A classic Frittata Barese Style... with Broccoli Rabe... of course!

Number Of Ingredients 8

fresh broccoli rabe, blanched
grated pecorino cheese
plain bread crumbs
large eggs
cloves garlic - finely chopped
milk
extra virgin olive oil
salt & pepper

Steps:

  • Clean the Broccoli Rabe. Wash and cut into small pieces and blanch. In a bowl add the bread crumbs, cheese, garlic and mix well. Add salt and pepper as desired. In a separate bowl beat the 10 eggs with the milk. Add the eggs to the mixture and mix very well. Add 4 Tbs of EV olive oil and continue mixing. Add the Broccoli Rabe and mix well. Pre-heat the oven to 400F. In a 10" cast iron skillet add 1/2 cup of EV olive oil and put on the stove. Once the oil is hot, add the mixture to the pan and quickly spread it evenly. Let it cook for about 2-3 minutes on the stove and then transfer the pan to the top level of your oven. Let it cook for 50 minutes (or once the top colors to your liking) and you will have a perfect and crispy Frittata.

12 large eggs
1/2 cup whole milk
3/4 cup grated cheddar, divided
Kosher salt, coarsely ground pepper
2 tablespoons vegetable oil
1/2 medium onion, chopped
1/2 pound fresh Spanish chorizo or hot Italian sausage links, casings removed
1 bunch broccoli rabe, coarsely chopped

Steps:

  • Preheat broiler. Whisk eggs and milk in a medium bowl. Mix in 1/2 cup cheddar; season with salt and pepper and set aside.
  • Heat oil in a large skillet, preferably castiron, over medium heat. Add onion and chorizo and cook, stirring occasionally, until onion is softened and chorizo is brown, 6-8 minutes. Add broccoli rabe; season with salt and pepper and cook, stirring occasionally, until tender, 8-10 minutes longer.
  • Reduce heat to low and pour reserved egg mixture over vegetables. Cook, shaking pan occasionally, until edges are just set, 10-12 minutes. Top frittata with remaining 1/4 cup cheddar; broil until top is golden brown and center is set, about 4 minutes longer.
  • Cut frittata into wedges and serve warm or room temperature.
  • DO AHEAD: Frittata can be made 2 hours ahead. Let cool, then cover.

  • Preheat oven to 375 degrees F (190 degrees C).
  • Bring a large pot of water to a boil. Add broccoli; cook until tender, about 5 minutes. Drain and let cool, about 10 minutes. Transfer to a pan with 2-inch sides.
  • Whisk eggs, milk, paprika, salt, and pepper together in a bowl. Pour over broccoli.

This simple baked egg dish is the perfect way to use up leftover cooked veggies like broccoli. Cheddar is nice, but you can use whatever shredded cheese you have on hand.

10 large eggs
1/4 cup milk
Kosher salt and freshly ground black pepper
2 cups chopped cooked broccoli
1 cup shredded Cheddar
1/4 teaspoon cayenne
1 tablespoon extra-virgin olive oil
Snipped fresh chives, for serving
Lettuce or arugula leaves and tomato wedges, for serving, optional

Steps:

  • Preheat the oven to 400 degrees F.
  • Whisk together the eggs, milk, 3/4 teaspoon salt and a few grinds of pepper in a large bowl. Stir in the broccoli, Cheddar and cayenne.
  • Heat the oil in a medium ovenproof nonstick skillet over medium-high heat. Add the egg mixture and cook until the edges start to set, about 2 minutes. Transfer to the oven and bake until the center is set, 15 to 20 minutes. Let rest for 5 minutes before sliding carefully onto a cutting board. Cut into wedges and transfer to serving plates. Sprinkle with chives. Serve with lettuce leaves and tomato wedges if using.

1 cup diced provolone cheese (about 4 ounces)
2 tablespoons extra-virgin olive oil
1/2 bunch broccoli rabe, trimmed and chopped (about 4 cups)
2 cloves garlic, chopped
1 tablespoon chopped pickled cherry peppers (hot or sweet)
2 ounces thinly sliced Genoa salami, halved

Steps:

  • Preheat the oven to 375 degrees F. Whisk the eggs, milk, 3/4 teaspoon salt and a few grinds of pepper in a large bowl until combined; stir in the cheese and set aside.
  • Heat the olive oil in a 10-inch ovenproof nonstick skillet over medium-high heat. Add the broccoli rabe and garlic and cook, stirring occasionally, until the broccoli rabe is wilted, about 5 minutes. Stir in the pickled peppers and remove from the heat; let cool slightly, then add to the egg mixture and stir.
  • Wipe out the skillet and return to medium-high heat. Arrange the salami pieces in the skillet in a circle, overlapping slightly, so they cover the bottom. Pour in the egg mixture and cook, without stirring, until the edges start setting, about 1 minute. Transfer the skillet to the oven and bake until the frittata is set and lightly browned, 25 to 30 minutes. Let cool 5 minutes in the skillet, then invert onto a platter or cutting board. Serve warm or at room temperature.

Steps:

  • Put oven rack in upper third of oven and preheat oven to 400°F.
  • Cook pasta in a 6- to 8-quart pot of boiling salted water according to package instructions; 2 minutes before pasta is done cooking, add broccoli rabe and cook 2 minutes. Drain pasta and broccoli rabe and pat dry.
  • Heat oil in a 10-inch heavy ovenproof nonstick skillet over high heat until hot but not smoking. Add pasta, broccoli rabe, and tomatoes and sauté, stirring frequently, 2 minutes.
