Steps:
- For the quick mojo aioli: Whisk together the mayonnaise, sour cream, Dijon mustard, cumin, paprika, onion powder and garlic powder. Cover and refrigerate until ready to dress the burgers.
- For the burgers: Mix the ground beef, chorizo, cumin, onion powder, paprika, cayenne, salt and pepper in a large bowl, folding it over itself until thoroughly mixed. Let the meat rest 15 minutes at room temperature or for up to 4 hours refrigerated. Shape the meat into 12 balls all the same size, then lightly press them into chubby round patties.
- Preheat a large cast-iron skillet over medium-high heat and add the oil. When the oil is shimmering, add the onions and sweat until translucent, 3 to 4 minutes. Add the patties on top of the onions and press the patties onto the onions using a spatula. Let cook, 3 to 4 minutes; the onions will continue to cook and caramelize in the patty juices, adding flavor to the patties. Flip the patties and cook until firm, 2 to 3 more minutes. Remove from the heat and top with the Swiss cheese.
- Spread 1 tablespoon mojo aioli on the bottoms of each Hawaiian roll, then top with a patty and a generous handful of the Mini French Fries. Serve.
- Peel the potatoes, then shred them on the largest holes of a box grater. Soak in cold water to remove starch and prevent browning, 5 minutes. Strain in a colander and dry on paper towels.
- Heat the oil in a Dutch oven or deep skillet over medium-high heat until the temperature reaches 375 degrees F.
- Fry the potatoes in batches, moving the potatoes gently with a spider to keep them separated, until brown and crispy, about 4 minutes. Remove to a bowl, season with salt and toss to ensure all the fries are thoroughly seasoned.

- Preheat the oven to 350 degrees F.
- Tear the hoagie rolls into medium bite-sized pieces and spread on a baking sheet. Toast in the oven until dried out, 10 to 15 minutes.
- Brown the steak slices in the oil, breaking up into pieces with a wooden spoon, in a cast-iron or nonstick skillet over medium-high heat. Remove from the skillet and drain all but 1 tablespoon of fat. Cook the onion, peppers, mushrooms, a pinch of salt and some pepper, stirring occasionally, until soft and translucent, 4 to 5 minutes. Add the steak back to the pan, stir well, turn off the heat and set aside.
- Microwave the cheese sauce in 30-second intervals, stirring after each, until pourable. Pour into a large bowl with the eggs and half-and-half and whisk to combine well.
- Place a layer of dried bread in a deep 9-by-13-inch casserole dish. Add a layer of steak and peppers, then ladle the cheese custard over until just covered. Repeat until all the ingredients are used. Bake the strata until just set, 30 to 35 minutes.
- Preheat the broiler to low. Layer the provolone across the top of the pan, overlapping as necessary. Broil until the cheese topping is brown and bubbly, 5 to 10 minutes. Let the strata sit for 10 minutes to set before serving.

- TO MAKE CHEESE SAUCE:.
- Place the cream over medium heat until steam rises and the cream is hot. Shred the cheddar and place in a blender, add the hot cream and allow to sit for 4-5 minutes. Blend over high speed until smooth.
- TO MAKE THE SANDWICH:.
- Cook the onions over high heat on a flat top or large pan, until caramelized.
- Add the beef, and cook for another minute or so.
- Cover the beef in 2 oz of the Frita sauce and allow the sauce to reduce on the beef and onions.
- Slather the cheese sauce on the Cuban bread, and the beef, onions and potato sticks. Garnish with crispy potatoes.

- Place steak in freezer for 30 to 45 minutes; this makes it easier to slice the meat. Remove the meat from the freezer and slice very thinly.
- Heat griddle or grill pan over high heat. Brush steak slices with oil and season with salt and pepper. Cook for 45 to 60 seconds per side.
- Place several slices of the meat on the bottom half of the roll, spoon some of the cheese sauce over the meat, and top with the mushrooms, onions, and peppers.
- Melt butter in a medium saucepan over medium heat. Whisk in the flour and cook for 1 minute. Slowly whisk in the warm milk, and cook, whisking constantly until thickened, about 4 to 5 minutes. - Heat oil and butter in a large saute pan over high heat. Add the mushrooms and cook until the mushrooms are golden brown. Stir in the parsley and season with salt and pepper.
- Heat butter and oil in a large saute pan over medium heat. Add the onions, season with salt and pepper, and cook slowly until golden brown and caramelized, stirring occasionally, approximately 30 to 40 minutes.
- Heat the oil in medium saute pan over high heat. Add the peppers and cook until soft. Season with salt and pepper.

- For the cream cheese sauce:
- Combine the half-and-half, cream cheese, sour cream, condensed milk, vanilla extract and salt in a food processor and process until smooth. Refrigerate until ready to use.
- For the guava syrup:
- Combine the guava paste, cream soda and salt in a saucepan and heat gently, until the guava paste has melted into a syrup. (For an extra-smooth consistency, use a hand blender to puree any unmelted guava solids.) You will need 2 ounces of the guava syrup for the torrejas. Leftover syrup will keep in the refrigerator for at least 3 weeks.
- For the cookie sugar:
- Pulse the Maria cookies in a food processor until crumbled. Add the brown sugar and salt and pulse to combine.
- For the torrejas:
- Whisk together the half-and-half, eggs, sugar, vanilla extract and salt in a medium mixing bowl (this can be done the night before), and pour the custard mixture into a pie pan.
- Soak the bread in the egg mixture for 30 seconds on each side, then remove to a rack set over a baking sheet to drain for a minute or two.
- Over medium-low heat, melt 2 tablespoons of the butter in a medium nonstick skillet. Fry the torrejas, two slices at a time, until golden brown, 2 to 3 minutes per side. Melt the remaining 2 tablespoons butter in the skillet before starting the second batch of torrejas.
- To serve, place two torrejas on a plate. Drizzle generously with cream cheese sauce, then with guava syrup. Top with a sprinkling of Maria cookie sugar and some powdered sugar.

- Trim away and discard the long piece of fat running down the side of the steaks. Cut each steak in half and put on a baking tray, then transfer to the freezer and freeze for 40 mins.
- Heat the oil in a heavy-based pan or casserole dish set over a medium heat. Add the onion and peppers along with a good pinch of salt and fry for 20 mins, or until the onions are golden and sticky. Add the vinegar and cook for a further 5 mins. Season to taste.
- Using a sharp knife, slice the steak as thinly as possible and pile the slices into four portions. Heat a skillet over a high heat until almost smoking. Put one portion of the steak slices in the pan in a pile that's roughly the length of your rolls. Fry for 3 mins over a high heat until some of the steak is cooked through, with pink bits remaining. Pile a quarter of the onion mixture on top, as well as a quarter each of the cheese slices and the mozzarella. Continue to cook undisturbed over a medium heat for 5-10 mins until the meat is brown and crisp around the edge and the cheeses have melted. Split one of the rolls open and carefully scoop the meat and cheese mixture into it. Repeat with the remaining meat, onions, cheese and rolls.

- Combine sliced steak and garlic in re-sealable bag and marinate about 2 hours in refrigerator.
- In saucepan, cook onions, and mild banana peppers, in oil over hight heat, until charred. Remove from pan.
- Add Beef to pan and season with salt and pepper.
- When beef is nearly cooked, add back onions and peppers. Continue coking to preferred doneness.
- Meanwhile, lightly sprinkle pitas with water, wrap in parchment paper or paper towels and warm in microwave, about 15 seconds.
- Remove pitas from paper, spread each pita with mustard down the middle and cover with 1/4 of the meat mixture.
- Top with pepper rings, cocktail onions, pickles and cover with cheese.
- Fold the bottom side of the pita over the filling and roll to make a cone.
- Wrap each pita in aluminum foil and place back in pan ( or BBQ), so that sandwiches warm and cheese melts. Serve immediately.

- Mix the water and the egg yolk.
- In a large bowl mix the flour and the egg/water mixture.
- Mix and kneed the dough for about 5 minutes until it is compact.
- Cover with a damp cloth and set aside for 5 minutes.
- Meanwhile heat a deep fryer to 170ºC, or fill a frying pan with lots of oil and heat.
- Take a small ball of the dough, the size of an egg and mold into a flat circle, about 1 cm thick.

- Wash portabellos with a damp paper towel.
- The portabellos might seem a little dry, especially around the'gills'.
- Cut them into strips and place on a dinner plate.
- Cover mushroom strips with olive oil and allow them to soak while you prepare the onions.
- If they still appear dry, add more oil.
- Cut onions into thin strips.
- Caramelize onions over medium or medium high heat in butter and olive oil, stirring frequently until golden brown.
- The amount of oil and butter depend on the moisture content of your onions, I usually use more butter than olive oil.
- The longer and slower you cook the onions, the better.
- You can do this from 15-45 minutes depending on your schedule.
- Nothing tastes better than a nicely caramelized onion!
- Once onions are done, remove from skillet.
- Preheat broiler.
- Use the same skillet to heat up the portabello mushrooms.
- Again, cook in butter and olive oil just until warm and tender.
- (I recommend not cooking the mushrooms and onions together, portabellos have a habit of turning other food black.) Slice open the sandwich rolls and remove a little of the bread stuffing from each side.
- Distribute cooked portabellos evenly to each roll.
- Cover with caramelized onions.
- Add mozzarella cheese to taste.
- Sprinkle with parmesan cheese.
- Broil until cheese melts and rolls begin to brown, 3-5 minutes.
- Serve with ketchup for a cheesesteak flavor.
