JAM TARTS

Jam Tarts image

These are so simple to make that my 3-year-old daughter did most of the work. Make sure not to roll the pastry too thin, and don't put too much jam in.

Time 1h25m

Yield 4 to 6 servings

Number Of Ingredients 14

4 ounces Shortcrust Pastry, recipe follows
2 ounces dark chocolate, melted
4 ounces cream cheese, at room temperature
1 tablespoon double cream
1/2 ounce caster (superfine) sugar
Vanilla essence
Fresh fruit (strawberries, raspberries, sliced peaches, etc.)
Apricot jam or red currant jelly, melted and sieved, to glaze
115g/4 ounces plain (all-purpose) flour
Salt
25g/1 ounce butter
25g/1 ounce lard
1 tablespoon freshly grated Parmesan cheese (optional)
Cold water

Steps:

  • Line tartlet tins with the pastry (use boat-shaped tins if you have them). Bake blind in a preheated oven at 375 degrees for 10 minutes. When cold, brush the inside of the tartlet cases with the melted chocolate and leave to harden.
  • Mix together the cream cheese and double cream until very smooth, then add the sugar and vanilla essence. Fill the tartlet cases with the cream mixture and arrange the fruit on top. Brush with the apricot or red currant glaze, depending on the fruit used, and leave to set.
  • Sift the flour and salt together and rub in the butter and lard until the mixture resembles bread crumbs. Add the cheese, if using, and bind with a little cold water. Chill for 30 minutes and then roll out and use as above.

FRUIT JAM TARTLET COOKIES

Fruit Jam Tartlet Cookies image

Yield makes 36 cookies

Number Of Ingredients 7

1 1/2 cups all-purpose flour, plus more as needed
1/4 cup sugar
1/2 teaspoon baking powder
8 tablespoons (1 stick) cold unsalted butter, cut into 12 pieces, plus more for the baking sheet
1 large egg yolk
1/4 cup ice water, or as needed
1 1/2 cups chunky apricot, cherry, peach, or plum preserves

Steps:

  • Stir 1 1/2 cups flour, sugar, and baking powder together in a mixing bowl. Drop in the butter and toss to coat with the flour mixture. Using the tips of your fingers, rub the butter into the flour until the pieces of butter resemble small corn flakes. (Work quickly, to keep the butter as firm as possible.) Beat the egg yolk and 1/4 cup ice water in a separate, small bowl until blended. Drizzle over the flour-butter mixture and toss just until you have a rough dough. Don't overmix. If there are some pieces of unmoistened dough, drizzle more ice water, about 1 teaspoon at a time, over the dough, and toss lightly to mix. Turn out onto a work surface and knead lightly a few times, just to gather the dough into a ball. Wrap the dough tightly in plastic wrap, and refrigerate at least 1 hour or up to 1 day.
  • Lightly butter a 9 × 13-inch baking sheet. Preheat the oven to 350° F. Cut off and set aside one-third of the dough. Roll out the remaining two-thirds of the dough on a lightly floured surface to a 10 × 14-inch rectangle. (Don't worry if it's not perfectly shaped-you'll have a chance to patch the dough.) Flour the surface lightly, as necessary to keep the dough from sticking. Transfer the dough to the prepared pan, covering the bottom completely and pressing the dough along the sides. Trim any overhanging dough, and use the pieces to patch any holes and gaps. Spoon the preserves in an even layer over the dough. Roll out the remaining dough to a circle about 10 inches in diameter. Cut the dough into 1/2-inch strips. Form a lattice pattern over the preserves with the strips of dough by arranging half of them diagonally, then laying the second half of the dough strips perpendicular to the first. Bake until the dough is golden brown, about 25 minutes. Remove, and cool completely before cutting into squares. Crostate can be stored in an airtight container at room temperature for up to 3 days.

EASY JAM TARTS

Easy jam tarts image

Bake our easy jam tarts and they'll instantly become a family favourite - plus, you can make them in less than half-an-hour if you use ready-made pastry.

Provided by Miriam Nice

Categories     Afternoon tea, Dessert, Treat

Time 43m

Number Of Ingredients 5

250g plain flour, plus extra for dusting
125g butter, chilled and diced, plus extra for the tin
1 medium egg
1 vanilla pod, seeds scraped (optional)
100g jam, fruit curd or marmalade of your choice

Steps:

  • Put the flour, butter and a pinch of salt in a bowl and rub them together with your fingertips (or you can pulse these ingredients together in a food processor if you have one). When the mixture looks and feels like fresh breadcrumbs, stir in the egg and vanilla seeds, if using, with a cutlery knife. Add 1 tbsp cold water, then start to bring the dough together in one lump with your hands - try not to knead it too much. Add 1 more tbsp of water if it's not coming together, but try not to add more than that. Wrap in cling film and chill in the fridge for 30 mins.
  • Heat oven to 200C/180C fan/gas 6. Butter a 12-hole tart tin, then dust your work surface with flour. Unwrap and roll out the chilled pastry so it's about the thickness of a £1 coin, then use a straight or fluted round cutter to cut out 12 circles, big enough to line the holes in the tin. Dollop 1-2 tsp of your chosen filling into each one and, if you like, cut out little pastry hearts (perfect for Valentine's Day) and pop them on top.
  • Bake for 15-18 mins or until golden and the filling is starting to bubble a little. Leave to cool in the tin for a few mins then carefully transfer to a wire rack to cool completely.
