Polenta with greens gives you so many things to love-creamy comfort, hearty greens, salty Parmesan and the umami bite of anchovies. All that, in less than an hour? Darn right.

7 cups water
1 1/2 cups polenta
Kosher salt
3 to 4 bunches fresh hearty greens (kale, Swiss chard, beet or turnip greens, kohlrabi greens, etc.) (1 1/2 lbs | 680 g)
3 tablespoons (1 1/2 oz) unsalted butter
8 to 10 olive-oil-packed anchovies* (rinsed and finely chopped)
1/8 teaspoon crushed red pepper flakes (optional)
3/4 cup panko or rough homemade bread crumbs
1 tablespoon finely minced garlic (2 to 3 cloves)
2 tablespoons olive oil
3/4 cup grated Parmesan cheese
Freshly ground black pepper

Steps:

  • In a medium pot over high heat, bring 6 cups of the water to a boil. Add the polenta and 1 1/2 teaspoons of salt, stirring gently to distribute the grains through the water.
  • Decrease the heat to medium-low and cover the pot. Cook, stirring occasionally, until the polenta loses its graininess, 35 to 40 minutes. If the polenta becomes very thick, gradually add the remaining cup of water during the final 10 minutes of cooking.
  • While the polenta cooks, bring a second large pot of salted water to a boil over high heat. Add the greens, bring the water back to a boil, decrease the heat to medium, and cook, stirring often, until the greens are tender, 3 to 5 minutes.☞TESTER TIP: The greens will lose a significant amount of volume as they cook, but if it is easier, go ahead and cook the greens in batches, using a slotted spoon to transfer the cooked greens to a colander before starting the next batch.
  • Scoop out a cup of cooking water and reserve, then drain the greens in a colander. Return the pot to the stove.
  • In the same pot over medium heat, melt the butter. Add the anchovies and cook, stirring often, for about 1 minute. Add the red pepper flakes, if using, and decrease the heat to medium-low.
  • Add the bread crumbs to the anchovies and let them toast, stirring often, until they turn golden and soak up any remaining butter, 2 to 4 minutes. Add the garlic and cook for 1 minute, stirring often to prevent the bread crumbs from burning. Spoon the breadcrumb mixture into a small bowl and return the pot to medium heat.
  • Return the drained greens to the pot. Stir in the olive oil, three-quarters of the Parmesan, three-quarters of the bread-crumb mixture, plenty of fresh pepper, and a splash of the greens' cooking water.
  • Spoon the polenta into a large wide bowl or divvy between individual serving bowls and top with the remaining Parmesan. Spoon the greens over the polenta, and sprinkle the remaining breadcrumb mixture over the top.

  • Cut one 18-ounce tube polenta into 1/2-inch-thick rounds. Heat 1/4 inch of vegetable oil in a large nonstick skillet over medium-high heat. Coat the polenta in flour and fry in batches until golden brown, 3 to 4 minutes per side (add more oil if necessary). Drain on a rack; sprinkle with salt and grated parmesan.

2 1/2 tablespoons sherry vinegar
1 1/2 teaspoons balsamic vinegar
Salt and freshly ground pepper to taste
1 red pepper, seeded and finely chopped
1 yellow pepper, seeded and finely chopped
1/2 orange pepper, seeded and finely chopped
1/2 green pepper, seeded and finely chopped
1 shallot, peeled and finely chopped
8 ounces quick-cooking polenta
1/4 cup heavy cream
2 tablespoons butter
Baby basil leaves for garnish

Steps:

  • Whisk together oil, vinegars and salt and pepper. Add peppers and shallot. Set aside to marinate.
  • Cook polenta according to package directions and stir in the cream and butter at the end. Season with salt and pepper. Immediately pour onto a baking sheet lined with parchment paper and spread evenly. Set aside to set and cool.
  • Cut rounds of polenta with a cookie cutter. Top with peppers and a basil leaf.

This makes a nutritious and delicious vegetarian meal of soft cornmeal with a tasty topping of sautéed Swiss chard, raisins, and pine nuts. This came from the Good Housekeeping magazine, 1999. Directions are given for cooking the polenta in the microwave or for stove top. Enjoy!

2 bunches swiss chard (about 3 1/2 pounds) or 2 bunches bok choy
1 tablespoon olive oil
3 garlic cloves, thinly sliced
1/4 teaspoon crushed red pepper flakes
1 1/4 teaspoons salt
1/4 cup golden raisin
1 1/2 cups yellow cornmeal
2 cups milk (skim will make this more nutritious)
2 tablespoons grated parmesan cheese or 2 tablespoons romano cheese, plus additional for serving
1 tablespoon pine nuts, toasted and chopped (pignoli)

Steps:

  • Cut off and discard bottom 3 inches of Swiss-chard stems.
  • Cut remaining stems into 1/2-inch slices; coarsely chop leaves.
  • Rinse and dry stems and leaves separately; place in separate bowls.
  • In nonstick 12-inch skillet, heat oil, garlic, and crushed red pepper over medium heat about 2 minutes or until garlic is lightly golden, stirring constantly.
  • Increase heat to medium-high; add sliced chard stems to skillet and cook 8 minutes, stirring occasionally.
  • Gradually add chard leaves and 1/2 teaspoons.
  • salt, stirring until leaves wilt; stir in 1/3 cup water.
  • Cover skillet and simmer 5 minutes or until stems and leaves are tender; stir in raisins and set aside.
  • Meanwhile, prepare polenta in microwave oven: In 4-quart microwave-safe bowl or casserole, combine cornmeal, 3/4 teaspoons salt, milk, and 4 1/2 ups water.
  • Cover and cook on High 12 to 15 minutes, until thickened, stirring once.
  • To serve, stir Parmesan into polenta.
  • Spoon polenta on a platter; top with Swiss-chard mixture and sprinkle with pine nuts.
  • Serve with additional Parmesan to sprinkle over each serving if you like.
  • Makes 4 main dish servings.
  • Note: If you like, polenta can be prepared on top of stove: In 4-quart saucepan, stir 1 teaspoons salt with 2 cups cold milk.
  • Gradually whisk in cornmeal until blended,then whisk in 4 1/2 cups boiling water.
  • Heat to boiling over high heat, stirring occasionally.
  • Reduce heat to medium-low and cook, partially covered, 20 minutes, stirring frequently.

Fried Polenta With Sweet Garlic-Greens image

Tasty vegetarian dish easily made vegan (leave out parmesan cheese). Based on my favorite dish at Bela's of Northampton. Dried sweetened cranberries make the greens sweet. My husband prefers an alternate topping to this - covering it with spaghetti sauce. Also good, but in that case, could probably save the effort and skip most of the other ingredients besides the greens. Use two large frying pans.

1 prepared polenta (log)
1 bunch red swiss chard (baby spinach best) or 1 bunch fresh spinach (baby spinach best)
1 -4 tablespoon olive oil
4 minced garlic cloves (fresh or jarred)
1 onion
1/4 cup water
1/4 cup dried sweetened cranberries
2 tablespoons pine nuts
1 tablespoon lemon juice
parmesan cheese
fresh ground pepper

Steps:

  • Prepare greens by rinsing well in water. If using chard, separate stems and leaves and chop stems into ~ 1 inch pieces, leaves can be torn or chopped. If using baby spinach, just chop off bottom to separate leaves.
  • Chop onion into thin slices or mince.
  • Cut polenta into 1/4-1/2 inch slices.
  • In one frying pan with ~1 T oil over medium heat, fry onion, chard stems if using chard, and garlic. After a few minutes, add 1/4 cup water and cover to partially soften stems by steaming.
  • Remove cover and add chard leaves (or spinach), cranberries, and pine nuts. Cook until greens reach desired consistency (tender-crisp to soft). Add lemon juice.
  • Meanwhile, in second frying pan, fry polenta slices in 1 teaspoons to 3 T olive oil (depending on how crispy or healthy you want it) until browned.
  • Top polenta with greens and parmesan cheese and pepper to taste.

3 cups Basic Polenta, recipe follows
2 cups olive oil, for frying
1/4 cup grated Parmesan
Salt
1 cup purchased marinara sauce
6 cups water
2 teaspoons salt
1 3/4 cups yellow cornmeal
3 tablespoons unsalted butter

Steps:

  • Lightly oil an 11 by 7-inch baking dish. Transfer the hot polenta to the prepared baking dish, spreading evenly to 3/4-inch thick. Refrigerate until cold and firm, about 2 hours.
  • Preheat the oven to 250 degrees F.
  • Cut the polenta into 2 by 1-inch pieces. Heat the oil in a heavy large skillet over medium-high heat. Working in batches, fry the polenta pieces until golden brown on all sides, about 3 minutes per side. Using tongs, transfer the polenta pieces to paper towels and drain. Place the polenta pieces on a baking sheet and keep warm in the oven while cooking the remaining batches.
  • Transfer the polenta pieces to a serving platter. Sprinkle the polenta with the Parmesan cheese and salt. Serve, passing the marinara sauce alongside.
  • Bring 6 cups of water to a boil in a heavy large saucepan. Add 2 teaspoons of salt. Gradually whisk in the cornmeal. Reduce the heat to low and cook until the mixture thickens and the cornmeal is tender, stirring often, about 15 minutes. Turn off the heat. Add the butter, and stir until melted.
