4 1-inch thick center-cup, bone-in pork loin chops ((allow chops to sit at room temp for 30 mins))
2 tbsp olive oil
Kosher salt and freshly ground black pepper
1 medium shallot, diced
2 tsp garlic, minced
1/2 cup capers, drained
2 tbsp Sherry vinegar
1/4 cup chicken stock
1 1/2 tbsp Dijon mustard
2 tbsp heavy cream

Steps:

  • Pre-heat oven to 200°F.
  • Pat chops dry with a paper towel, and then generously sprinkle both sides with salt and pepper.
  • In a large skillet, heat the oil over medium-high heat.
  • Add the chops and sear on one side for about 4 to 5 minutes, until golden brown on the bottoms. Flip the chops over and sear the other sides for another 4 to 5 minutes. (The chops should be firm to the touch, but still have a little give).
  • Transfer the chops to the oven to keep warm while preparing the sauce.
  • Pour all but about 1 teaspoon of oil from pan and reduce the heat to medium.
  • Add the shallots and garlic and cook until soft, about 2 to 3 minutes.
  • Add the capers and cook for 30 seconds
  • Add the vinegar and cook until slightly reduced, about 2 minutes.
  • Add the stock, mustard, a pinch of salt and pepper. Cook until slightly thickened, about 2 - 3 minutes.
  • Stir in the cream.
  • Taste and adjust seasonings.
  • Place chops on plate or platter and pour sauce over them. Pass remaining sauce at the table.

After the pork is roasted, the drippings are simmered with orange juice, garlic and a little wine to make a quick, gently sweet pan sauce that goes wonderfully well with the meat. Serve with polenta, crusty bread or rice to soak up the sauce.

1 3/4 pounds pork tenderloin
1 teaspoon kosher salt, more to taste
1/2 teaspoon ground black pepper
3 tablespoons extra-virgin olive oil
4 shallots, minced
2 1/2 tablespoons minced capers, plus a splash of their liquid
2 1/2 teaspoons chopped sage
1 1/2 teaspoons chopped rosemary
1 1/2 teaspoons chopped thyme, more for serving
1 garlic clove, finely grated or minced
1 tablespoon dry white wine or vermouth (or use more stock)
1/4 cup freshly squeezed orange juice
1/4 cup pork, chicken or other meat stock
1 to 2 tablespoons butter
Squeeze of fresh lemon juice (optional)

Steps:

  • Heat oven to 375 degrees. Slice pork tenderloin lengthwise to butterfly it, but don't quite slice all the way through: The 2 pieces should remain attached. Season with salt and pepper, then let sit while you prepare filling.
  • In a large, oven-safe skillet, heat 2 tablespoons oil over medium-high heat. Stir in shallots, 1/2 tablespoon capers, 2 teaspoons sage, 1 teaspoon rosemary, 1 teaspoon thyme and salt and pepper to taste. Stirring frequently, cook until shallots start to brown, about 5 minutes, then stir in garlic and cook until fragrant, about 1 minute. (Adjust heat if necessary to prevent burning.) Transfer to a plate to cool slightly. Wipe out skillet and reserve.
  • Spread cooled filling evenly on pork, then close pork, along the hinge, like a book. Then fold the thinner end up against the thicker portion so that pork is the same width all over. Tie with kitchen twine at 1 1/2-inch intervals.
  • In the same skillet, heat remaining 1 tablespoon oil over medium heat until oil is hot but not smoking. Place tenderloin seam-side up in the skillet, then transfer to oven and roast for 15 minutes. Flip pork over and continue roasting until meat reaches 140 to 145 degrees in the center, about 10 minutes longer. Transfer meat to a cutting board to rest; reserve skillet and juices.
  • While the meat rests, make the sauce: Heat skillet over medium-high heat, then stir in vermouth and the remaining 1/2 teaspoon each sage, rosemary and thyme, scraping up the browned bits on bottom of pan. Cook until vermouth is almost evaporated, then add orange juice and stock, and cook over medium-high heat until thickened and syrupy. Whisk in remaining 2 tablespoons capers, their liquid and the butter; season with salt and pepper to taste. If the sauce tastes too sweet, add a squeeze of lemon juice.
  • To serve, slice pork into 1/2-inch-thick slices and top with sauce and fresh thyme.

2 tablespoons dijon-style mustard
18 ounces pork tenderloin
1 1/2 cups shredded spinach leaves
1/2 cup assorted snipped fresh herb (such as sage, thyme, rosemary, and/or basil)
3 tablespoons Italian breadcrumbs
1 egg white, slightly beaten
2 teaspoons olive oil or 2 teaspoons cooking oil
fresh coarse ground black pepper
snipped fresh chives (optional)
1/3 cup sour cream
2 tablespoons mayonnaise
2 teaspoons dijon-style mustard
1 teaspoon honey

Steps:

  • Trim any fat from meat.
  • Using a sharp knife, make a lengthwise cut down the center of roast, cutting to, but not through, the other side.
  • Spread the meat flat.
  • Place tenderloin between 2 sheets of plastic wrap and pound meat lightly with the flat side of a meat mallet to about a 13x8-inch rectangle.
  • (If necessary, use a portion of a second tenderloin to make 18 ounces. Overlap and pound the pieces to make a single rectangle.) Fold in the narrow ends as necessary to make an even rectangle.
  • Spread mustard evenly over tenderloin.
  • Stir together spinach, herbs, bread crumbs, and egg white in a medium bowl.
  • Spoon evenly over pork.
  • Roll tenderloin up jelly-roll style, beginning at narrow end.
  • Tie meat with string, first at center, then at 1-inch intervals.
  • Place meat on rack in a shallow roasting pan.

5 ounces spinach, coarse stems discarded, finely chopped

1 (1-pound) pork tenderloin
1 hard-boiled egg, quartered lengthwise
1 tablespoon vegetable oil
For sauce:
2 hard-boiled eggs
3 tablespoons olive oil
2 tablespoons mayonnaise
1 tablespoon coarse-grain mustard
2 tablespoons fresh lemon juice
1 tablespoon drained capers,

Steps:

  • Make spinach stuffing:
  • Cook bacon in a 12-inch heavy ovenproof skillet over medium heat, stirring occasionally, until fat is rendered and bacon is golden but not crisp.
  • Add garlic and cook, stirring occasionally, until pale golden, about 2 minutes. Add spinach and cook, turning with tongs, until wilted and tender, about 3 minutes. Toss spinach with mustard and 3/4 teaspoon each of salt and pepper in a bowl.
  • Butterfly tenderloin:
  • Arrange tenderloin on a work surface with pointed (thinner) end nearest you. Starting at top (thicker part), make a lengthwise incision down center of tenderloin, cutting two thirds of the way through thickness of meat, adjusting depth of incision as tenderloin tapers (be careful not to cut all the way through). Open tenderloin. Turning knife horizontally, cut tenderloin open on either side like the flaps of a book jacket, being careful not to cut all the way through.   • Turn tenderloin so that a long side is nearest you, then spread spinach filling evenly over opened tenderloin, leaving a 1-inch border along long edge farthest from you. Arrange egg quarters, end to end, along edge nearest you.
  • Preheat oven to 425°F with rack in middle.
  • Roll up tenderloin tightly, then tie with string at 1 1/2-inch intervals.
  • Pat tenderloin dry and season with 1/4 teaspoon salt and 3/4 teaspoon pepper.
  • Heat oil in cleaned skillet over high heat until it shimmers. Sear tenderloin, turning occasionally, until golden brown, 8 to 10 minutes. Transfer skillet to oven and roast until an instant-read thermometer inserted diagonally 2 inches into thickest part registers 150°F, 18 to 25 minutes.

Steps:

  • Preheat the oven to 425 degrees F. Prepare the pork: Whisk the thyme, rosemary, garlic, mustard and vegetable oil until emulsified. Season with salt and pepper.
  • Rub the pork liberally with the herb-mustard mixture, then place fat-side up on a rack set inside a heavy-bottomed roasting pan. Roast until the pork is caramelized and a thermometer inserted into the center registers 145 degrees F, 55 to 60 minutes. Transfer to a cutting board and let rest 10 minutes.
  • Meanwhile, make the sauce: Pour off all but 2 tablespoons drippings from the roasting pan, then heat on the stove over medium heat. Add the mushrooms and cook until caramelized, 6 to 8 minutes. Add the shallots and cook until translucent, about 2 more minutes. Remove the pan from the heat and add the cognac, then return to the heat and scrape up any browned bits from the bottom of the pan with a wooden spoon. Simmer until almost all of the liquid has evaporated. Whisk in the stock, mustard and thyme. Bring to a boil and cook until reduced by half, 8 to 10 minutes.   • Make the mayonnaise: Whisk the egg yolks, lemon juice and1 teaspoon salt in a bowl until frothy. Slowly drizzle in the vegetable oil, whisking constantly until completely emulsified.
  • Make the potato salad: Cook the bacon in a skillet until crisp. Transfer to a paper towel-lined plate to cool, then chop into small bits.
  • Slice the potatoes 1/4 inch thick; transfer to a pot, cover with water and lightly season with salt. Bring to a simmer over medium heat and cook until just fork tender, 8 to 10 minutes. Drain well.
  • Combine the bacon, capers, vinegar and chives in a large bowl. Add 1/4 cup mayonnaise (reserve the rest for another use). Gently fold in the warm potatoes and season with salt and pepper.
  • Cook the bacon in a Dutch oven over medium heat until just crisp. Add the onion and garlic and sweat until translucent, 8 to 10 minutes. Add the cabbage and stir to coat in the rendered bacon fat. 1 1 1/2 pound pork tenderloin (silverskin removed)
1-2 Tablespoons Award-Winning Chicken Seasoning
2 slices thick cut bacon (diced)
4 oz cream cheese (softened)
3 oz manchego cheese (grated)
1/2 cup baby spinach leaves
1 large red onion (cut into rings)
2 Tablespoons butter
2 Tablespoons balsamic vinegar

Steps:

  • Cook the bacon. Preheat a 9 inch cast iron skillet over medium-high heat. Add the bacon pieces and cook until the fat is rendered and the bacon pieces are crisp. Remove the bacon pieces to a paper towel to drain and leave the bacon fat in the pan.
  • Make the balsamic caramlized onions. Add the butter and the sliced red onions to the empty skillet. Cook for about 20 minutes over medium heat, stirring occasionally, until the onions have darkened considerably in color. Reduce the heat to low and stir in the balsamic vinegar. Remove the onions from the pan and set aside.
  • Remove the fat from the tenderloin. Place the pork tenderloin on a large cutting board. Remove any excess fat or silverskin from the exterior of the tenderloin.
  • Butterfly the pork. Butterfly open the pork tenderloin by using long strokes of your knife along the side of the tenderloin about 1/2 inch above the cutting board. Keep the slices parallel to the cutting board and roll open the tenderloin while slicing.
  • Stuff the tenderloin. Spread the softened cream cheese on top of the butterflied tenderloin. Sprinkle with the shredded manchego cheese, caramelized onions, baby spinach leaves, and bacon pieces.
  • Fire up the grill. Preheat your grill to Medium-High heat (about 375 degrees F) for two-zone cooking (one indirect heat side of the grill, one direct heat side). You can also cook this in your oven at the same temperature.
  • Roll and secure. Starting with the edge of the pork tenderloin that was the inside (before slicing open) begin tightly rolling the tenderloin back up. It's okay if there are a few casualties that fall out the sides while rolling. Tie the roll together with butcher's twine every inch to inch and a half until the roll is nice and bound. Season the pork tenderloin liberally with the Chicken Seasoning.
  • Grill the tenderloin. Place the stuffed pork tenderloin directly on the grill grates on the indirect heat side of the grill. Cook for approximately 20-30 minutes or until the internal temperature of the tenderloin is 145 degrees F in the thickest part of the meat. Turn the pork tenderloin every 5 minutes while cooking.
  • Rest and serve. Remove the tenderloin from the grill. Allow it to rest at least 5-10 minutes before removing the butcher's twine, slicing the tenderloin into 1 inch thick rounds, and serving.

Pinch red pepper flakes
5 cups packed baby spinach

1/2 a 7 ounce container sundried tomatoes packed in oil (About 6 tomato pieces), chopped
3 ounces feta cheese
1/4 cup balsamic vinegar
2 Tablespoons olive oil
2 teaspoons dijon mustard
1 Tablespoon rosemary, chopped
1 teaspoon lemon zest
3 cloves garlic, grated
1 heaping teaspoon Kosher salt
1/2 teaspoon black pepper

Steps:

  • Preheat the oven to 425 degrees.
  • Heat the oil in a small skillet over medium heat. Add the pepper flakes and grate the 3 cloves of garlic into the oil. Saute until fragrant, about 30 seconds. Steps:

  • In a medium sauce pan, melt butter over medium heat.
  • Saute onion, celery, and garlic for 4 minutes or until tender; remove from heat.
  • Add in rice, cranberries, apricots, orange peel, thyme, salt, and pepper to taste; mix well.
  • Stir in apple juice to moisten; set stuffing aside.
  • Make a centered cut down the length of each pork tenderloin, cutting to but not through the other side of the meat.
  • Make one cut on each side of the centered cut, also going to but not through the other side of the meat.
  • Place each tenderloin between 2 pieces of plastic wrap (Saran).
  • Pound lightly with a meat mallet to make an appoximate 10x8 inch rectangle, pounding from the center to the corners.
  • Sprinkle each tenderloin with salt and pepper.
  • Spoon half of the stuffing mix over each tenderloin, coming to within 1 inch of the edges.
  • Roll each tenderloin jelly-roll style beginning with the short side.
  • Tie each meat roll with cotton string in about 4-5 equally spaced places (This is to secure the meat roll and keep it from unrolling).
  • Place roll seam side down on a rack in a shallow roasting pan.
  • Roast, uncovered at 375 degrees for 50-60 minutes or until done.
  • Loosely cover with foil and let stand for 5 minutes before slicing.
  • Prepare Mustard Cranberry Sauce: In a small saucepan, melt butter or medium heat.
  • Saute garlic for 1 minute.
  • Stir in flour and mustard; mix well.
  • Cook and stir until thickened and bubbly; cook and stir 1 minute more.
  • Stir in half and half and dried cranberries; cook until heated through.
  • Cut tenderloins into 1/2 inch thick slices; drizzle with Mustard Cranberry Sauce.

2 pork tenderloins (1¾ to 2 lbs total)
½ cup (packed) light brown sugar
½ cup grainy Dijon mustard (such as Maille Rich Country Dijon Mustard Blend or Grey Poupon Country Dijon)
½ cup dry sherry
1 tablespoon chopped fresh rosemary
Salt
1 tablespoon vegetable oil, for cooking
Freshly ground black pepper
5 tablespoons unsalted butter, cut into 5 pieces

Steps:

  • Pat the tenderloins dry with paper towels.
  • In a medium bowl, whisk together the brown sugar, mustard, sherry, and rosemary.
  • Place the tenderloins in a baking dish or bowl. Season all over with 1¼ teaspoons salt and pour about one-third of the marinade over top. Turn the tenderloins a few times to coat evenly with the marinade. Marinate for at least 1 hour or as long as overnight (the longer, the better). Cover the remaining marinade and refrigerate until ready to use (it will form the base of the sauce).
  • Preheat the oven to 350°F and set an oven rack in the middle position.
  • Heat the oil in a large cast iron or oven-safe skillet over medium-high heat (see note below if you don't have one of these pans). Add both tenderloins and sear on all sides until nicely browned, 6 to 8 minutes (don't move the tenderloins around between turns; they will brown better if left alone). Transfer the skillet to the oven and cook until the pork registers about 140°F on an instant-read thermometer, 12 to 15 minutes. (To check for doneness without a thermometer, make a slit in the thickest part of the loin; the meat should be mostly white with a slight hint of pale pink, and the juices should run mostly clear.)
  • Remove the skillet from the oven and immediately place an oven mitt or dishtowel over the handle to remind yourself that it is hot (it is easy to forget and burn yourself!). Transfer the tenderloins to a cutting board. Tent with foil and let rest for about 10 minutes, then cut into ¼- to ½-inch slices.
  • Meanwhile, pour the remaining marinade into a small skillet and bring to a gentle boil over medium-high heat. Remove the pan from the heat and, stirring constantly, incorporate the butter one piece at a time. Add ⅛ teaspoon salt and a few grinds of pepper. Taste and adjust seasoning if necessary. Arrange the sliced tenderloin on a platter and drizzle with a bit of the sauce; pass the remaining sauce at the table.
  • Note: If you don't have an oven-proof skillet, transfer the pork to a foil-lined sheet pan after searing. (The foil is just for easy cleanup.) You may need to add a few minutes to the baking time.

2 cups roughly chopped mushrooms
4 ounces fresh andouille or hot pork smoked sausage, finely chopped

Splash whiskey
Cornbread, dried out and crumbled, about 1/2 cup
2 tablespoons chopped curly parsley leaves
2 pork tenderloins
1 tablespoon Dijon mustard
Oil, for grilling
Salt and freshly ground black pepper
Grilled Kale, for serving, recipe follows
Grilled Peach Whiskey Beurre Blanc, for serving, recipe follows
2 bunches kale, ribs removed
1 teaspoon smoked paprika
1/2 lemon
Kosher salt and freshly cracked black pepper
Oil, for coating peaches
3 peaches, halved and pitted
1 tablespoon butter, plus 8 tablespoons, cubed and chilled
1 shallot, chopped
1 habanero, diced
1/2 teaspoon grated or finely chopped fresh ginger
1/4 cup whiskey
1/2 cup cream
1 teaspoon honey

Steps:

  • Put the shallot, garlic and mushrooms in the bowl of a food processor. Pulse until finely chopped. Add the sausage, again pulsing until incorporated with the mushroom mixture. Season with salt and pepper, to taste. Pulse again.
  • Heat the oil in a large saute pan over medium-high heat.
  • Add the mushroom-sausage mixture and cook until the liquid has evaporated, about 8 to 10 minutes
  • Deglaze with a splash of whiskey, using a wooden spoon to scrape up the brown bits stuck to the bottom of the pan.
  • Remove the pan from the heat and add the crumbled cornbread and parsley. Mix to combine. Set aside.
  • Cut tenderloins lengthwise, but not through, to open and lay flat. Lightly pound to even the meat, if needed. Paint the tenderloins lightly with mustard, then add the stuffing mixture. Roll up the tenderloins and tie the middle of the roll with kitchen string to secure. Repeat the ties about every 1 to 2 inches. Drizzle with oil, season with salt and pepper, to taste, and put on the grill to sear. Remove the tenderloins from direct heat to indirect heat and tent with foil. Grill until the internal temperature registers about 140 to 145 degrees F on an instant-read thermometer, another 15 minutes. Remove the tenderloins to a cutting bowl and let rest before slicing into medallions.
  • Arrange a bit of grilled kale on center of each serving plate and top with 3 slices of pork medallions. Drizzle the beurre blanc over the medallions and around the rims of the plate.
  • Preheat the grill over medium heat.
  • Lay the kale flat on the grill (not over the hottest part, about 375 degrees F) and cook until the kale begins to wilt and the edges become slightly crisp and brown. Remove the kale to a bowl. Add the smoked paprika, a squeeze of fresh lemon juice and salt and pepper, to taste. Toss to combine.
  • Lightly oil the peach halves and put on the grill for 3 to 5 minutes to slightly soften, flavor and mark. Melt 1 tablespoon of butter in a large saucepan and add the shallots, habanero and ginger. Saute for about 1 to 2 minutes. Chop the peaches, add them to the pan and cook for 1 minute. Remove the pan from the heat to add the whiskey and then return to the heat to cook until the liquid is reduced by half. Add the cream and the honey and allow it to reduce again by half. Strain and finish the sauce by slowly whisking in the cold butter.

1 1/4 pound pork tenderloin
1 teaspoon Italian seasoning
1/3 cup sun dried tomatoes (sliced)
1/2 box frozen spinach (thawed and excess water squeezed out)
3/4 cup shredded mozzarella cheese
1 1/2 tablespoona olive oil
1 pound small potatoes (, sliced or cut into 1 inch pieces)
Salt and pepper to taste
Cooking spray
1 tablespoon chopped parsley

Steps:

  • Preheat the oven to 400 degrees F. Line a sheet pan with foil and coat it with cooking spray.
  • Cut a deep slit all the way down the length of the pork - do not cut all the way through. Lay the pork open like a book and pound to approximately 3/4 inch thick with a meat mallet.
  • Sprinkle the Italian seasoning, salt and pepper over the pork. Layer the spinach, cheese and sun dried tomatoes over one side of the pork.
  • Roll the pork up tightly and secure with lengths of kitchen twine - tie each string about 2-3 inches apart.
  • Season the outside of the pork generously with salt and pepper. Place the pork on the lined sheet pan.
  • Place the potatoes in a bowl. Add the olive oil to the bowl; toss the vegetables to coat and season to taste with salt and pepper.
  • Place the potatoes on the sheet pan around the pork.
  • Place the pan in the oven and cook for 30 minutes or until potatoes are browned and tender and the internal temperature of the pork reaches between 145 degrees F. (medium rare) and 160 degrees F. (medium), on a meat thermometer.
  • Remove pork from heat and let rest for 5 minutes. Remove the string and slice the pork. Sprinkle with parsley and serve immediately with the potatoes.
