FRITO PIE
Frito pie is legendary in the Southwest for being spicy, salty and cheesy fabulous. Here's my easy take on this crunchy classic. -Jan Moon, Alamogordo, New Mexico

Steps:
- Preheat oven to 350°. In a large skillet, cook beef and onion over medium heat 6-8 minutes or until beef is no longer pink and onion is tender, breaking up beef into crumbles; drain. Stir in beans; heat through., Reserve 1 cup corn chips for topping. Place remaining corn chips in a greased 13x9-in. baking dish. Layer with meat mixture, enchilada sauce and cheese; top with reserved chips., Bake, uncovered, 15-20 minutes or until cheese is melted. If desired, sprinkle with green onions.

Steps:
- Heat a large skillet over medium-high heat. Cook and stir beef in the hot skillet until browned and crumbly, 5 to 7 minutes; drain and discard grease. Mix onion and green bell pepper into ground beef.
- Mix tomato sauce, diced tomatoes with green chile peppers, ranch-style beans, stewed tomatoes, and chili powder into beef mixture; bring to a boil. Reduce heat to medium and simmer until flavors have blended, 30 to 45 minutes.
- Layer corn chips and hamburger mixture into serving bowls and top with Cheddar cheese.

FRITO CORN SALAD
I tried this at a Christmas brunch the quilt guild had. I had to hunt down the one who brought this in and get the recipe.

- Mix all the ingredients except the chips.
- Add the chips in before serving otherwise the chips will get soggy.
- Red peppers are expensive so you can just use green instead.

FRITO SALAD
I got this recipe years ago from our church bulletin. It's a great summer barbecue salad or an excellent side dish for any occasion. Very quick and easy! Cooking time is marinating time.

- Drain Ranch Style Beans well and pour in large mixing bowl.
- Add diced onion, tomatoes, bell pepper, cheese and Catalina, mix well.
- Let mixture marinate in refrigerator for several hours. When you are ready to serve, add Fritos and mix well.

- In a large saucepan, heat the vegetable oil. When the oil is hot, add the onions and saute for 3 to 5 minutes, or until the vegetables start to wilt. Season with salt and cayenne. Stir in the beef , chili powder, cumin, crushed red pepper, and oregano. Brown the meat for 5 to 6 minutes. Stir in the garlic, tomatoes, tomato paste, beef stock, and beans. Bring the liquid up to a boil and reduce to a simmer. Simmer the liquid, uncovered for 1 hour, stirring occasionally, or until the beef is tender. Skim off the fat occasionally. Mix the masa and flour together with a little liquid from the stockpot. Slowly stir in the masa slurry and continue to cook for 30 minutes. Reseason with salt and cayenne. Place a handful of the chips in each shallow bowl. Spoon the chili over the chips. Garnish with the grated cheese, sour cream and jalapenos.
SUNSET MAGAZINE'S FRITO PIE
From the May 2002 issue of Sunset Magazine. We don't make this recipe often because it's rich, greasy, salty and fattening. Tradition dictates that you eat this right out of an individual sized Frito bag. I prefer to layer the ingredients into a Fiestaware chili bowl and then pay my respect to the Frito gods. Try with a dollop of sour cream.

- In a pan over medium-high heat, stir ground beef, garlic powder and 1 teaspoon salt until beef is crumbly and well browned, 6 to 8 minutes.
- With a large slotted spoon, push beef mixture to one side of pan and tilt pan so liquid runs to opposite side.
- Stir flour into liquid until well blended, then mix with beef mixture.
- Add 2 cups water, black beans (or kidney beans) if using, and dried chilies; stir until mixture boils and thickens, about 8 minutes.
- Spread about 1/3 cup of Fritos in each of six individual sized bowls and sprinkle chopped onion equally on top.
- Divide chili equally among the bowls and top with cheese, lettuce and tomato.
- Add more salt to taste if desired.
- NOTE: For large party gatherings, I usually triple the recipe and prepare this buffet style for each person to "build your own" Frito Pie. For diehards, you must have sliced fresh jalapenos as a garnish, too!

- Place beef in steam-jacketed kettle; cook in its own juice until it loses its pink color, stirring to break apart. Drain or skim off excess fat.
- Combine chili powder, cumin, paprika, salt, garlic powder and red pepper. Stir into cooked beef.
- Combine tomato juice with hot water to make 2 gallons; reserve for use in next step.
- Add beans, tomatoes, tomato paste, and onions to cooked beef; stir well. Add reserved bean liquid and hot water to the beef mixture; stir. Bring to a boil; cover; reduce heat; simmer 2 hour. DO NOT BOIL. Stir occasionally.
- Serve over frito's with grated cheese on top, have chopped onions and ketchup for condiments.
