Prep Ina Garten's recipe for Cauliflower Gratin from Barefoot Contessa on Food Network ahead as a creamy, cheesy vegetable side for a no-stress dinner party.

1 (3-pound) head cauliflower, cut into large florets
Kosher salt
4 tablespoons (1/2 stick) unsalted butter, divided
3 tablespoons all-purpose flour
2 cups hot milk
1/2 teaspoon freshly ground black pepper
1/4 teaspoon grated nutmeg
3/4 cup freshly grated Gruyere, divided
1/2 cup freshly grated Parmesan
1/4 cup fresh bread crumbs

Steps:

  • Preheat the oven to 375 degrees F.
  • Cook the cauliflower florets in a large pot of boiling salted water for 5 to 6 minutes, until tender but still firm. Drain.
  • Meanwhile, melt 2 tablespoons of the butter in a medium saucepan over low heat. Add the flour, stirring constantly with a wooden spoon for 2 minutes. Pour the hot milk into the butter-flour mixture and stir until it comes to a boil. Boil, whisking constantly, for 1 minute, or until thickened. Off the heat, add 1 teaspoon of salt, the pepper, nutmeg, 1/2 cup of the Gruyere, and the Parmesan.
  • Pour 1/3 of the sauce on the bottom of an 8 by 11 by 2-inch baking dish. Place the drained cauliflower on top and then spread the rest of the sauce evenly on top. Combine the bread crumbs with the remaining 1/4 cup of Gruyere and sprinkle on top. Melt the remaining 2 tablespoons of butter and drizzle over the gratin. Sprinkle with salt and pepper. Bake for 25 to 30 minutes, until the top is browned. Serve hot or at room temperature.

1 1/2 lb firm-ripe Seckel (9), Forelle (6), or Bartlett (3) pears
2 tablespoons unsalted butter
1/2 cup Calvados or Cognac
5 tablespoons packed light brown sugar
24 dried apricots (preferably California; 5 oz)
18 pitted prunes (dried plums; 7 oz)
6 (2- by 1/4-inch) strips fresh lemon zest
1 cup mascarpone cheese* (8 oz)
2 tablespoons confectioners sugar

Steps:

  • Preheat oven to 400°F.
  • Halve apples lengthwise (quarter if large), leaving stem intact, and core halves with melon-ball cutter. Halve Seckel and Forelle pears or quarter Bartletts lengthwise, then core with melon-ball cutter and trim root ends.
  • Melt butter in a 14- by 9-inch oval gratin dish or other 2 1/2- to 3-quart shallow baking dish in middle of oven, about 2 minutes. Stir in Calvados and 3 tablespoons brown sugar, then add fresh and dried fruit and zest and turn gently to coat. Cover dish tightly with foil and bake in middle of oven, gently turning fruit and basting occasionally with juices, until apples and pears are tender but not falling apart, about 1 hour. Remove dish from oven.
  • Preheat broiler.
  • Spoon 1/3 cup baking juices from baking dish into a bowl and stir in mascarpone and remaining 2 tablespoons brown sugar. Rearrange fruit, cut sides up, in baking dish to form an even layer, if necessary, and spoon mascarpone mixture over fruit. Put confectioners sugar in a fine-mesh sieve and sift over fruit. Broil gratin 3 inches from heat until confectioners sugar is caramelized, 1 to 2 minutes.

2 x 320g ready-rolled all-butter puff pastry
100g icing sugar
750g tub mascarpone
600ml double cream
2 tsp vanilla extract
200g raspberries , a few halved
200g blackberries , a few halved
1 large mango , peeled and thinly sliced
6 nectarines or peaches, or a mixture, sliced
4 passion fruits (look for ones with crinkly skin, this means they're ripe), halved, seeds and pulp scooped out
handful small mint leaves

Steps:

  • Heat oven to 200C/180C fan/gas 6. Unroll 1 pastry sheet, but leave it on the parchment. Place it on a baking tray, dust with 2 tbsp icing sugar, then cover with another sheet of parchment and another baking tray. Pour baking beans into the tray to weigh it down, or use empty cans. Bake for 30 mins, then check if the pastry is golden all over. If not, return for another 5 mins or so. Repeat with the other pastry sheet (or cook both together if you have enough trays). Once out of the oven, trim the edges with a large, sharp knife. Leave to cool.
  • Softly whip the mascarpone, cream, vanilla and remaining icing sugar, then transfer half to a disposable piping bag fitted with a 1.5cm round nozzle (or just snip off the corner). Pipe blobs of the mascarpone cream over the surface of one piece of pastry, right up to the edges. Top with half the fruit and dust with a little icing sugar.
  • Top with the second piece of pastry, more mascarpone cream (refilling the bag when you need to), the remaining fruit, a dusting of icing sugar and, finally, some mint leaves. Use a serrated knife to cut through the layers without squashing the whole tart. Best served within an hour or two, but leftovers will keep for up to two days in the fridge.

Steps:

  • Blanch the cauliflower in a pot of boiling salted water 5 minutes; drain. Heat oven to 375 degrees. Coat a 7 x 11 gratin dish with butter; arrange cauliflower in dish. 2 tablespoons heavy cream

Steps:

  • Combine the apricots, plums, kiwi and cherries in a bowl. In a separate bowl, combine the mascarpone, honey, vanilla and vanilla seeds. Add the heavy cream and stir until combined.
  • Pour the mascarpone mixture over the fruit, and serve.

For the pastry cream
1 cup milk
1 egg
1 egg yolk
2 tablespoons flour
2 tablespoons sugar
Half a fresh vanilla bean, scraped, or 1/4 teaspoon vanilla extract
For the mascarpone chantilly
1 recipe Pastry Cream (see above)
1 cup mascarpone cheese, at room temperature
1/2 cup heavy cream, whipped to soft peaks
For the fruit filling
1 pint each: raspberries, blackberries, and blueberries
1 ripe mango, peeled and cut into 1/2-inch dice

Steps:

  • First you'll make a pastry cream and then fold in both mascarpone and whipped cream.
  • Prepare the pastry cream:
  • Scald the milk.* Whisk together the egg, egg yolk, flour, and sugar in a small bowl. Slowly pour the scalded milk into the egg mixture while whisking constantly. When all the milk has been incorporated, pour it back into the pan and return to the heat. Bring to a boil while stirring constantly. Cook for 2 minutes to cook out the raw flavor of the flour. Stir in the vanilla beans or vanilla extract. Pass through a sieve to remove any lumps and cover with plastic wrap pressed right down onto the surface of the pastry cream to prevent a skin from forming. Cool.
  • Make the mascarpone chantilly:
  • In a large bowl, fold together the cooled pastry cream, mascarpone, and whipped cream.
  • Assemble the gratin:
  • Preheat oven to 450��F. Scatter the berries and diced mango over the bottom of a 9-by-11-inch baking dish with low sides. (Low sides in the pan allow for better browning, because the air current moves easily over the surface of the food.) Spoon the mascarpone chantilly evenly over the berries and mango. Place dish in the hot oven for about 10 minutes, and cook until the berries have popped open a bit and the surface of the gratin has browned. Serve warm from the oven.
  • *To scald means to bring the milk just up to under a boil so you get a skin on top.

This is a wonderful dessert, I love it with vanilla ice cream! Change the fruit to what is available or to what you prefer. I also like to make this in the winter with canned plums and then serve it with cinnamon ice cream. You can also finish the meringue under the grill. Standing time not included.

2 lbs fruit (a mix of strawberry, raspberry, blackberry, red currants or blueberries)
3 peaches
2 cups crumbled macaroons (approx) or 2 cups amaretti cookies (approx)
8 tablespoons orange juice
1 grated lemon, zest of
2 egg whites
2 tablespoons caster sugar (or icing sugar)
1/2 teaspoon vanilla essence
mint leaf (to garnish)

Steps:

  • Clean the fruits, remove the stone of the peaches and chop in cubes.
  • Put all the fruit in an oven-proof dish.
  • Top with the crumbled macaroons.
  • Mix the orange juice with the lemon zest and sprinkle over the fruit and cookies and leave for about half an hour.
  • Preheat oven to 375°F.
  • Whisk the egg whites in a very clean bowl, when stiff add the sugar gradually with the vanilla essence, whisk untill glossy.
  • Spread the egg whites on top of the fruit and cookie mixture, try to pattern it a bit.
  • Bake for approx 10 minutes (keep an eye on it) until colored to your liking.
  • Serve garnished with mint and a scoop of ice cream (optional).

1 to 1 1/2 pounds perfectly ripe soft fruit like peaches, plums, berries, figs or a combination
1 cup heavy cream
3 tablespoons sugar
1 teaspoon vanilla extract

Steps:

  • Preheat broiler; set rack as close to heat source as possible (even 2 inches is not too close).
  • Wash, pit, stem and peel the fruit as necessary. Cut stone fruit in halves or slices, as you prefer. Cut strawberries in thick slices; leave smaller berries whole. Place the fruit (at least 2 cups full) in a baking or gratin dish just large enough to hold it.
  • Whip cream with 2 tablespoons of sugar until it is thick and just barely holding soft peaks; stir in the vanilla extract. Pour cream over and around the fruit. Sprinkle with remaining sugar.
  • Broil carefully, allowing cream to brown all over and even burn in a couple of spots; rotate baking dish during broiling if necessary. Remove and serve.

4 ounces dried porcini mushrooms (*)
1 cup boiling water
2 tablespoons butter
2 tablespoons extra virgin olive oil
1/4 cup parmesan cheese, plus
2 tablespoons grated parmesan cheese
1 1/2 cups mascarpone cheese (** from about 1 1/2 seven-ounce containers)
1 cup whipping cream
3 garlic cloves, chopped
1 pinch of freshly grated nutmeg
2 1/2 lbs russet potatoes, peeled, cut crosswise into 1/8-inch-thick slices (about 5 large)

Steps:

  • Place porcini and 1 cup boiling water in medium bowl. Place small bowl atop mushrooms to keep submerged. Let soak 20 minutes. Drain and coarsely chop mushrooms.
  • Melt butter with oil in medium skillet over medium heat. Add mushrooms and sauté until beginning to brown, about 3 minutes. Sprinkle with salt and pepper. Remove from heat. Whisk 1/4 cup Parmesan and next 4 ingredients in small bowl; season with salt and pepper.
  • DO AHEAD: Mushrooms and cheese mixture can be prepared 1 day ahead. Cover separately and chill.
  • Preheat oven to 325°F Butter wide shallow 2-quart baking dish. Arrange 1/4 of potato slices in bottom of dish. Sprinkle lightly with salt and pepper. Scatter 1/4 of mushrooms over. Repeat. Spread half of cheese mixture over, shaking dish to settle. Repeat with remaining potatoes and mushrooms in 2 layers each; spread remaining cheese mixture over. Sprinkle 2 tablespoons Parmesan over. Place gratin dish on rimmed baking sheet.
  • Bake gratin until top is brown and sauce is bubbling at edges, about 1 hour 15 minutes. Let gratin rest 15 minutes before serving.
  • DO AHEAD: Can be made 2 hours ahead. Let stand at room temperature. Tent loosely with foil and rewarm in 300°F oven 20 minutes.
