My mom has been making this chicken spread/dip since I was a little kid, and it's always a hit at parties!

8 ounces cream cheese (at room temperature)
1 small onion (finely chopped (about ¼ cup))
4.25 ounce can chicken
1 tablespoon mayonnaise
1 tablespoon soy sauce

Steps:

  • In a medium bowl, blend all ingredients together with a hand mixer until creamy and combined.
  • Serve with assorted crackers. Leftovers can be stored in the refrigerator for up to 3 days.

1/2 medium onion
1 large garlic clove
1 large medium heat pepper, seeded and chopped
2 Tablespoons mayonnaise
1 Tablespoon montreal chicken seasonings

Steps:

  • In a large mixing bowl, combine the drained canned chicken, mayo, peppers, tomatoes, onion, garlic and seasonings
  • Mix it with a fork until smooth
  • Breton crackers or whole grain crackers make a nice companion for this spread, or make sandwiches
  • Spread it on cucumber slices or stuff peppers or tomatoes with it if you are looking for a low carb option

2 chicken breasts
1 clove garlic
1 green onion, chopped
2 tablespoons parsley
3 ounces fat-free cream cheese or 3 ounces neufchatel cheese
1 dash pepper
1 dash celery salt

Steps:

  • Simmer the chicken and garlic until chicken no longer runs pink when pierced.
  • Cut the chicken in 1" pieces.
  • Put all ingredients, including garlic, through blender or grinder.
  • Blend smoothly.
  • Chill and serve.

I got this recipe from a former neighbor about 12 years ago. She and her family haved moved a few miles away, into town, but I wish they were still in the neighborhood. She actually got my DH to dress as the Easter Bunny for a couple of years!!! I have pics to prove it. Anyway, back to the recipe. It is delicious and refreshing, especially in the warm weather we are beginning to have in NC. Again, guessing on the number of servings. Cook time is chill time, if you can wait for it to chill. I never do. ENJOY!!

1/4 to 1/3 cup mayonnaise
Salt and black pepper, to taste
Optional: no-salt herb blend , to taste
Optional: garlic powder, to taste
Optional: onion powder, to taste
Optional: cayenne pepper, to taste

Steps:

  • Gather the ingredients.
  • Mince cooked chicken finely and put in a medium bowl.
  • Add 1/4 cup mayonnaise and salt and pepper, to taste. Mix gently. Add extra mayonnaise, as needed, until spread reaches desired consistency.
  • If you like, flavor the spread with a no-salt herb blend, a little garlic or onion powder, or a dash of cayenne pepper.
  • Spread in between slices of bread and enjoy.

1/2 teaspoon ground nutmeg

garlic salt, to taste
celery salt, to taste
2 1/2-3 lbs chicken breasts (cut into chunks)
1/2 cup margarine or 1/2 cup butter
1 (20 ounce) can pineapple tidbits
1 tablespoon sugar
1 1/2 tablespoons cornstarch
1/3 cup teriyaki sauce

Steps:

  • In large baggie, mix ¾ C flour and seasonings. Add chicken pieces a few at a time until all coated.
  • Brown chicken in margarine.
  • Place in baking dish, reserving drippings in pan.
  • Drain fruit (keep 1 C syrup)and arrange fruit over chicken.
  • Stir corn starch and sugar in drippings. Add 1 C syrup from pineapple and teriyaki sauce.
  • Cook and stir until thickened and bubbly. Spoon over meat.
  • Cover and microwave on high 5 minutes. Serve over rice.
