Ingredients

2 cans yellow kernel corn, drained
1/2 red bell pepper, sliced and chopped
1/2 green bell pepper, sliced and chopped
1/2 purple onion, chopped
1 cup mayonnaise
1 cup shredded cheddar cheese
5 ounces of chili cheese flavor Frito corn chips

Steps:

Mix all the ingredients except the chips.
Add the chips in before serving otherwise the chips will get soggy.
Red peppers are expensive so you can just use green instead.

Some people like to use Doritos instead of Fritos for this salad. Whichever chip you use, this salad goes great with Mexican food or barbecue.

Ingredients

1 head lettuce, torn in small pieces
1 (15 ounce) can ranch style beans, rinsed & drained (kidney beans)
chopped green onion
2 tomatoes, diced
1 cup grated cheddar cheese
2 cups Fritos corn chips
1 (16 ounce) bottle Catalina dressing

Steps:

Mix all ingredients together, except don't add Fritos and dressing until just before serving.
Enjoy.

I got this recipe years ago from our church bulletin. It's a great summer barbecue salad or an excellent side dish for any occasion. Very quick and easy! Cooking time is marinating time.

1 (15 ounce) can ranch style beans
1 small onion, diced
2 small tomatoes, diced
1 green bell pepper, diced
8 ounces shredded cheddar cheese
1 (16 ounce) bottle Catalina dressing
1 (9 ounce) package of original Fritos corn chips

Steps:

Drain Ranch Style Beans well and pour in large mixing bowl.
Add diced onion, tomatoes, bell pepper, cheese and Catalina, mix well.
Let mixture marinate in refrigerator for several hours. When you are ready to serve, add Fritos and mix well.

My favorite taco salad recipe in the world. After my grandma passed I thought I had lost the recipe forever but found it in an old church congregation cookbook that was published in 1980 and it had her recipe in it! I hope you enjoy it as much as I do.

Ingredients

1 1/2 lbs ground beef
1 (10 1/2 ounce) can Campbell's cheddar cheese soup
1 (10 1/2 ounce) can Campbell's Cream of Mushroom Soup
1 (15 ounce) can tomato sauce
1 teaspoon oregano (or to taste)
1/2 teaspoon crushed red pepper flakes (more or less to taste)
1 head iceberg lettuce, torn into bite size pieces
1 -2 tomatoes, diced
1 red onion, diced (optional)
2 (2 1/4 ounce) cans pitted black olives, sliced (more or less to taste)
1 (14 ounce) bag Fritos corn chips (Original)

Steps:

Brown and drain ground beef. Add soups, tomato sauce, oregano, and crushed red pepper flakes. Stir together well and let simmer over medium-low heat for 15 minutes. Remove from heat and let cool. Pour over remaining ingredients, mix well, and serve immediately.

3 (8 ounce) cans whole kernel corn, drained
2 cups shredded cheddar cheese
1 small purple onion, cut up
1 medium bell pepper, cut in chunks
1 cup Hellmann's mayonnaise
1 (11 1/2 ounce) bag of chili cheese Fritos corn chips
lots cracked black pepper (I also added a little Tony's)

Steps:

Mix everything together, except the fritos and put in a bowl and allow to get really cold in the fridge. When ready to serve, spoon out in bowls and add a handful of fritos in each bowl. Enjoy!

2 cans of corn, drained
1 medium Red Bell Pepper, diced
1 medium Green Bell Pepper, diced
1 can black beans, drained
1 cup shredded Triple cheddar cheese
2-3 cups Frito chips
1/2 cup Bacon bits
1/2 cup mayonnaise
1/2 cup sour cream
1 teaspoon salt
1 teaspoon pepper
1 teaspoon garlic powder

Steps:

In a large bowl, combine corn, peppers, and black beans. In a separate bowl, mix together the mayo, sour cream, salt, pepper, and garlic powder. Combine with vegetables. Mix in the bacon bits and cheddar cheese. Chill at least an hour - longer is better. Mix in Frito chips immediately before serving.

In a skillet over medium heat brown ground beef, when almost done drain fat, and add taco seasoning mix. If you are using a package of taco seasoning mix add the amount of water recommended on that package. If you are using the Copykat taco seasoning mix add about 1/3 cup of water, and let the meat simmer until fully cooked.
Once meat is fully cooked turn off the heat, and allow the meat to cool slightly. Prepare salad toss together lettuce, tomatoes, red onions, shredded cheese, and corn chips. In a small bowl prepare salad dressing by mixing together prepared salad dressing and the salsa, mix well.
Toss together the seasoned beef, salad dressing along with the lettuce. Garnish with sliced black olives if you desire. Serve immediately. This salad does not hold well, so be prepared to eat in one sitting. While this taco salad may be one of those guilty pleasures that I have, and honestly it isn't what I would call a dish I would make for company, but I will admit that I enjoy this salad still.
For me, some dishes are completely nostalgic and the nostalgia is what makes a particular dish taste so good. I can remember making this recipe at Day Camp, this was back when they let the Girl Scouts cook over fire, and cut everything with sharp knives. I can remember that lunch time was particularly enjoyable, because we were allowed to prepare our food. We all got to wash our hands with water that was hung in large plastic bags with soap that was carefully placed in a used stocking, then we all rushed over to the table to do our assigned tasks. I don't even remember how I helped to prepare this meal, I only remember spooning onto the plate that came from my pack from home this amazing Mock Taco Salad. I came home just buzzing about how I prepared lunch with others my age, and how much fun I had. I know I rallied for this same salad to be prepared long after Day Camp was over.
