SHRIMP PHYLLO TARTS
These little spicy/tangy appetizers are a breeze to make using frozen phyllo shells. I like to boil my shrimp in Zatarain's crab boil for 3 minutes which gives the shrimp a little extra "zing". The serving size is 2 per person, but I've found from experience most people eat 3-4 so you may want to adjust accordingly.

Steps:
- Preheat oven to 350 degrees.
- In large bowl cream mayonnaise and cream cheese until smooth.
- Add remaining ingredients except shrimp.
- When well mixed add shrimp and mix together.
- Drop by scant tablespoonfuls into phyllo shells.
- Bake for 10 minutes or until heated through.

- In a small, heavy saucepan over medium heat, whisk eggs, sugar, lemon juice, and lemon peel until blended.
- Add butter and cook, whisking constantly, until mixture is thickened and coats the back of a metal spoon.
- Transfer lemon curd to a small bowl and cool for 10 minutes. Cover and refrigerate until chilled.
- Just before serving, spoon lemon curd into tart shells. Garnish with raspberries, mint leaves, and/or whipped cream, if desired. Refrigerate leftovers.

I'd always been told that phyllo dough is really difficult to use, but I've found it's quite simple and I've fallen in love with this wonderful flaky pastry! You can fill these tarts with just about anything. Fruit fulling, puddings, etc. they make a wonderful, easy dessert!

- 1. Preheat oven to 375.
- 2. lay out phyllo dough on a cutting board. Use a pizza wheel to cut it into six squares. Cover with a damp (almost dry) paper towel.
- 3. Brush the inside of two muffin tins with melted butter.
- 4. Uncover 1 stack of squares. Brush one sheet with melted butter and lay into muffin tin and pat down. Repeat this with five sheets. Continue until all the muffin tins are filled.
- 5. Bake in a 375 degree oven for 8 minutes or until golden brown.
