- Preheat the oven to 325 degrees F. Spray an 8-inch square baking pan with nonstick baking spray.
- For the brownie batter: Place the chocolate in a microwave-safe bowl. Melt the chocolate in the microwave in 30-second increments, being careful not to let it burn. Set it aside to cool slightly.
- In a medium mixing bowl, cream the butter and granulated sugar. Beat in the eggs. With the mixer on low speed, drizzle in the melted chocolate. Add the vanilla extract and mix. Add the flour to the bowl and mix just until combined; do not over mix.
- Pour the batter in the prepared baking pan. Spread it to even out the surface. Bake until the center is no longer soft, 40 to 45 minutes. Set the brownies aside to cool completely before icing.
- For the icing: In a large mixing bowl, combine the butter, powdered sugar, cocoa powder, salt and vanilla. Mix until slightly combined, then add 1/2 cup of the coffee. Whip until the icing is light and fluffy. If the icing is overly thick, add 1/4 cup more coffee. It should be very light and fluffy.
- Ice the cooled brownies, spreading the icing on thick. Refrigerate until the icing is firm, and then slice the brownies into squares.
MOCHA FUDGE SAUCE
Steps:
- In a medium saucepan, combine the condensed milk, chocolate, butter and espresso and cook over low heat, stirring, until the chocolate is completely melted and the sauce is smooth. Remove from the heat and stir in the vanilla. Transfer the sauce to a small pitcher. Serve over ice cream.

- Preheat oven to 350°. Sift together flour, baking powder and salt; set aside. In a small saucepan over low heat, melt butter. Remove from heat; stir in cocoa, oil and instant coffee granules. - Preheat the oven to 350 degrees F. Spray an 8-inch square baking pan with cooking spray.
- Microwave the chocolate in a small microwave-safe bowl in 30-second intervals, stirring in between each, until fully melted, 1 to 2 minutes. Set aside.
- Beat the sugar, butter and eggs in a stand mixer fitted with the paddle attachment on medium-high speed until pale and fluffy, about 2 minutes. Whisk together the flour, salt and baking powder in a medium bowl. On low speed, slowly add the flour mixture to the butter mixture and mix until combined. Slowly add the melted chocolate, milk and coffee and mix until fully incorporated. Pour into the prepared baking pan and smooth the top with a rubber spatula.
- Bake until a toothpick comes out clean, about 30 minutes. Let cool completely in the pan, then cut into 16 squares.

- Preheat oven to 160°C.
- Brush a 20cm (base measurement) springform pan with melted butter to lightly grease, then line the base and side with non-stick baking paper.
- Place the dark chocolate and butter in a large heatproof bowl over a saucepan half-filled with simmering water (make sure the bowl doesn't touch the water). Use a metal spoon to stir occasionally until the chocolate melts and the mixture is smooth.
- Combine the sugar, flour, cocoa powder and milk chocolate in a large bowl. Add the dark chocolate mixture and eggs and stir until just combined.
- Pour into the prepared pan.
- Bake in oven for 1 hour 20 minutes or until crumbs cling to a skewer inserted into the centre.
- Set aside for 2 hours to cool.
- Meanwhile, to make the mocha sauce, place the dark chocolate, thickened cream and coffee in a medium saucepan over low heat.
- Use a metal spoon to stir until the chocolate melts and the mixture is smooth.
- Dust the brownie with cocoa powder. Cut into wedges. Divide among serving plates.
- Top with mocha sauce and double cream to serve.

- Brownies: Preheat oven to 180°C or 350°F.
- Cook the sugar, margarine and cocoa powder on stove over medium until the margarine is melted.
- Remove from heat, add eggs and vanilla. Stir.
- Add remaining ingredients (flour, baking powder and salt).
- Stir in nuts.
- Put in greased 20cm (8 inch) square pan.
- Bake at 180°C or 350°F for 25 minutes.
- Sauce: Combine melted margarine, sifted cocoa and water in a microwave proof bowl.
- Blend in condensed milk with wire whisk.
- Microwave on high for 1 minute, then whisk to blend.
- Microwave 1 1/2 minutes more on high. Add vanilla and blend with whisk completely.
- Serve hot with brownies and ice-cream of choice.
- To preserve: Leave to cool, put in jar with lid and refrigerate.
- To reheat: Remove lid from jar and microwave. If the sauce is too thick, add some water.

- Preheat oven to 375°F. Line a 15- by 10- by 1-inch baking pan with foil, allowing 2 inches of foil to hang over ends of pan, and grease foil well (except overhang) with 1 tablespoon butter.
