2 ½ cups shredded coconut
½ cup chopped walnuts
1 (8 ounce) can fruit cocktail, drained
1 (8 ounce) can pineapple chunks, drained
1 (11 ounce) can mandarin oranges, drained
3 cups miniature marshmallows
1 (10 ounce) jar maraschino cherries, drained
1 teaspoon ground nutmeg
1 teaspoon ground cinnamon

Steps:

  • In a large bowl, combine the whipped topping, coconut, chopped nuts, fruit cocktail, pineapple, mandarin oranges, marshmallows, cherries, nutmeg and cinnamon. Mix together well and refrigerate for 30 to 45 minutes.

1 medium banana, peeled
3 cups fresh fruit, cut into pieces (such as cantaloupe, grapes, pineapple, apple, pear, nectarine, plum, honeydew melon, blueberries, st)
1/2 teaspoon ground nutmeg
1/4 teaspoon ground cardamom
1 tablespoon sweetened coconut, toasted (flaked Or shredded)

Steps:

  • Combine the orange juice, club soda, and banana in a blender and puree until smooth.
  • Pour over the fresh fruit mixture.
  • Sprinkle with the nutmeg and cardamom.
  • Cover and refrigerate until ready to serve.
  • Sprinkle on the coconut and serve immediately.

1 cup granulated sugar
3-inch piece of ginger, peeled and sliced
2 kiwis, peeled and cut into wedges
1 orange, segmented
1 cup blackberries
2 plums, cut into wedges
1 cup pineapple, 1/2-inch diced
2 nectarines, cut into wedges
1 cup sweetened coconut, plus more for garnishing
2 cups heavy cream
2 tablespoons confectioners' sugar
3 tablespoons amaretto

Steps:

  • Make ginger syrup: In a heavy-bottomed saucepan over medium-high heat, combine sugar, ginger, and 1 cup water. Bring to a boil, and lower heat to medium. Cook for 20 minutes; set aside to cool.
  • In a medium bowl, mix together kiwis, orange, blackberries, plums, pineapple, nectarines, and coconut. Drizzle about 1 cup ginger syrup over the fruit mixture. Using a rubber spatula, gently stir the fruit.
  • Place heavy cream and confectioners' sugar in a large bowl. Using a wire whisk, whip cream to form soft peaks. Fold in amaretto.
  • Spoon 2 tablespoons whipped cream into each of six glasses, then some fruit; continue until the glasses are topped with 1/4 cup cream. Sprinkle with coconut, and serve immediately.

2 medium unpeeled apples, diced

  • Drain pineapple, reserving 1/4 cup juice in a saucepan; set pineapple aside. Add brown sugar and orange zest to the juice; heat until sugar dissolves. Peel and section oranges into a large bowl, reserving any juice; add the apples and pineapple. Add pineapple juice mixture and stir gently. Chill. Just before serving, sprinkle with coconut.

Steps:

1 1/4 cups fresh pineapple juice
1 cup canned unsweetened coconut milk
3 packages (1/4 ounce each) unflavored powdered gelatin
2 cups heavy whipping cream
1 teaspoon pure vanilla extract
1/3 cup sugar
1 1/2 cups plain Greek yogurt
1/2 cup sweetened flaked coconut
1 1/2 ounces dried papaya, cut into 1/4-inch pieces (1/4 cup)
1 jar (10 ounces) Maraschino cherries, drained, stemmed, and halved
Nonstick cooking spray
Fresh pineapple wedges, for serving (optional)

Steps:

  • Bring pineapple juice to a boil in a medium saucepan; continue to boil, skimming foam from top, 5 minutes. Meanwhile, combine coconut milk and 1/2 cup cold water in a medium bowl, then sprinkle with gelatin. Let stand until softened, about 5 minutes. Pour hot pineapple juice over gelatin mixture, stirring until gelatin is dissolved. Let cool completely.
  • Whisk together cream and vanilla in a large bowl until foamy. Slowly add sugar, whisking until soft peaks form. Whisk in yogurt and gelatin mixture until thoroughly combined. Refrigerate until thickened slightly and beginning to set, about 20 minutes.
  • Whisk mixture again until smooth. Fold in coconut, papaya, and cherries. Lightly coat a nonreactive 10-to-12-cup bowl with cooking spray; transfer mixture to bowl and smooth top. Cover and refrigerate until firm, at least 8 hours and up to 1 day.
  • Dip bottom of bowl into warm water 30 seconds, then run a thin knife around edge to loosen. Invert bowl onto a platter, then lift to remove bowl. (If gelee does not release, return to warm water 20 seconds more.) Serve, with pineapple wedges.
