3 cloves garlic, chopped
3 large hot chile peppers, thinly sliced
1 ½ cups sliced pork
1 tablespoon dark soy sauce
1 tablespoon sweet soy sauce
4 tablespoons fish sauce
1 tablespoon chile paste in soybean oil
1 ½ cups sliced white onion
½ cup sliced green bell pepper
1 cup Thai basil leaves
1 teaspoon ground white pepper

Steps:

  • Heat oil in a wok over high heat. Add garlic and chile peppers and cook until garlic starts to brown, about 30 seconds. Add pork and stir-fry until browned, about 3 minutes. Pour in dark soy sauce, sweet soy sauce, and fish sauce. Cook and stir until liquid has reduced by half, about 3 minutes.
  • Add chile paste, onion, and bell pepper. Stir-fry until pork is cooked through, 5 to 6 minutes. Stir in basil leaves and season with pepper. Stir until well combined.

250 g ground beef
3 garlic cloves (minced)
1 medium red onion (thinly sliced)
1 red paprika (thinly sliced)
1 yellow pepper (thinly sliced)
1 green pepper (thinly sliced)
12 basil leaves
2 eggs
black pepper, to sprinkle
1 tablespoon vegetable oil
150 g rice (steamed)
1 tablespoon fish sauce
2 teaspoons oyster sauce
2 teaspoons sugar
2 red chili peppers (minced)

Steps:

  • In a frying pan, heat vegetable oil, over a medium heat. Add minced garlic until slightly colored and aroma is released.
  • Add ground beef and fry until brown. When ground beef is almost cooked through, add veggies.
  • Stir fry quickly so that veggies remain crunchiness.
  • Combine 4 ingredients to make sauce. Add sauce to frying pan and mix well.
  • Make space in the pan for frying egg. Fry until egg white gets crispy on the edge.
  • FInally, add basil leaves, mix well.
  • Serve stir-fry on steamed rice. Top with egg and sprinkle with black pepper.

3 tablespoons vegetable oil
2 shallots ((thinly sliced))
7 cloves garlic ((sliced))
3 Thai bird or holland chilies ((de-seeded, if desired, and thinly sliced))
1 pound ground pork ((450g))
1 teaspoon sugar
1 tablespoon fish sauce
1 tablespoon thin/light soy sauce
2 teaspoons dark soy sauce
2 teaspoons oyster sauce
⅓ cup low sodium chicken broth or water
holy basil leaves ((about 1 1/2 cups packed))

Steps:

  • In a wok over medium high heat, add the oil, shallots and garlic, and fry for 3 minutes. Add the chilies and cook for another minute. Crank up the heat to high, and add the ground pork, breaking it up into small bits and allowing it to crisp up.
  • Add the sugar, fish sauce, soy sauce, dark soy sauce, and oyster sauce. Stir-fry for another minute and deglaze the pan with the broth or water. Because your pan is over high heat, the liquid should cook off very quickly. Add the basil, and stir-fry until wilted. Serve over rice.

2 lb Chinese or Japanese Eggplant
Kosher Salt
1 tbsp Cornstarch
2 tbsp Vegetable Oil
1 tbsp Sesame Oil
10 Garlic Cloves (minced)
2 tsp Fresh Ginger (grated)
1 tsp Soy Sauce
1 tsp Maggi Sauce
1 tsp Oyster Sauce
1 tsp Fish Sauce
1 cup Thai Basil Leaves
1 Thai red chili (sliced)
1 Scallion (sliced)

Steps:

  • Slice Japanese eggplant on the diagonal 3/4 to 1 inch thick, larger pieces cut in half lengthwise.
  • Put the eggplant in a colander in the sink or over a bowl, toss with approximately tablespoon of salt, and set aside to drain for about 45 minutes. Rinse the eggplant thoroughly, pat dry, and transfer to a large bowl.
  • Sprinkle the cornstarch over the eggplant and toss to coat. Heat the oil in a 12-inch skillet or wok over medium-high heat. Add just enough eggplant to create a single layer so that no slices overlap. Cook, flipping once, until the eggplant is golden and a bit charred in places, 2-1/2 to 3 minutes total. Transfer the eggplant to a paper-towel-lined rimmed baking sheet. Repeat with the remaining eggplant, adding more oil to the pan as needed.
  • Wipe the pan clean, then add the sesame oil over low heat. Add the garlic and ginger, and cook, stirring, until fragrant, about 20 seconds. Return the eggplant to the pan.
  • Add the Thai basil leaves, red chili, soy sauce, Maggi sauce, oyster sauce and fish sauce then toss to combine, about 1 minute.
  • Serve topped with the sliced scallion.

1/4 cup chicken broth or water
1 tablespoon Asian fish sauce (preferably naam pla)
2 teaspoons sugar
1 teaspoon soy sauce
1/4 teaspoon freshly ground black pepper
1 1/2 cups loosely packed fresh holy basil leaves or Asian basil leaves (from about 2 ounces sprigs), washed well and spun dry
2 tablespoons fresh lime juice or to taste
Accompaniment: Thai Sticky Rice orThai Jasmine Rice

Steps:

  • Freeze chicken, wrapped in plastic wrap, 30 minutes to facilitate slicing. Cut chicken lengthwise (along grain) into thin slices and cut slices lengthwise into thin strips. Cut strips crosswise into 2-inch pieces.
  • Heat a wok or heavy skillet over high heat until hot. Add oil and heat until hot but not smoking. Add garlic and stir-fry until golden. Add chicken and cook, stirring constantly to prevent sticking, until all chicken is opaque white, 3 to 4 minutes.
  • Add chilies, broth or water, fish sauce, sugar, soy sauce, and black pepper and stir-fry until combined. Add basil and stir-fry 30 seconds. If using holy basil, stir-fry 1 minute more, or until basil is wilted but still green. Stir in lime juice.
  • Serve chicken with rice.

  • In order for your Pad Krapow to have the right flavor, you really need to use the type of basil that we call Krapow. Krapow is similar in flavor to Holy Basil.
  • Measure and prepare the ingredients. Pluck the leaves from your Krapow and cut the green beans into 1/2 inch pieces. Using a mortar and pestle, crush the garlic and chilies.
  • If you are planning to serve a fried egg on the side, then you should fry it before you cook the Pad Krapow. If you want to make a real Kai Dow, then follow the video for my tips, otherwise any ordinary fried egg will still taste great with this dish.
  • Heat a wok or large frying pan over medium to high heat, and add about 1 - 2 Tablespoon of vegetable oil. When the oil gets hot, add the crushed garlic and chilies.
  • Add the chopped meat to the pan and mix it in well with the chilies and garlic. Fry for about 2 minutes, or until most of the pink color is gone from the meat and you can tell that it is nearly cooked.
  • Add the oyster sauce and light soy sauce to the meat and mix it in well. Fry for about 30 seconds.
  • Add the sugar and green beans to the pan and stir well. Fry for about 30 seconds, or until you are sure the sugar is all melted.
  • Add the dark sweet soy sauce to the pan and mix in well. Fry for about 1 minute, or until the meat is starting to get a little dry, and you can see it browning and sticking to the pan just a little.
  • Add about 1/8 to 1/4 cup of water. Stir it around and fully deglaze the pan to get all that flavor mixed back into the sauce. Fry for about 30 seconds to reduce the water back into a nice brown gravy.
  • Add the basil in, stirring quickly. Cook just for a few seconds, just long enough for the basil to wilt a little. Remove from the heat and serve immediately.
