Pull apart cheese bread is a great option for an appetizer. Also good served with a marinara sauce dip.

24 dinner rolls, frozen, slightly thawed (Rhodes is the brand used here)
4 eggs
1/4 cup green onions, sliced thin
2 tablespoons garlic powder
8 tablespoons butter, melted
1/2 teaspoon salt
1 tablespoon minced garlic
1/2 cup Parmesan cheese, grated

Steps:

  • Preheat oven to 350 degrees and grease a bundt pan with cooking spray.
  • Add eggs, onions, garlic powder, and salt in a mixing bowl. Beat well by hand. Add melted butter and mix well.
  • Cut each roll in half and roll into a ball. Dip into egg mixture, several dough balls at a time, and place into prepared pan. Once the first layer of dough is in the pan, add minced garlic and shredded cheese.
  • Repeat by adding dough to egg mix and adding a second layer.
  • Bake for 25-30 minutes or until golden brown.
  • Cool, upside down, on a cooling rack before serving.

Studded with melty cheese and herbs, this garlic bread couldn't be easier! I like to buy a crusty round loaf of bread right from the bakery section of my grocery store. Be careful not to cut all the way through the loaf-you don't want the cheese to ooze out the bottom and stick to the pan.

1 small round loaf sourdough bread (7 ounces)
4 tablespoons unsalted butter
1/3 cup chopped fresh parsley, plus for more garnish
1 teaspoon onion powder
Pinch kosher salt
5 cloves garlic, minced
4 ounces mozzarella, cut into 1/2-inch cubes

Steps:

  • Preheat the oven to 350 degrees F.
  • Score the bread with 2-inch-deep cuts with a serrated knife into a 1-inch diamond pattern without slicing all the way through. Place on a parchment paper-lined baking sheet.
  • Melt the butter in a small saucepan over medium heat. Stir in the parsley, onion powder, salt and garlic. Brush the butter mixture all over the bread and into the cut diamonds using a pastry brush. Insert the cheese cubes in the crevices of the bread.
  • Cover the bread with aluminum foil and bake for 30 minutes. Uncover and bake until the cheese is melted and bubbly, 8 to 10 more minutes. Sprinkle with more fresh parsley. Serve hot!

8 cloves garlic, peeled
2 tablespoons olive oil
Kosher salt and freshly ground black pepper
1/2 cup grated mozzarella
1/2 cup grated fontina
1/2 cup grated Parmesan
1/2 cup grated Romano
2 teaspoons chopped chives
1/2 teaspoon crushed red pepper flakes
1 round artisan or sourdough loaf
1 stick (1/2 cup) salted butter, melted

Steps:

  • Preheat the oven to 375 degrees F.
  • Put the garlic cloves on a square of heavy foil, drizzle with the olive oil and sprinkle on some salt and pepper. Wrap it up and bake until the garlic is golden, nutty and mushy, about 1 hour. Let cool. Lower the oven temperature to 350 degrees F.
  • Mix the garlic together with the 4 cheeses, chives, crushed red pepper flakes and some black pepper in a bowl.
  • Cut the bread in strips in one direction, being careful not to cut all the way through the loaf. Rotate the bread 90 degrees and cut in the other direction. Stuff the cheese mixture in between the rows. Drizzle the melted butter all over the top.
  • Wrap in foil and bake for 25 minutes. Open up the foil and bake until the cheese is hot and bubbly, another 10 minutes. Serve immediately.

Smoky cheese and bacon combine with the natural sweetness of caramelized onions in this hot, crusty party bread that is meant for sharing.

1/4 pound bacon (3 to 4 slices), cut into 1/4-inch dice
3 large onions, thinly sliced (about 8 cups)
1 stick (8 tablespoons) unsalted butter, at room temperature
2 teaspoons chopped fresh thyme
Kosher salt and freshly ground black pepper
One 1 1/2-pound round rustic loaf of bread, such as sourdough or Italian
4 ounces smoked Gouda, shredded
4 ounces mozzarella, shredded
2 tablespoons chopped fresh parsley

Steps:

  • Preheat the oven to 350 degrees F. Line a baking sheet with parchment paper.
  • Heat a large skillet with a lid over medium-high heat and add the bacon. Cook, stirring occasionally, until the bacon is golden brown, about 9 minutes. Transfer the bacon to a plate using a slotted spoon. Add the onions to the skillet and cook, covered, stirring occasionally and scraping up the stuck bits on the bottom of the pan as needed, until the onions release their juices and are caramelized, golden and soft, about 30 minutes. (If the onions begin to brown before they soften, stir in a tablespoon water, lower the heat and return to cooking.)
  • Combine the butter, thyme, 1 teaspoon salt and some pepper in a medium bowl. Stir in the onions until the butter melts and becomes saucy.
  • Meanwhile, with a large serrated knife, shave 1/4 inch off the bottom crust of the bread.. Make 1-inch wide crosshatch cuts on the top of the bread, three-quarters of the way through to the bottom. Put the bread on the prepared baking sheet.
  • Spoon 3/4 of the onion mixture into all of the slits. Mix together the Gouda and mozzarella in a small bowl, then stuff three-quarters of the cheese inside all of the slits. Spoon the remaining onion mixture on top, followed by the remaining cheese. (The bread will be very stuffed and messy.) Cover the bread loosely with foil and bake until the filling is warm and the cheese is melted, about 25 minutes. Transfer to a platter or cutting board and top with the bacon and parsley. Serve immediately.

8 garlic cloves
2 tablespoons olive oil
Kosher salt and black pepper
4 ounces mozzarella cheese, grated
4 ounces Fontina cheese, grated
4 ounces Parmesan cheese, grated
4 ounces Pecorino Romano cheese, grated
2 teaspoons chopped fresh chives
2 teaspoons red pepper flakes
1 round artisan or sourdough loaf
8 tablespoons (1 stick) butter, melted

Steps:

  • Preheat the oven to 375°F.
  • Place the garlic cloves on a square of heavy foil, drizzle the olive oil over them, and sprinkle with salt and pepper. Wrap it up into a parcel and roast for 1 hour or until the garlic is golden, nutty, and soft. Set it aside to cool and reduce the oven temperature to 350°F. (You can roast the garlic up to a couple of days ahead of time and keep it in a small jar of oil in the fridge. Roast a bunch of cloves! You never know when you'll need 'em.)
  • In a bowl, combine the cheeses, roasted garlic, chives, red pepper flakes, and some black pepper. Stir to mix everything together, smushing the garlic cloves so that little bits are distributed throughout the cheese. (You can get in there and use your fingers if you'd rather!)
  • Cut the bread in 1 1/2-inch-wide strips in one direction, taking care not to cut all the way through the loaf. Rotate the bread 90 degrees and cut the bread crosswise again. Move slowly and use caution! A serrated knife helps immensely. Ta-da!
  • Set the bread on a large piece of foil and stuff the cheese mixture in between the rows and keep going until that bread is so stuffed with cheese, it can't see straight! Drizzle the melted butter evenly all over the surface of the bread. Wrap the bread in foil and bake for 25 minutes. Open up the foil and bake it for another 10 minutes.
  • Carefully unwrap the bread and dig right in!
  • Change things up!
  • Make a pizza version: Add chopped pepperoni, diced green bell pepper, and spoonfuls of marinara sauce.
  • How about a French onion version? Diced caramelized onions, Gruyère cheese, and chopped chives. Drizzle on beef broth instead of butter. Yum!
  • My friend Meseidy has made a Buffalo chicken version: Add mozzarella and a bunch of shredded chicken simmered in Louisiana hot sauce. Barbecue chicken would also be dreamy.

12 -16 ounces monterey jack cheese, thinly sliced
1/2 cup butter, melted
1 -2 tablespoon garlic, minced
1/2 cup green onion, finely diced
2 teaspoons poppy seeds

Steps:

  • Preheat oven to 350 degrees Fahrenheit.
  • Cut the bread lengthwise and widthwise without cutting through the bottom crust. This can be a little tricky going the second way but the bread is very forgiving.
  • Place on a foil-lined baking sheet.
  • Insert cheese slices between cuts.
  • Combine melted butter, garlic, onion, and poppy seeds. Pour over bread.
  • Wrap in foil; place on a baking sheet.
  • Bake at 350 degrees Fahrenheit for 15 minutes.
  • Unwrap the bread and bake 10 more minutes, or until cheese is bubbling.

0.5 (500 g) packet frozen chopped onions
2 cups self raising flour
1 teaspoon salt
60 g butter, diced
1 egg, lightly beaten
3/4 cup milk
1 tablespoon grainy mustard
2/3 cup grated tasty cheese
2 tablespoons chopped fresh parsley

Steps:

  • Place the frozen onions in a microwave safe bowl and heat in the microwave on high for 4 minutes.
  • Sift the flour and salt into a mixing bowl; add the butter and rub it in with your fingertips to resemble fine breadcrumbs.
  • Mix the egg, milk and mustard together; add them to the flour mixture and mix to form a soft dough.
  • Turn the dough out onto a well-floured surface and knead lightly; and then divide the mixture into approximately 14 uneven pieces.
  • Line a greased 14cm x 22cm loaf pan with baking paper; and place half the dough in pieces over the base.
  • Sprinkle with half of the onion, cheese and parsley; then cover it with the remaining dough and the remaining onion, cheese and parsley.
  • Bake the loaf in a preheated oven at 200°C /400°F for 40-45 minutes or until it is a rich golden brown.
  • Notes: This is best eaten hot straight from the oven. Add chopped kalamata olives or diced bacon with the onion for a tasty addition.

This bread is a savory treat! I use my heavy-duty mixer and the sponge method. White whole wheat flour works well in this recipe, and the onions can be replaced with chives or scallions.

3 cups flour, more if needed
1 tablespoon active dry yeast
1 teaspoon salt
2 tablespoons sugar
1 cup milk, warmed
1 egg, beaten
1 cup sharp cheddar cheese, grated
1/2 cup onion, chopped

Steps:

  • Put 1 cup of the flour in your mixing bowl. Stir in the yeast, salt and sugar. Pour in the warm milk and mix well for three or four minutes on medium. Let stand for about 10 minutes until bubbly.
  • Add the egg, then the onion and cheese, then the rest of the flour until the dough holds together and is only a bit sticky. Cover with a damp towel and let it rise for an hour.
  • Shape your savory dough into a loaf or two small loaves and put into a loaf pan or on to a baking tray. Let it rise until double, about 45 minutes.

2 garlic cloves (crushed)

  • Preheat the oven to 425°. Butter a 9-by-4 1/2-inch metal loaf pan. In a large skillet, melt the 1/2 stick of uncubed butter; pour 2 tablespoons of the melted butter into a small bowl and reserve. Add the chopped onion to the skillet and cook over moderate heat, stirring occasionally, until it is softened, about 8 minutes. Stir in the poppy seeds and season with salt and pepper. Scrape the onion mixture onto a plate and refrigerate for 5 minutes, until cooled slightly. Stir in the Gruyère.
  • Meanwhile, in a food processor, pulse the flour with the baking powder, baking soda and salt. Add the cubed butter and pulse until it is the size of small peas. Add the buttermilk and pulse 5 or 6 times, just until a soft dough forms.
  • Turn the dough out onto a well-floured work surface and knead 2 or 3 times. Pat or roll the dough into a 2-by-24-inch rectangle. Spread the onion mixture on top. Cut the dough crosswise into 10 pieces. Stack 9 pieces onion side up, then top with the final piece, onion-side down.
