6 small (1 1/2- to 2-inch) red potatoes (3/4 pound)
2 large leeks (white parts only), cut crosswise into 1/4-inch-thick slices
1 (1-pound) piece monkfish fillet, cut into 2-inch chunks
3 tablespoons extra-virgin olive oil
Slow-braised tomatoes
1 large fennel bulb (sometimes called anise), stalks discarded and bulb halved lengthwise, cored, and thinly sliced lengthwise
1 cup thinly sliced shallots (4 medium)
4 garlic cloves, 3 thinly sliced and 1 halved crosswise
24 small hard-shelled clams (2 pounds) such as littlenecks (less than 2 inches wide), scrubbed well
1/2 cup dry white wine
1/2 cup water
1 teaspoon dried hot red pepper flakes
1 teaspoon finely grated fresh lemon zest
8 fresh basil leaves, chopped
2 tablespoons chopped fresh parsley
4 (3/4-inch-thick) slices crusty bread (about 4 inches wide), toasted
Accompaniments: aïoli and green olive tapenade
Garnish: 8 whole fresh basil leaves

Steps:

  • Quarter potatoes, then cover by 1 inch with salted cold water in a 3-quart saucepan and simmer, covered, until just tender, 7 to 10 minutes. Drain in a colander, then cool.
  • Wash leeks in a bowl of cold water, agitating water to loosen any sand, and lift leeks from water to a sieve to drain. Pat dry.
  • Pat monkfish dry and season with salt and pepper. Heat oil in a deep 12-inch heavy skillet over moderately high heat until hot but not smoking, then sear monkfish lightly on all sides until golden, about 2 minutes total (fish will not be cooked through). Transfer fish to a plate using tongs.
  • Heat 2 tablespoons oil from slow-braised tomatoes in skillet over moderately high heat until hot but not smoking, then sauté leeks, fennel, and shallots, stirring, until softened and edges begin to brown, 4 to 6 minutes. Add sliced garlic and sauté, stirring, until fragrant, about 2 minutes.
  • Add clams, wine, water, red pepper flakes, zest, and tomato halves and cook, covered, until clams are fully open, 6 to 10 minutes, checking every minute after 6 minutes and removing clams as they fully open. (Discard any clams that have not opened after 10 minutes.) Using tongs, transfer clams to a large bowl or soup tureen.
  • Add monkfish and potatoes to skillet and simmer, covered, until fish is just cooked through, 4 to 6 minutes. Remove from heat and stir in basil and parsley. Season with salt and pour over clams.
  • While monkfish is cooking, rub one side of each toast with a cut side of halved garlic clove. Divide bourride among 4 shallow bowls. Add a garlic toast and top with a spoonful each of aïoli and tapenade.

2 (1-pound) monkfish tails, trimmed
Olive oil
Salt and freshly ground black pepper
12 fingerling potatoes, sliced in half, vertically
Olive oil
Salt and pepper
1/2 pound merguez sausage
2 tablespoons olive oil
1 small onion, finely sliced
4 cloves garlic, finely sliced
1 cup white wine
4 cups clam broth
12 New Zealand cockels
2 plum tomatoes, pureed
2 scallions, finely sliced
2 tablespoons cold unsalted butter
Spinach, sauteed in butter and seasoned with salt and pepper, for serving
Fresh parsley, for garnish

Steps:

  • For the monkfish: Preheat oven to 400 degrees F. Heat 2 tablespoons of olive oil in a large saute pan over medium-high heat. Season the monkfish with salt and pepper to taste. Sear on both sides until lightly golden brown. Place the fish in a small roasting pan and roast in the oven for 12 to 15 minutes.
  • For the potatoes: Preheat oven to 400 degrees. Toss potatoes in olive oil in season with salt and pepper to taste. Roast for 10 to 15 minutes, until just cooked through and lightly golden brown. .
  • For the sausage: Preheat grill or grill pan. Grill the sausage until golden brown and cooked through. Let rest and cut into 1/2-inch slices.
  • For the clam broth: Heat oil in a medium saucepan over medium heat. Add the onions and cook until soft. Add the garlic and cook for 2 minutes. Increase the heat to high, add wine and cook until reduced. Add broth and bring to a boil. Add clams, cover the pot and cook until the clams open, remove the clams with a slotted spoon to a bowl. Cook the broth until reduced by half. Add the tomatoes and cook for 2 minutes. Whisk in the butter, add the scallions and season with salt and pepper to taste.
  • Assemble: Cut the roasted monkfish into 4 pieces. Place a small amount of spinach in each bowl. Place a piece of monkfish on top of spinach and place 3 potatoes, 3 pieces of merguez and 3 clams around the edge. Ladle broth over and garnish with fresh parsley.

8 ounces fresh chorizo sausage (about 1 link), removed from casing
1/2 cup diced white or yellow onions
2 cloves garlic, minced
Salt and freshly ground black pepper
1 pound littleneck clams (about 12 clams), cleaned and soaked in water to remove impurities
1 cup dry white wine, plus more if needed
1/2 cup fresh cilantro, coarsely chopped
3 to 4 tablespoons cold unsalted butter, cubed
Crusty bread or baguette, for serving

Steps:

  • Heat a large saucepot over medium heat. Add the chorizo and cook, using a spoon or spatula to break up the sausage into small pieces, until the sausage begins to brown. Add the onions and garlic and sprinkle lightly with salt and pepper. Continue to cook until the sausage has browned, 3 to 4 minutes, taking care not to burn the garlic.
  • Add the clams to the pot and let settle for a minute, then add the white wine and cilantro. Re-season with salt and pepper and cover tightly with a lid. Let cook about 5 minutes, making sure that the broth at the bottom is at a simmer during that time. After 5 minutes, the clams should have opened or be mostly open; if not, or if the mixture is dry, add another 1/4 cup or so of wine, cover and simmer until the clams are open, 1 to 2 minutes longer. Taste the broth for seasoning and add salt or pepper if necessary. Add the butter to the broth and stir to combine.
  • Transfer to a large serving bowl, making sure to pour the broth over the clams. (Remove any unopened clams and discard them.) Serve with crusty bread or baguette.

  • In a large, heavy pot over medium-low heat, warm the oil and add the chorizo. Cook until it has rendered some of its fat and looks cooked, about 5 minutes. Add the onion and bell pepper and cook until softened, about 5 minutes. Add the garlic and cook until fragrant, about 3 minutes. Add the tomatoes, white wine and saffron and cook until the tomatoes have melted into the sauce, which should have lost its alcohol smell. Add the potatoes. The texture should be loose and slightly soupy, but not broth-like. Taste and season with salt. (The recipe can be prepared to this point up to 2 hours in advance; or even further if tightly covered and refrigerated.)
  • When almost ready to serve, warm the base over medium heat. Add the monkfish and cook just until it changes color, about 3 minutes. Add the clams, raise the heat to high, cover tightly and cook until all of the clams have opened, about 5 minutes. Sprinkle with parsley and serve immediately.

  • Start by making the aioli. Heat a small dry frying pan over a high heat. Lower the heat, add the saffron strands and shake around for 10-20 seconds without letting them colour, then tip them into a mortar and leave them to go cold.
  • Put the chicken stock into a pan and bring it to the boil; turn off the heat. Stir in the remaining ground saffron.
  • Heat 2 tablespoons of the oil in a large, deep sauté pan or frying pan, add the chorizo and fry briefly until lightly browned. Add the onion, garlic, yellow pepper and chillies to the pan and fry gently for 5-7 minutes until the onion is soft and lightly golden and the pepper is just beginning to soften.
  • Add the saffron-infused stock and some salt and bring to the boil. Sprinkle in the rice, stir once so that it is evenly distributed over the base of the pan, and leave to simmer over a medium-high heat for 6 minutes.
  • Meanwhile, heat 1 tablespoon of olive oil in another frying pan, add the sliced courgettes and fry for 2-3 minutes until just tender. Season lightly and set aside.
  • Remove the monkfish fillets from each tail piece using a sharp knife to cut straight down either side of the central bone. Cut the monkfish fillets into 2-3cm thick slices; season with a little salt and paprika.
  • Lay the monkfish pieces and the courgettes on top of the rice, turn off the heat, cover with a tight fitting lid (or a double layer of foil) and leave to rest for 5 minutes.
