with this home-made replica, which is just as delicious!

1 (10 ounce) package frozen chopped spinach (thawed and drained well)
1 (6 1/4 ounce) jar marinated artichokes (drained and chopped) (optional)
1 cup shredded mozzarella cheese
1/2 cup grated parmesan cheese
1 -3 garlic clove, minced, to taste (or more)
1/4 teaspoon salt
serve with French bread (toasted) or sourdough bread (toasted)
1/2 cup half and half milk or 1/2 cup heavy cream
1/2 cup sour cream

Steps:

  • Preheat oven to 375 degrees.
  • Combine all ingredients (except bread) into a mixing bowl, gently fold together until combined.
  • Pour into a greased or oiled 8" or 9" pie plate or other baking dish.
  • Bake in oven at 375 degrees for 25 to 35 minutes or until browned and bubbly.
  • Let stand to cool down it will be very hot.

  • Slice bread 1/4" to 1/2" and place directly on oven rack to toast for the last 5 to 10 minutes of baking time.

10 ounces package frozen chopped spinach, thawed and drained very well
14 ounces can artichoke hearts, drained very well and chopped (packed in water)
8 ounces container fat free cream cheese, room temperature
4 ounces can water chestnuts, drained and chopped
1/4 cup nonfat sour cream
1/4 cup fat-free mayonnaise
1/4 cup reduced-fat grated parmesan cheese, divided
3 tablespoons minced shallots
2 garlic cloves, minced
1/4 teaspoon salt
1/8 teaspoon cayenne pepper

Steps:

  • If you want to serve this dish hot, preheat oven to 350 degrees.
  • In a large bowl, combine cream cheese, sour cream, mayo, and 3 tablespoons of the parm-style topping. Add the salt and cayenne pepper, and then stir until smooth.
  • In a pan sprayed with nonstick spray, cook the shallots and garlic over medium heat until soft (1 - 2 minutes). Set aside.
  • To the large bowl, add spinach, artichoke hearts, water chestnuts and garlic/shallot mixture. Stir well.
  • If serving dip cold, top with the remaining tablespoons of parm-style topping. If you want to serve the dip hot, transfer to a casserole dish, top with the remaining parm, and then bake for 30 minutes (or until bubbly).

I love artichokes and spinach, I'm just not a fan of them together. I also don't like adding mayonnaise to anything unless it's absolutely necessary. I don't think this recipe needs it because of using canned artichokes, and sour cream, plus this entire recipe is placed in a food processor to which it is almost a pureed consistency. I feel that spinach takes away from the artichokes flavor, consistency and texture. Most of us make these types of recipes for parties, potlucks & get-togethers, who wants spinach stuck in their teeth all night! :D Thanks for the recipe Brandy B.

8 ounces sour cream
12 ounces marinated artichoke hearts
1 -1 1/2 cup freshly grated parmesan cheese
1/2 teaspoon salt (optional)
1/2 teaspoon ground black pepper
1/4 teaspoon lemon juice (optional)
1 -2 small garlic cloves, finely chopped or 1 -2 tablespoon minced garlic, from jar

Steps:

  • Preheat oven to 350F and lightly spritz a 9 x 13" baking dish or tart/quiche glass dish with cooking spray.
  • Whirl all ingredients in a food-processor bowl until mixture is blended and artichokes break into small pieces.
  • If you have any left-over Parmesan cheese sprinkle it on top.
  • Place in prepared pan.
  • Bake for 20-30 minutes, or until slightly browned on top.

This is always a huge hit, whenever/wherever I serve this appetizer. Too many people have asked me for the recipe, so I decided to post it and share with everybody.

2 garlic cloves, minced
2 tablespoons onions or 2 tablespoons shallots, minced
2 tablespoons olive oil
2 tablespoons unsalted butter
1/4 cup flour
1 cup cream or 1 cup half-and-half cream
1 cup whole milk or 1 cup 2% low-fat milk
1/4 cup chicken broth
2/3 cup parmesan cheese, grated
2 teaspoons lemon juice
1/2 teaspoon hot sauce (or more)
1/4 cup sour cream
2 (10 ounce) boxes frozen chopped spinach, thawed and squeezed dry
1 (12 ounce) jar water-packed artichoke hearts, drained and coasrely chopped
1/2 cup white cheddar cheese, shredded

Steps:

  • Heat a saucepan over medium heat, saute garlic and onion in butter/olive oil until softened, 3 to 5 minutes.
  • Stir in flour and cook for 2 minutes. Mixed well with the fat.
  • Slowly whisk in cream, milk, and chicken broth. Whisk until the sauce is lump free.
  • Continue cooking and stirring over medium heat until boiling. Stir in Parmesan cheese, lemon juice, hot sauce, salt and pepper. Stir until the cheese has melted, then turn the heat to low and stir in the sour cream.
  • Squeeze the spinach dry in a towel, and coarsely chop the artichoke hearts. Fold in the spinach and artichoke hearts in the sauce.
  • If not serving right away, transfer the mixture into a microwave-safe dish and sprinkle cheddar cheese on top. The dip can be refrigerated until ready to serve.
  • To serve, microwave dip on 50% power until the sauce is warm and cheese is melted.

½ cup shredded Parmesan cheese
¼ cup roasted red peppers, drained and chopped
2 cloves garlic, minced

½ cup coarsely crushed garlic croutons

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Mix artichoke hearts, spinach, cream cheese, sour cream, Romano cheese, Parmesan cheese, roasted peppers, garlic, and lemon juice together in a baking dish and top with croutons.
  • Bake in the preheated oven until bubbly and croutons are browned, about 35 minutes.

  • For a chunky dip, process the artichoke hearts first. Add the drained artichoke hearts to the food processor and pulse in short bursts until they are chopped but not pureed. Remove them to a separate bowl. (or, add them to the spinach with everything else).
  • Drain the defrosted chopped spinach in a colander. Wring out excess liquid by squeezing handfuls over the colander. Add to the food processor bowl.
  • To the spinach, add your yogurt/ cream cheese choice, mayonnaise, chopped green onions, lemon juice, garlic powder, onion and salt.
  • Process your spinach dip until it is uniformly mixed. Stir in the chopped artichoke hearts and optional jalapeno peppers.
