Fruit Pizza Trifles To Go image

These originated when I needed a way to take fruit pizza to an event on our Harley (fruit pizza doesn't fit so well in a T-bag). I brainstormed with other cooks and came up with this individualized version which can be prepped ahead of time and assembled on site. Good stuff, no matter how you travel to your destination!

4 (8 ounce) packages reduced-fat cream cheese, softened
2 cups brown sugar
4 teaspoons vanilla extract
1 pound fresh strawberries, coarsely chopped
1 fresh pineapple - peeled, cored and chopped
1 pound seedless grapes, halved
1 pint blueberries
25 clear, plastic (10 ounce) cups
12 sugar cookies, crushed
2 kiwis, peeled and sliced

Steps:

  • Mix cream cheese, brown sugar, and vanilla extract in a bowl until smooth. Refrigerate until cold, about 30 minutes.
  • In a separate bowl, lightly mix together the chopped strawberries, pineapple, grapes, and the blueberries.
  • Scoop about 3 tablespoons of the cream cheese mixture into the bottom of each plastic cup to make a half-inch thick layer. Spoon enough mixed fruit on top of the cream cheese to make a 2-inch layer, about 1/3 cup. Top the fruit with a teaspoon or two of crumbled sugar cookies. Garnish each trifle with a kiwi slice. Refrigerate until serving time.

4 cups cold milk
2 packages (3.4 ounces each) instant vanilla pudding mix
1 prepared angel food cake (8 to 10 ounces)
1 carton (8 ounces) frozen whipped topping, thawed
1 can (20 ounces) pineapple tidbits, drained
1 can (15-1/4 ounces) sliced pears, drained
1 pint strawberries, sliced
4 kiwifruit, peeled, halved and thinly sliced
1 cup fresh or frozen blueberries, thawed

Steps:

  • In a large bowl, beat milk and pudding mix on low speed for 2 minutes; set aside. , Split cake horizontally into thirds. Place one layer in a 5-qt. trifle or serving bowl that is 9 in. in diameter. Top with a third of the pudding, whipped topping and fruit. Repeat layers twice. Cover and chill for at least 3 hours.

2 Tbsp. orange-flavored liqueur
2 pkg. (3.4 oz. each) JELL-O Vanilla Flavor Instant Pudding
3 cups cold milk
1-1/2 pkg. (4 oz. each) BAKER'S White Chocolate (6 oz.), broken into pieces, melted, cooled slightly
1 tub (8 oz.) COOL WHIP Whipped Topping, thawed, divided
3 cups mixed fresh or frozen mixed berries (blueberries, sliced kiwi, sliced strawberries)

Steps:

  • Stand 16 wafers around inside edge of trifle dish. Coarsely break remaining wafers; place on bottom of dish, then drizzle with liqueur.
  • Beat pudding mixes and milk in medium bowl with whisk 2 min. Stir in chocolate and half the COOL WHIP.
  • Layer half each of the pudding mixture and fruit over wafers in dish; repeat layers. Top with remaining COOL WHIP. Refrigerate 30 min.
