Lisas Super Ez No Bake Lemon Cool Whip Cheesecake Food
NO-BAKE CHEESECAKE WITH COOL WHIP®
This is my favorite easy cheesecake recipe. When I want cheesecake in a flash, I make this no-bake style. I love to share it with friends and family. It's as easy as 1-2-3! Top with additional graham cracker crumbs and whipped topping, if desired.

Steps:
- Combine cream cheese, sugar, vanilla extract, and lemon extract in a large bowl; beat with an electric mixer until smooth and creamy. Fold in whipped topping. Pour mixture into graham cracker crust and smooth evenly. Top with pie filling.
- Refrigerate until firm, 2 to 3 hours.

NO-BAKE 7-UP LEMON CHEESECAKE WITH STRAWBERRY GLAZE
Since getting a springform pan for my birthday, I've been collecting cheesecake recipes and finding the ones I had in my flies. This one was scribbled on an index card from who-knows-when. I hate not to give credit where it's due, but that was before Zaar. I love 7-UP and who doesn't love strawberries?? The passive time is chill time.

Steps:
- CRUST: Combine well the graham cracker crumbs, powdered sugar, cinnamon, and melted butter.
- Press onto bottom and partway up sides of buttered 9" springform pan; chill.
- FILLING: Soften unflavored gelatin in 1/4 cup 7-up for 4 minutes.
- In a saucepan combine pie filling, sugar, beaten eggs and water. Blend well.
- Add 1-1/4 cup 7-up and bring just to a boil over medium heat stirring constantly; remove from heat.
- Stir in softened gelatin; cool 3 minutes. Add 1/2 cup of this warm mixture to softened cream cheese; mash together.
- Mix together with remaining 7-up mixture and stir until well blended.
- Turn into chilled crust and chill for at least 8 hours.
- Remove from pan and add topping.
- TOPPING: Brush top of chilled cheesecake with melted jelly.
- Arrange strawberries upright on cake and spoon any remaining melted jelly over them.

- In a medium mixing bowl, mix the jello, and lemon juice with the hot water. Stir until dissolved, then add the cold water. Set the bowl in the fridge until the jello is completely cooled, but not set.
- In a separate mixing bowl, beat the cream cheese with the sugar and vanilla until smooth. Slowly add the chilled jello mix, while beating everything together. Once smooth, set in the fridge again, until the mixture begins to thicken- about 1 hour.
- Prepare the graham cracker crust by mixing the crumbs with the melted butter and then press it into a large springform pan, minimum of 10 inches. Set in freezer until ready for the crust.
- Fold the cool whip into the cream cheese and jello mixture with a rubber scraper. Gently mix until the mixture is smooth and the cool whip is evenly distributed.
