The only memories I have about this recipe is that everyone who has ever eaten it thinks it's great! The recipe is over 75 years old, and I learned it from my mother. -Dorothy Broyles, Peterstown, West Virginia

1 tablespoon butter
2 cups cubed peeled potatoes
5 ounces SPAM, finely chopped
3/4 cup 2% milk
1 small onion, chopped
1 tablespoon minced fresh parsley
1/4 teaspoon pepper
1/8 teaspoon salt

Steps:

  • In a large skillet, melt butter over medium-high heat. Stir in the remaining ingredients. Cook and stir for 10-12 minutes or until browned and potatoes are tender.

I don't know why it is called 'Poor-Man Sandwich'. But I do know it is a long time family recipe that tastes GREAT!!. It may sound strange, however you have to try it to understand what it is. Enjoy!!!!

1 ½ tablespoons creamy peanut butter
2 slices whole wheat bread
6 slices dill pickle
1 tablespoon thinly sliced onion
2 teaspoons mayonnaise

Steps:

  • Spread peanut butter onto one slice of the bread. Place pickle slices and onion slices onto the peanut butter. Spread mayonnaise onto the other slice of bread, and place on top of the other piece of bread.

This traditional Canadian dish is DELICIOUS. It is better with cheese curds but you can use regular shredded mozzarella cheese if curds aren't available in your area. For something a little different use spaghetti sauce instead of gravy. Recipe calls for canned gravy but homemade leftover gravy is SO MUCH better. Also, you can use store bought french fries and make them as directed on the package.

1 quart vegetable oil (for frying)
1 (10 1/4 ounce) can beef gravy
5 medium potatoes, cut into fries
2 cups cheese curds

Steps:

  • Heat oil in a deep fryer or deep heavy skillet to 365°F (185°C).
  • Warm gravy in saucepan or microwave.
  • Place the fries into the hot oil, and cook until light brown, about 5 minutes.
  • Remove to a paper towel lined plate to drain.
  • Place the fries on a serving platter, and sprinkle the cheese over them.
  • Ladle gravy over the fries and cheese, and serve immediately.

Old man's hash, or gubbrora in Swedish, is a simple dish made by stirring together sautéed onions, hard-boiled eggs, Swedish anchovy fillets and heavy cream. Swedish anchovies, or sprats, are different than their Mediterranean counterparts, so seek them out for a more authentic experience.

  • Add chopped anchovies, remove from heat and add remaining ingredients. Mix well and serve warm.

3 tablespoons garlic powder

  • Add in the tomatoes, seasoning and cook till pasta is tender. and enjoy.
  • Additional: If adding meat brown in a skillet and add to pasta once tender.
